KITTENCAL'S PERFECT PESTO
I have experimented with many ingredient amounts for pesto, I have finely found the one that has a perfect balance of flavor --- this will keep covered in the refrigerator for up to 5 days, if you are storing it in the refrigerator I suggest to place a 1/2-inch layer of oil on top of the pesto and cover with a lid or you may freeze --- the success of this recipe will depend on the quality of Parmesan cheese that you use, if possible try to use a good quality freshly grated cheese it really will make a difference with the taste of the pesto, and please use only kosher salt --- FOR RED PESTO; reduce the basil to 3 cups, and add 1/2 cup chopped oil-packed sun-dried tomatoes to the blender along with other ingredients.

Steps:
- Combine the basil, olive oil, pine nuts and garlic cloves in a blender (or food processor).
- Blend until a paste form, stopping often to push down the basil.
- Add in the Parmesan cheese and Kosher salt; blend until smooth.
- Transfer to a bowl.
- NOTE to clean fresh basil leaves; swirl in a bowl of water then spin them very dry in a salad spinner.
- If not using right away store the clean leaves in a sealed plastic bag with a slightly damp paper towel, the leaves should keep well refrigerated for up to 2 days.
KITTENCAL'S GREEK PASTITSIO
To save some time the meat sauce may be made up to a day ahead if desired, try to use extra-lean ground beef for this it will make a difference in flavor, small penne pasta may be replaced for the ziti, but I do recommend using the ziti, adjust the chili flakes to suit heat level, or you may omit if desired --- also see my recipe#66596

KITTENCAL'S DELICIOUS MEATY PASTA SAUCE
I don't think you will find a better meat sauce than this one! a good tomato sauce needs time to "ripen" so I strongly suggest to make this sauce a few day ahead and refrigerate just warm in a saucepan before using you will see that the flavors strongly intensify after refrigeration time --if you want a creamy sauce just add in 1/4 cup or more of heavy whipping cream the last 30 minutes of cooking time, this may be doubled if desired but keep the ground beef amount at one pound, this also freezes well... you will *love* this!

KITTENCAL'S SIMPLY PERFECT WHIPPED CREAM
For the perfect whipped cream use only powdered sugar and make certain to freeze your beaters and bowl for about 15-20 minutes --- the addition of the cornstarch will create more body to the whipped cream and will hold up better.

KITTENCAL'S CREPES
This crepe recipe goes back over 30 years, you may fill with berries then roll up and top with whipped cream if desired, or drizzle with syrup, make certain to use *warm* milk only that's the secret to perfect textured crepes! --- the crepes can really be made into any size desired, but make sure to make them as thin as possible --- servings and cooking time are only estimated, depending on size of the crepes.
