This recipe was developed with my recipe#164953 --- the amounts listed are enough to serve 6-8 people but it depends on the size of the portions you serve, you may reduce the recipe by half but I suggest to make the full amount I always do for my family of four, if there is any leftovers it always gets eaten for a midnight snack or you can serve it the next day --- the amounts for the mushrooms, chicken breast and pasta are really only a guideline you may increase or decrease slightly --- this is actually a quick recipe to throw together once you have cooked the chicken and mushrooms and to save time they may be cooked up to a day in advance, the chicken breast may be cooked in the oven instead for the skillet at 400°F. for 25 minutes, cooled then cubed --- cooking time is only for the alfredo sauce --- you will *love* this dish! :)

2 -3 tablespoons oil
8 boneless skinless chicken breasts (cut into bite-size pieces, can use thighs)
salt and pepper
2 tablespoons butter
2 (200 g) packages fresh mushrooms, thinly sliced
600 g uncooked linguine (or use spaghetti, can use more)
4 tablespoons butter
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper (or to taste)
1 tablespoon fresh minced garlic (use a little more if you like lots of garlic flavor)
3 tablespoons flour
3 cups half-and-half cream (or use full-fat milk)
1 cup whipping cream
seasoning salt
fresh coarse ground black pepper (to taste, or use white salt)
1 cup grated parmesan cheese (can use more)

Steps:

  • In a 4-quart heavy pot or a large skillet that is equivalent or close to that size, heat oil over medium heat; add in the chicken breast and season lightly with salt and pepper; cook on all sides until just done (about 8-10 minutes, do not overcook or the chicken or it will be dry) remove to a large bowl.
  • In the same skillet melt 2 tablespoons butter over medium heat; add in mushroom slices and sauté until browned (about 10-12 minutes) transfer to the bowl with the cooked chicken; set aside while cooking the pasta and preparing the sauce (or you may cover and chill for up to 24 hours).
  • Cook the pasta in a large pot of boiling salted water until just al dente (don't overcook pasta) drain but do not rinse.
  • Place cooked pasta in a large bowl and toss with 2-3 tablespoons oil or butter to prevent sticking; set aside.
  • For alfredo sauce; wipe the skillet clean, then melt 4 tablespoons butter over medium heat.
  • Add in thyme, cayenne pepper and fresh garlic; stir for 2 minutes.
  • Add in flour and stir for 1 minutes.
  • Add in the half and half cream and whipping cream; bring to a simmer over medium heat stirring constantly.
  • Reduce heat to low then mix in Parmesan cheese; cook stirring over low heat until heated through and bubbly.
  • Season with seasoned salt or white salt and black pepper to taste.
  • Add/mix in the cooked cubed chicken and mushrooms; cook stirring for about 10 minutes until heated through.
  • Spoon the sauce over the cooked pasta and toss, then sprinkle more Parmesan on top.
  • This sauce will thicken upon standing.

1/2 teaspoon garlic powder
1 egg
3 tablespoons vegetable oil

2 medium green onions, sliced (2 tablespoons)
1 cup milk
1 1/2 teaspoons soy sauce

Steps:

  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
  • In shallow dish, stir 1/2 cup Bisquick mix and the garlic powder. In another shallow dish, beat egg. Dip chicken in egg, then coat with Bisquick mixture.
  • In 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium heat. Add chicken; cook about 3 minutes or until golden brown. Turn chicken; cover and cook 4 to 6 minutes longer or until chicken is no longer pink in center. Remove to serving platter; cover to keep warm.
  • In same skillet, heat remaining 1 tablespoon oil over medium heat. Add mushrooms; cook 3 to 4 minutes, stirring frequently, until browned. Add 3 tablespoons Bisquick mix and the onions; cook and stir until mixed. Stir in milk and soy sauce. Cook until mixture is thick and bubbly. Serve over chicken.

4 tablespoons butter, melted
1/2 cup all-purpose flour
1 teaspoon seasoning salt, divided
1 teaspoon garlic powder, divided
1 whole chicken, cut up (about 3-1/2 pounds)
2 -3 tablespoons oil (or as needed) or 2 -3 tablespoons butter (or as needed)
1 large onion, sliced (can use two medium onions)
1/2 lb sliced fresh mushrooms
2 (10 3/4 ounce) cans cream of mushroom soup, undiluted
1 pinch cayenne pepper (optional)
1 (5 ounce) can evaporated milk
3/4 cup grated cheddar cheese
1/2 teaspoon fresh ground black pepper (or to taste)
1/4 teaspoon paprika

Steps:

  • In a large bowl combine two cans cream of mushroom soup with 1/2 teaspoon garlic powder, cayenne pepper (if using) evaporated milk, 3/4 cup cheddar cheese, 1/2 teaspoon seasoned salt and 1/2 teaspoon ground black pepper; mix until well combined; place in refrigerator until ready to use.
  • Set oven to 425°F (set oven rack to lowest position).
  • Pour the melted butter into a 13 x 9-inch baking pan.
  • In a bowl combine flour with 1/2 teaspoon seasoned salt and 1/2 teaspoon garlic powder.
  • Dredge the chicken pieces in the flour mixture one piece at a time to coat completely.
  • Place the chicken in the pan skin-side down.
  • Bake uncovered at 425°F for 20 minutes.
  • Turn the chicken over skin-side up and continue baking for 20 minutes.
  • While the chicken is cooking heat 2-3 tablespoons oil or butter in a skillet over medium-high heat; add in sliced onions and mushrooms; sauté until tender, then mix in with the mushroom soup mixture.
  • After the last 20 minutes of cooking the chicken remove from oven and drain all fat from pan.
  • Slightly warm the soup mixture in the microwave then then pour the soup mixture in the pan on top and around the chicken.
  • Sprinkle the top lightly with paprika.
  • Reduce oven heat to 325°F.
  • Cover pan with foil and continue baking for about 20 minutes.

4 boneless skinless chicken breast halves (6 ounces each)
1 can (12 ounces) mushroom gravy
1 cup 2% milk
1 can (8 ounces) mushroom stems and pieces, drained
1 can (4 ounces) chopped green chilies
1 envelope Italian salad dressing mix
1 package (8 ounces) cream cheese, cubed

Steps:

  • In a 3-qt. slow cooker, combine the chicken, gravy, milk, mushrooms, chilies and dressing mix. Cover and cook on low for 4-5 hours or until chicken is tender., Stir in cream cheese; cover and cook 15 minutes longer or until cheese is melted.

1/4 cup butter
1/4 cup flour
2 (10 ounce) cans chicken broth, undiluted
1 tablespoon oxo chicken bouillon powder (I just use 1 small package OXO bouillon powder)
1 cup milk
1 pinch garlic powder (optional)
1 -2 teaspoon dried onion flakes (rubbed between fingers to release the flavors)
black pepper (lots black pepper!)

Steps:

  • In a heavy saucepan melt butter over medium-high heat.
  • Whisk in flour and stir constantly for 1 minute (do not let the flour brown).
  • Slowly add in broth, chicken bouillon powder, half and half or milk, pinch garlic powder (if using) and dryed onions; stir/whisk over medium heat until smooth and thickened (this should take about 2-3 minutes).
  • Add in lots black pepper and salt if desired.
  • Delicious!

This is for serious garlic lovers. The chicken bakes out so moist and tender! Grated cheese may be sprinkled on top of the breast the last 5 minutes of cooking if desired but that is optional. Double all ingredients for more than four breasts and adjust the amount of garlic to suit taste. For the coating amount you might be able to get away with 5 or maybe 6 very small chicken breasts, but I would suggest to increase the amount slightly --- to take this dish to yet another level, about 10 minutes before the cooking time is finished, drizzle the top of the chicken with a little pasta sauce, then sprinkle mozzarella cheese on top. Return to oven for about 10 minutes until the chicken is completely cooked and sauce is hot and cheese has melted. For a lemon-garlic flavor add in 3 tablespoons lemon juice to the melted butter/garlic mixture --- *NOTE* for a healthier alternative Smart Balance Butter Blend may be used in place of the melted butter --- you will love this chicken! 2 large onions, thinly sliced
8 ounces sliced fresh white button mushrooms or 1 (10 ounce) can canned mushroom slices, drained

1 pinch cayenne pepper (to taste, optional, optional) (optional) or 1 pinch crushed red pepper flakes (to taste ) (optional)

  • In a bowl combine all hamburger mixture until combined.
  • Shape into 6 patties.
  • Heat oil in a large skillet over medium-high heat.
  • Add in hamburger patties, cook until browned on each side (about 3-4 minutes per side, the burgers do not have to be cooked all the way through as they will finish cooking completely in the gravy) remove to a plate.
  • To the same skillet add in sliced onion and mushrooms; cook stirring scraping up any browned bits that have accumulated on the bottom of the skillet; cook for about 8-10 minutes or until the onions are softened (adding in more oil if needed).
  • Add in flour and cayenne pepper; stir for 2 minutes.
  • Add in beef broth, Worcestershire sauce and black pepper; bring to a simmer stirring continuously until bubbly and thickened (at this point you may add in the beef bouillon powder).
  • Add in the patties back to the skillet.
  • Reduce heat to low and simmer uncovered for about 25 minutes turning the patties over once halfway through cooking.

This is comfort food at it's best, it makes a wonderful meal served with mashed potatoes or fries or cooked egg noodles, I make this often it is a family favorite --- you will need a very large skillet for this and if you can fit more chicken in your skillet then go ahead, I make this using boneless skinless breasts but any part of the chicken will work well although you may need to adjust the cooking time slightly --- make certain to hand-squeeze out all the excess moisture from the chicken or it will create a watery gravy --- no extra salt needed to this dish as the canned soups, Parmesan cheese and dry onion soup already adds plenty, you can always add it in at the end of cooking if needed, if you wanted to go the extra step, fresh sliced sauteed mushrooms works even better than the canned, I have listed canned for quicker prep --- cooking time is only estimated --- you will love this!

  • For the gravy; add in more butter to the skillet only if needed then add in onion and saute for about 3 minutes or until just slightly softened.
  • Add in garlic and chili flakes; saute stirring for 2 minutes.
  • Add in all remaining ingredients (start with 1/4 cup milk or even less as the sauce will thin even more as it cooking you can always add in more after) bring to a simmer stirring constantly with a wooden spoon scraping up all the browned bits from the bottom of the skillet; cook until the mixture is combined and bubbly.
  • Place the chicken back into the pan and turn to coat in the gravy.
  • Reduce to low heat and simmer uncovered turning the chicken and stirring every so often.
  • Simmer for about 35-40 minutes or until the chicken is cooked through.
