Traditionally kim chee takes months to prepare as it is set in stone jars to mature. Here is a quicker version where you can have kim chee ready in one day!

2 lbs chinese napa cabbage
1 tablespoon salt
2 green onions, chopped
4 garlic cloves, crushed
1 tablespoon crushed red pepper flakes (amount to taste)
2 teaspoons minced ginger
1/2 cup light soy sauce
1/2 cup white vinegar
2 teaspoons vegan sugar (or granulated sugar, to taste)
sesame oil (optional)

Steps:

  • Chop cabbage coarsely and place in a large dish.
  • Sprinkle cabbage with salt; let stand 3-4 hours.
  • Squeeze cabbage dry with hands and place in another bowl.
  • Add remaining ingredients except sesame oil, and mix well.
  • Refrigerate at least 24 hours before serving.
  • Sprinkle with a few drops of sesame oil on each serving, if desired.

2 tablespoons hot chili paste (recommended: Srirachi Hot Chili Paste)
1-inch piece fresh ginger, grated
2 cloves garlic, finely chopped
2 scallions, finely sliced
1 head Napa cabbage, about 1 to 1 1/2 pounds
1/4 cup kosher salt
1/2 cup rice vinegar
1 tablespoon sugar

Steps:

  • Remove outer leaves from cabbage. Cut cabbage in quarters and remove the tough inner core. Slice across sections into 1/2-inch slices. Put into a colander, add salt, and mix well. Place over a bowl and let drain, covered, until wilted, about 2 hours.
  • In a large bowl combine the vinegar and sugar and stir to dissolve. Add the chili paste, ginger, garlic, and scallions and stir. Rinse the salt off the cabbage with a couple of changes of water. Dry well and add to the vinegar mixture; stir well to combine. Put into a sterilized glass jar and pack the cabbage down; add enough water to cover. Close the jar and refrigerate for at least 4 hours. This is spicy and gets spicier the longer it sits - add or subtract chili paste to your taste.

1/2 medium head napa cabbage, uncored, roughly chopped (about 1-inch strips)
1 tablespoon kosher salt
1 cup julienned (matchstick) carrot
1 cup julienned (matchstick) daikon radish
2 green onions, split in 1/2, cut in 2-inch sections
3/4 cup tamari soy sauce
1/2 cup water
1/4 cup apple cider vinegar
2 tablespoons minced garlic
1 tablespoon honey
4 dry hot chile peppers, split lengthwise and seeds removed

Steps:

  • In a colander in the sink, sprinkle cabbage with salt and toss to combine. Let sit about 1 1/2 hours or until cabbage wilts. Rinse several times with cold water and drain well. Squeeze out any excess water. Combine cabbage with carrots, radish and green onions. In a small bowl, mix together soy sauce, water, vinegar, garlic, honey and chile peppers. Place cabbage mixture in a clean glass jar or glass bowl (about 1 quart or larger). Pour liquid over cabbage and place in refrigerator or cool dark place for 24 hours.

If you love authentic Korean cuisine, you'll want to try your hand at creating your own kimchi; it's not as complicated or time-consuming as you might think. Kimchi is a fermented dish, the more it ages the better it tastes, likewise with the sugar. Use a persimmon in place of the apple, if you prefer. If you want to serve it the very next day, don't refrigerate.

1 head napa cabbage, shredded and rinsed
1 small radish, cubed
coarse salt to taste
6 cloves garlic, peeled
1 small white onion
1 (1 inch) piece fresh ginger
1 tablespoon rice vinegar
¼ cup water, or as needed
1 ripe persimmon, chopped
1 cucumber, chopped
3 medium green onions, minced
1 pinch red pepper flakes, or to taste

Steps:

  • Place cabbage and radish in a large colander. Sprinkle liberally with salt and mix to combine. Set aside for 1 hour. Add additional salt, mix, and set aside 1 hour more. Rinse cabbage and let drain.
  • Meanwhile, combine garlic, onion, ginger, and rice vinegar in a blender. Add water and blend aromatic mixture on high power.
  • Transfer drained cabbage to a large bowl and add aromatic mixture. Add persimmon, cucumber, green onions, and red pepper flakes and mix well.
  • Transfer kimchi to airtight containers and refrigerate for 3 days.

1 head cabbage
1/4 teaspoon red pepper flakes
1/2 cup salt
3 garlic cloves, chopped
2 cups water (to start with)

Steps:

  • Chop or slice cabbage into bite size pieces.
  • Put in a large bowl.
  • Add salt to about 2 cups water.
  • Stir to dissolve; pour over cabbage.
  • Add more water--enough to cover all cabbage and let stand overnight and all the next day.
  • Drain & rinse cabbage.
  • Add about 1 cup water the garlic and pepper flakes.
  • Let stand 2 more days then put in the fridge to chill and then eat.

We took roasted peanuts and coated them with sweet-spicy kochujang, Korean chile flakes, and garlic salt as a topper for the kale and cabbage salad at Tin Roof.

Yield Makes about 2 cups

2 tablespoons sugar
1 tablespoon neutral oil
1 tablespoon kochujang (Korean chili paste)
½ teaspoon kochugaru (Korean chili flakes)
1 teaspoon garlic salt
2 cups raw peanuts

Steps:

  • Preheat the oven to 325°F. Line a baking pan with parchment paper.
  • In a large saucepan, stir together the sugar, oil, and 1 teaspoon water over medium heat. Once the sugar is dissolved, remove it from the heat and stir in the kochujang, kochugaru, and garlic salt. Add the nuts, stirring to coat evenly.
  • Spread the nuts out in the baking pan. Bake until the nuts are toasted and glossy, 15 to 20 minutes, stirring once. Break the mixture apart. Cover and store at room temperature for up to 2 weeks.

Kimchi fried rice doesn't need a weeknight makeover - it's already so easy. But this oven method maximizes the surface area of the dish by using a sheet pan, increasing the potential for that coveted nurungji, or scorched rice. By baking this dish, you can start with fresh rice (no need for day-old), as the dry oven heat draws out the moisture from the moist grains and turns them crispy-chewy, plus the only active cooking required here is stirring together the ingredients. The oven handles the rest, which means no actual stir-frying. Eggs cracked on top, gently baked to silky perfection, are a necessary finish, as the runny yolks sauce the gochugaru-stained rice.

2 cups uncooked medium-grain white rice
1/4 cup toasted sesame oil
1/4 cup gochujang
1/4 cup napa cabbage kimchi juice, plus 16 ounces kimchi, coarsely chopped (about 2 cups)
3 tablespoons soy sauce
2 teaspoons granulated sugar
Salt
1 large onion, cut into medium dice
3 tablespoons unsalted butter, cut into small pieces
20 grams gim (often labeled as roasted seaweed), crushed
6 large eggs

Steps:

  • Place the rice in a sieve and rinse it under cold running water, shaking constantly, just a few seconds. Add the rinsed rice and 2 cups cold water to a rice cooker or medium pot and soak for 10 minutes. If using a rice cooker, turn it on and cook rice until soft and fluffy. If using a pot, bring the water to a simmer over high heat, then reduce the heat to very low, cover and continue simmering, without peeking, for 20 minutes; remove the pot from the heat and let the rice finish steaming, still covered, until the grains are soft, distended and a little shiny, about 10 minutes. Uncover your cooked rice, fluff with a fork and set aside.
  • Position a rack in the middle of the oven and heat to 425 degrees.
  • In a large bowl, whisk together the sesame oil, gochujang, kimchi juice, soy sauce and sugar. Season generously with salt, then stir in the chopped kimchi and onion. Add the cooked rice, butter and seaweed and stir to combine. Taste and adjust seasoning with salt.
  • Transfer the rice mixture to a large rimmed sheet pan and spread out loosely. Bake until the top of the rice is crispy and chewy but not burned, 25 to 30 minutes, opening the oven door halfway through (to check on it, but also to let excess moisture out during the cooking).
  • Remove the pan from the oven. Using a spoon, create 6 shallow depressions in the rice. Crack the eggs into the depressions and place the pan back in the oven until the egg whites have just set, 3 to 6 minutes. Serve immediately, while the eggs are still runny.

Regardless of where, or even when, you're eating a biscuit, the formula's the same: a little flour, a little water, frozen butter. A pair of deft, knowing hands and an oven to bring them home. A biscuit can be a side dish of little note, or it can characterize an entire place and time, etching its own corner in your memory. The acidity and crunch of ripe kimchi meld deeply with Cheddar here, and also in versions from Kay Chun and Joy Cho, resulting in a biscuit that traverses multiple flavors from bite to bite. For the best results, chill your butter in the freezer and your buttermilk in the refrigerator for at least an hour.

2 cups/258 grams all-purpose flour (see Tip)
1 tablespoon baking powder
1/2 teaspoon baking soda
2 tablespoons brown sugar
3/4 cup/66 grams shredded sharp Cheddar
6 tablespoons/85 grams cold unsalted butter, plus more for baking sheet
1 cup/240 milliliters cold buttermilk

Steps:

  • Stir-fry the chopped kimchi in a stainless-steel pan over medium heat until the juices have evaporated and the kimchi smells even more fragrant, about 3 minutes. Transfer to a plate and allow to cool completely.
  • Combine the flour, baking powder, baking soda and brown sugar in a bowl, breaking up any lumps of sugar. Add the cheese and the cooled kimchi. Stir to combine; it's all right if the dough is scraggly.
  • On the large holes of a grater, grate the chilled butter over the other ingredients and stir to combine. You want the butter to be around the size of peas. While stirring, gradually add the buttermilk and stir until combined. Be careful to handle the dough as little as possible.
  • Drop the dough in 6 mounds onto a greased baking sheet. (If your baking sheet is nonstick, line it with parchment paper instead.) Pat the mounds gently into squares.
  • Put the biscuits on their baking sheet in a freezer to chill for at least 1 hour. Heat the oven to 425 degrees.
  • Bake the biscuits until golden brown, 18 to 20 minutes. Remove the biscuits from the oven, and allow them to sit for several minutes before serving hot.
