Korean Kebabs image

This is a juicy dish and really easy to prepare. I have made these for years and they're still a huge favorite with family and friends. I serve them with mushroom rice and garlic bread. This is a sauceless recipe but the meat is so succulent you don't need it.

¼ cup vegetable oil
¼ cup soy sauce
1 tablespoon peanut butter
2 tablespoons finely chopped spring onion
1 teaspoon sesame seeds
1 clove garlic, crushed
⅛ teaspoon red chile powder, or to taste
salt and freshly ground black pepper to taste
1 ½ pounds pork tenderloin, cut into cubes
1 onion, cut into chunks, or to taste
1 (8 ounce) package fresh mushrooms, or to taste
1 large red bell pepper, cut into chunks, or to taste
1 zucchini, cut into chunks, or to taste

Steps:

  • Mix oil, soy sauce, and peanut butter together in a bowl until blended and creamy. Stir in spring onion, sesame seeds, garlic, red chile powder, salt, and pepper. Add pork to marinade; turn to coat.
  • Marinate pork in the refrigerator for 2 to 4 hours.
  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Thread pork, onion, mushrooms, red bell pepper, and zucchini onto skewers. Transfer to the baking sheet. Pour marinade on top.
  • Bake in the preheated oven until pork is tender and browned, about 30 minutes.

Steps:

  • In food processor, combine all ingredients; process until coarsely ground. Store in airtight container.
  • To season steak: Coat both sides of 2-1/2-3-lb. boneless sirloin steak (about 1-inch thick) with 1/2 cup coffee mixture. Let stand at room temperature 30 minutes before grilling or pan-frying to desired doneness.

Got this recipe from an AP article in the food edition in the Nashua, NH, newspaper The Telegraph. It's super easy and the marinade is rich and satisfying for beef kebabs. Serve it up with garlic mashed potatoes, or red bliss potato salad.

1 cup chopped shallot
3/4 cup cider vinegar
1/2 cup olive oil
1/4 cup molasses
2 tablespoons instant coffee
1 1/2 tablespoons fresh coarse ground black pepper
2 teaspoons Dijon mustard
1 1/2 lbs top sirloin beef, cut into 1 1/2 inch cubes
16 medium button mushrooms, cleaned and stems trimmed
16 cherry tomatoes
2 small red onions, cut into wedges
1 medium zucchini, halved lengthwise and cut into 1 inch pieces

Steps:

  • In a medium bowl combine shallots, oil, vinegar, molasses,pepper, coffee and mustard. Put meat in shallow dish, pour marinade over meat and cover. Allow to marinate for 2 to 8 hours.
  • Soak eight 10 inch bamboo skewers in water, heat grill.
  • When ready to cook, alternate beef and vegetables on skewers, brush with marinade and grill for 3 minutes. Turn kebabs and brush with marinade - grill another 3 minutes. Continue until beef is cooked to your liking.
