Healthy Salmon Patties (Salmon Cakes Recipe) image

This low calorie salmon cakes recipe is easy to make and so yummy! You can make these healthy salmon patties with leftover salmon, or canned salmon.You can make this salmon fish cakes gluten-free by using Tamari (in place of soy sauce) and gluten-free breadcrumbs.

16 ounces flaked salmon
1/2 red onion (minced)
1 red bell pepper (minced)
2 tablespoons chopped cilantro
Juice of 1 lemon
1 tablespoon soy sauce (or Tamari)
2 teaspoons sesame oil
3 tablespoons Greek Yogurt
1 egg
2 cups panko breadcrumbs (or gluten free panko breadcrumbs)
Olive Oil Spray

Steps:

  • To a large bowl, combine the salmon, red onion, red bell pepper, cilantro, lemon juice, soy sauce, sesame oil, Greek yogurt, and mixed together.
  • Add the egg, and one cup of the breadcrumbs, and mix together.
  • To a shallow dish (or pie pan) add the remaining breadcrumbs.
  • Working with wet hands (so the mixture won't stick to you) make 12 salmon patties. To make this easy, start rolling them in a ball as you would meatballs, and then gently push down into a patty form.
  • Coat the patties in the remaining breadcrumbs, moving to a baking sheet as you work.
  • Heat a skillet over medium heat, and spray with olive oil. Cook the patties in batches, for 2 to 3 minutes each side, until browned. Then transfer to a paper towel lined plate to drain.
  • Serve hot, or cool completely and move to a freezer bag for storage. Salmon patties will hold in the freezer for 1-2 months and the fridge for 3 days. You can reheat on a baking sheet in a 350° oven for 15 to 20 minutes.

1/4 cup oats
1/2 cup fat-free ricotta cheese
2 egg whites
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh cilantro (coriander)
kosher salt
pepper

Steps:

  • Mix all ingredients together.
  • If the mixture is too soft, add more oats. If the mixture is too dry add another egg white.
  • Shape into cakes.
  • Spray non-stick frying pan and cook until golden on each side.
  • These are delicious hot or cold.

This is a salmon patty recipe I came up with over 10 years ago. It was based on a family recipe, but modified to make it even more healthy for you. But to my surprise, my kids LOVED it and often request it for dinner. Hope you find the same results with your family.

1 (14 ounce) can salmon (red or pink)
1 large egg
1 small onion, diced fine small size (or half a medium sized)
1 celery rib, diced fine
2 -3 teaspoons lemon juice
6 -8 drops Tabasco sauce
1 teaspoon Worcestershire sauce
1/4 teaspoon dry dill weed
1/8 cup sherry wine
1/2 cup oatmeal
1/2 cup Italian breadcrumbs

Steps:

  • Place canned salmon with fluid in a large bowl.
  • Add next 8 ingredients and mix well to break up the salmon.
  • Add last 2 ingredients and mix to evenly moisten the oatmeal and breadcrumbs.
  • Form into patties like burgers (typical yield is 8 patties).
  • Fry in olive oil (or any other favorite healthy oil) at medium-low temperature for 4 minutes per side. Patties should be medium golden brown with a slightly crispy crust when done.
  • Place on a paper towel covered plate to drain and serve while still hot.
  • Although you could serve with tarter sauce or malt vinegar, you may find everyone enjoys them plain.
  • Smaller patties can be used as an appetizer.
