PUMPKIN BARS
Buttery Pumpkin Bars are my favorite Thanksgiving dessert. Think you love pumpkin pie? Wait till you try my grandma's recipe for the most incredible pumpkin dessert!

Steps:
- Preheat oven to 350ºF. and spray a 9 x 13 inch baking dish with non-stick cooking spray; set aside.
- Combine the ingredients for the crust; in a medium mixing bowl. Use a large spoon to spread the crust into the bottom of the baking pan or press it evenly with your fingers.
- Combine the ingredients for the filling; in a medium mixing bowl. Pour filling over crust and spread out evenly.
- Combine the ingredients for the topping; in a small mixing bowl and sprinkle evenly over filling.
- Bake dessert at 350ºF for 45 to 50 mins.
- Allow dessert to cool for about 20 minutes and then store in the fridge (at least 3-4 hours) before serving.
- Bars will be tasty at room temperature, but are best served COLD with some type of whipped topping.

GRANDMA'S PUMPKIN OATMEAL COOKIES
This is a recipe I adapted from my grandmother. It is my favorite pumpkin cookie recipe. Plus it makes enough for a crowd!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- Combine sugar and butter in a large mixing bowl. Beat with an electric mixer until creamy. Add pumpkin, eggs, and vanilla extract.
- Mix flour, oats, baking powder, baking soda, cinnamon, and salt in a separate bowl.
- Add dry ingredients to the pumpkin mixture; mix until evenly incorporated. Fold in chocolate chips. Drop scoopfuls of cookie dough onto the prepared baking sheets.
- Bake in the preheated oven until edges are firm and bottoms are golden brown, about 12 minutes. Repeat with remaining cooking dough.

- Beat oil, sugar, pumpkin and eggs until blended.
- Add remaining dry ingredients gradually.
- Prepare 9x13 pan.
- Spread batter in pan and bake in 350° oven for 25-30 minutes.
- Cool.
- For frosting, cream all ingredients together until well blended--smooth and creamy.
- Frost bars.
MY GRANDMA'S PUMPKIN BARS
This recipe is from the 1940's, from my Grandma's collection. I make them every year for Halloween and Thanksgiving. Wonderful moist texture and frosting, makes a large cookie sheet. May decorate with candy corn for Halloween!

- Bars.
- Use electric mixer.
- Mix sugar and oil, add eggs and pumpkin.
- Add dry ingredients, mix well, pour into greased jelly roll pan. Bake at 350 for 30 minutes. Cool.
- Frosting.

GRANDMA CAROL'S PUMPKIN ROLL
My mom always makes her pumpkin roll around Thanksgiving and takes one to work where everyone asks her if she can make them one and they all want the recipe. You may want to halve the recipe unless you are making for a crowd or to give away. It makes a lot. It is without a doubt the best pumpkin roll I've ever had!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a 12x17-inch jelly roll pan and line with parchment paper; butter the parchment paper. Generously dust a kitchen towel with confectioners' sugar.
- Beat eggs, white sugar, and pumpkin together in a bowl until creamy.
- Sift flour, baking soda, cinnamon, cloves, and nutmeg together in a separate bowl; gradually stir into egg mixture. Stir to combine. Spread batter evenly into the prepared pan.
- Bake in the preheated oven for exactly 10 minutes.
- Immediately turn cake onto the prepared kitchen towel. Starting at a long end, roll up pumpkin cake and towel. Let rolled cake rest for 10 minutes.
- Beat cream cheese, butter, 16-ounce package confectioners' sugar, and vanilla extract together in a bowl until smooth; fold in pecans.
- Unroll cake; spread with the filling. Roll up cake (without towel). Cut off any jagged ends. Cover and refrigerate until chilled. Cut cake in half if desired; sprinkle with confectioners' sugar before serving.
