KITTY HIGHBALL
W. C. Whitfield's original Kitty Highball recipe-equal parts red wine and ginger ale over ice-goes contemporary. In this deconstructed version the ginger ale is replaced with ginger syrup and soda.

Steps:
- Combine the wine, ginger syrup, and lime juice in a cocktail shaker. Add a small piece of cracked ice and shake until chilled. Strain into a collins glass filled with ice, top with soda water, and garnish with the candied ginger.
- Note:
- To make the ginger syrup: Combine 2 cups sugar and 1 cup fresh ginger juice in a small pot over very low heat. Cook, stirring constantly, until the sugar is dissolved. Remove from the heat and let cool completely. Transfer to a plastic or glass container and store in the refrigerator for up to 1 month.

- Combine 1 oz. fresh pineapple juice,1 oz. Amontillado sherry, 1 oz. rye whiskey, ¾ oz. fresh lemon juice, ¾ oz. simple syrup, and 1 dash Angostura bitters in a cocktail shaker and fill with ice. Cover and shake until well chilled, about 7 seconds.
- Pour 1 oz. chilled club soda into an ice-filled Collins or highball glass and strain cocktail into it. Garnish with lemon wheel.
