CRISPY SWEET AND SOUR PORK



Crispy Sweet and Sour Pork image

While there are many recipes on Zaar for Sweet and Sour Pork, this is one that keeps the pork crispy. After finding this recipe years ago, I've used no other. Leftover pork roast or some thick, cooked pork chops are the basis for this. Planned leftovers are good! The recipe is from Busy Woman's Cookbook, published by Farm Journal in 1961.

3 cups cooked pork, cut into 3/4 inch pieces
1 teaspoon salt
1 tablespoon cornstarch
1 large egg
1/2 tablespoon flour
1/2 cup canola oil
1 tablespoon sugar
2 tablespoons cornstarch
1 cup water
1/2 cup pineapple juice
1/4 cup ketchup
1 teaspoon soy sauce
1/4 cup cider vinegar
1 green bell pepper, cut into 1 inch pieces
1 large onion, coarsely chopped
1 (20 ounce) can pineapple chunks, well drained (reserve juice)
2 cups cooked rice

Steps:

  • Toss pork pieces with salt and 1 tablespoon cornstarch.
  • Mix egg and flour to make a batter.
  • Dip pork pieces into batter with slotted spoon.
  • Fry in hot oil until nicely browned.
  • Drain on paper towels and keep warm.
  • In a deep skillet, mix sugar and cornstarch; stir in water, pineapple juice, ketchup, soy sauce and vinegar.
  • Bring to a boil, sirring constantly, until thickened.
  • Continue cooking and stirring for two minutes.
  • Add green pepper and onion; cook for five minutes.
  • Add pineapple chunks and pork pieces and simmer, uncovered, for six to eight minutes or until pork pieces are heated through.

My husband's grandmother was Chinese. She taught me this one. This is the way Gramma made Sweet and Sour all her life (she died 6 years ago at age 94). The secret is apple cider vinegar.

1 pound pork butt, cut into 1 inch cubes
1 teaspoon salt
¼ teaspoon white sugar
1 teaspoon soy sauce
1 egg white
2 green onions, chopped
1 quart vegetable oil for frying
½ cup cornstarch
1 tablespoon vegetable oil
3 stalks celery, cut into 1/2 inch pieces
1 medium green bell pepper, cut into 1 inch pieces
1 medium onion, cut into wedges
white sugar to taste
salt to taste
1 cup water
¼ teaspoon salt
¾ cup white sugar
⅓ cup apple cider vinegar
¼ cup ketchup
½ teaspoon soy sauce
1 (8 ounce) can pineapple chunks, undrained
2 tablespoons cornstarch
¼ cup water

Steps:

  • Place cubed pork in a medium bowl, and season with 1 teaspoon salt, 1/4 teaspoon sugar, and 1 teaspoon soy sauce. Mix in the egg white and green onions. Cover, and place in the refrigerator at least 1 hour.
  • Heat 1 quart oil to 365 degrees F (185 degrees C) in a large, heavy saucepan or deep fryer.
  • Coat the pork with 1/2 cup cornstarch, and fry in the heated oil about 10 minutes, until evenly browned. Drain on paper towels.
  • Heat 1 tablespoon oil in a wok over medium heat. Stir in the celery, green bell pepper, and onion, and cook until tender. Season with salt and sugar. Remove from heat, and set aside.
  • In a large saucepan, mix 1 cup water, 1/4 teaspoon salt, 3/4 cup sugar, apple cider vinegar, ketchup, and 1/2 teaspoon soy sauce. Bring to a boil, and stir in the cooked pork, celery mixture, and the pineapple chunks with juice. Return to boil, and mix in 2 tablespoons cornstarch and 1/4 cup water to thicken. Cook until well blended.

2 tablespoons rice wine vinegar
1 teaspoon minced garlic
1 teaspoon minced ginger
¼ teaspoon salt
1 pinch ground black pepper
3 chicken breasts, cut into bite-size pieces
6 tablespoons honey
¼ cup cider vinegar
4 tablespoons brown sugar
3 tablespoons gochujang (Korean chile paste)
2 tablespoons soy sauce
2 teaspoons minced garlic
1 teaspoon minced ginger
1 pinch ground black pepper
½ cup cornstarch
canola oil for frying

Steps:

  • Mix rice wine vinegar, 1 teaspoon garlic, 1 teaspoon ginger, salt, and 1 pinch pepper in a bowl with the chicken. Allow to sit for 20 to 30 minutes.
  • Combine honey, vinegar, brown sugar, gochujang, soy sauce, 2 teaspoons garlic, 1 teaspoon ginger, and 1 pinch black pepper in a pot over medium heat. Stir well; when bubbling, reduce heat to low and simmer 3 to 4 minutes. Remove from heat.
  • Toss cornstarch with the chicken to coat evenly.
  • Fill a pan with 1 inch oil and heat to 350 degrees F (175 degrees C). Add chicken in small batches, making sure to not overcrowd the pan. Cook until lightly golden brown, about 2 minutes per side.
  • Reheat oil to 350 degrees F (175 degrees C) and deep fry chicken once more until deeply golden, about 40 seconds each. Transfer chicken to the pot of sauce.
  • Heat sauce and chicken over medium-low heat until warmed through, about 3 minutes.

Very carefully, pour out only the water and keep the soaked starch for batter.
  • In a large mixing bowl, combine pork, soy sauce, shaoxing wine and pepper. Marinate for 10 minutes.
  • Preheat frying oil to 350°F Using a spoon, break down the soaked and harden starch. Add beaten egg and oil then mix well. The texture of the batter is like condensed milk.
  • Go ahead and combine the batter and the marinated pork. Mix well with your hand. Carefully drop one piece of pork at a time into 350°F preheated frying oil. Make sure the pork doesn’t stick to each others too much and not crowed the pot. Do 2 to 3 batches as you needed. Fry the pork about 2 to 3 minutes or longer if your pork pieces are bigger and thicker, don’t mind about the white/pair yellow color at this moment.

  • Make the tangsuyuk batter by combining the potato starch and water in a bowl. Mix them well. Leave it for about 1 hour (or until the starch sinks in the bowl completely) on the kitchen bench. When the starch and water separate, gently discard the water. Combine the starch with the egg whites. Mix them well. (It will be stiff at first, so you might want to use a fork or equivalent tool to mix.)
  • Fill a wok with a generous amount of oil and bring it to boil until it reaches 175 C / 350 F (or boiling). (It takes about 5 mins.)
