SCHNITZ UN KNEPP RECIPE
Schnitz un Knepp is a dish of boiled ham with apple dumplings. It's one of my favorite Pennsylvania Dutch recipes.

Steps:
- Boil the ham for two hours.
- Soak the dried apples for as long as the ham is boiling.
- When the meat is done, add the dried apples and however much water they have been soaking in.
- Boil for one more hour.
- You can reduce the boiling time if you want to but the flavor is better if you follow these directions.
- Prepare the dumpling batter by mixing all of the ingredients.
- Drop by tablespoons into the boiling liquid.
- Cook COVERED tightly for 15 minutes.

KNEPP (AMISH DUMPLINGS)
Knepp are Amish dumplings they are part of an old amish dish Schnitz und Knepp. I will post that recipe as well, but these dumplings can be used in soups and stew too.

Steps:
- Sift flour, baking powder and salt together in a lg mixing bowl. Cut in butter w pastry blender or your fingers. Add milk and stir until dough is smooth. Drop by tablespoons into pot of boiling water (or stock, soup or stew) Cover pot with lid and simmer over medium heat for about 12 mins. DO NOT lift the lid during cooking. Remove w slotted spoon if cooking in water. Or serve in your soup or stew. Makes approx 10 dumplings

SNITZ AND KNEPP
This is a simple and traditional Pennsylvania Dutch recipe. It simmers, unattended, for a long time releasing an intoxicating aroma while you go about your daily errands. Cooking time does not include soaking the apples overnight.

Steps:
- Soak the dried apples in water eight hours or overnight.
- Approximately 4 1/2 hours before serving, cover the ham with cold water and cook slowly for three hours.
- Add the apples and the water they were soaking in to the ham.
- Add the brown sugar and cook for an additional hour.
- For the knepp, sift together the dry ingredients.
- Stir in the egg and melted butter.
- Add enough milk to make a batter stiff enough to drop from a spoon.
- Drop the batter by spoonfuls into the boiling ham and apples.
- Cover the pan tightly and cook the dumplings 10 to 12 minutes.
- Do not lift the cover until ready to serve.

AMISH APPLE DUMPLINGS
These Amish apple dumplings are prepared by our local Mennonite market for the local fruit farm's annual apple picking open house.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Set apples aside in a cold water bath while you prepare the dough.
- Combine flour, baking powder, and salt in a medium mixing bowl. Add shortening and cut together with a pastry blender or a fork until crumbly. Add milk and stir until dough comes together.
- Combine 1 cup brown sugar and cinnamon in another bowl. Separate dough into six equal portions and roll out to about 1/4-inch thickness. Place an apple in the center of each dough portion and fill the core with the cinnamon-sugar mixture. Wrap each apple in dough and place into the prepared pan.
- Combine remaining brown sugar, water, butter, and nutmeg in a medium saucepan over medium-high heat. Cook until sugar is dissolved and butter is melted, about 5 minutes. Pour syrup over dumplings.
- Bake in the preheated oven until dough is golden brown and apples are soft, about 40 minutes.

SCHNITZ UND KNEPP - DRIED APPLES AND DUMPLINGS
I am a man well up in years with simple tastes and few, But I would like to eat again a dish my boyhood knew. A rare old dish that Mother made that filled us all with pep, This generation knows it not-we called it Schnitz and Knepp. I patronize all restaurants where grub is kept for sale, But my search up to the present has been without avail. They say they never heard of it, and I vainly wonder why, For that glorious concoction was better than pie. Dried apple snits, a slab of ham and mammoth balls of dough Were the appetizing units that filled us with a glow, When mother placed the smoking dish upon the dinner table, And we partook of its delight as long as we were able. My longing for that boyhood dish I simply will not shelf; If I cannot find it anywhere, I'll make the thing myself.

Steps:
- Wash apples; cover with water and let soak at least 8 hours or overnight.
- Cover ham with cold water and simmer for 3 hours.
- Add apples and their water; continue to boil another hour.
- Add brown sugar.
- Add dumplings to the pot the last 18 minutes before service.
- To make dumplings: Sift dry ingredients together.
- Add egg, melted butter and enough milk to make a stiff batter.
- Drop by teaspoons into boiling liquid.
- Cover tightly and cook for 18 minutes.
- Serve piping hot on a large platter.

- Add few drops of water until you have a stiff, sticky dough.
