Smigus Dyngus Day is the Monday after Easter Sunday. This Polish traditional dish is prepared with the left overs from Easter dinner. On Easter Monday, known as "wet Monday" boys will douse the girls with buckets of water. The more a girl is doused, the better the chances are of pending marriage. The girls then get their "revenge" the following day and soak the boys. I found this easy recipe by Barbara Rolek. The whole family loves this dish. Something different and packed with deep tradition.

2 can(s) cream of mushroom soup
1/2 cup(s) caramelized onions
1 1/2 teaspoon(s) yellow mustard
2 can(s) 14 ounces each bavarian kraut,drained and squeezed
16 ounce(s) uncooked kluski noodles
14 ounce(s) polish sausage sliced 1/4 inch thick
6 ounce(s) shredded swiss cheese
1/4 cup(s) bread crumbs

Steps:

  • Prepare your caramelized onions. Low and slow is the best way to bring out the sweetness of the onions. Use part butter and part oil. This will take upward of 45 minutes. When they are nice and caramelized, deglaze the pan with liquid, water,wine,broth,your choice just to get all the bits of wonderful flavor . Set aside.
  • Preheat oven to 350 degrees. Lightly coat a casserole dish with cooking spray or oil.
  • Mix together: cream of mushroom soup, caramelized onions and mustard. Set aside.
  • Layer half of the kraut in prepared pan. Layer half of the noodles on kraut, and then half of the Polska Kielbasa. Spread half of the soup mixture over Kielbasa. Repeat layers.
  • Place casserole on cookie sheet in case it bubbles over. Cover casserole and bake for 35 minutes.
  • Uncover casserole and top with swiss cheese and bread crumbs. Bake an additional 25 minutes.

1 (13 ounce) can sauerkraut, rinsed and drained
2 tablespoons mayonnaise
2 tablespoons horseradish
1 lb smoked kielbasa, sliced 1/2 inch thick
2 cups shredded swiss cheese
1 (10 ounce) can refrigerated buttermilk biscuits

Steps:

  • Preheat oven to 400°F.
  • Combine sauerkraut, mayonnaise and horseradish and spread in the bottom of an 8x8-inch greased casserole.
  • Add kielbasa, top with cheese and bake for 15 minutes.
  • Place biscuits on top and bake 13-15 minutes more.

4 t EVOO, divided
1/2 large onion, sliced
1-1/2 t caraway or fennel seedds
1 large sweet-tart apple, such as Braeburn, chopped
1 C dry white wine
10 oz turkey kielbasa, cut into 1/2 inch slices
1-1/2 C drained sauerkraut, rinsed
3 T cider vinegar
1 T spicy brown mustard
1/4 T freshly ground pepper
2 large Yukon gold potatoes, thinly sliced
1 T butter, melted
1/4 t salt

Steps:

  • Preheat oven to 400* Heat 2t oil in large skillet over med heat. Add onion and cook, stirring, until beginning to brown, about 5 minutes Stir in caraway seeds and cook til fragrant about 30 seconds Add apple and wine. Increase heat to medium-high and cook, stirring til most of wine has evaporated, about 5 minutes. Stir in sausage, sauerkraut, vinegar, mustrd and pepper. Transfer to 9x13 baking dish Toss potato slices with remaining 2t oil, butter and salt in a bowl until coated. Cover sauerkraut mixture with tightly overlapping potato slices. Bake until potato wedges start to get crispy about 50 min to one hour. Cool 10 minutes before serving

1/2 cup butter
1 medium onion, diced
2 garlic cloves, minced (four if you are a garlic lover)
1/2 teaspoon thyme leaves
1/4 teaspoon ground sage
ground black pepper, to taste
3 potatoes, peeled and diced (try to use a waxy potato like Yukon gold (russets will disintegrate in the baking process)
1 (16 ounce) bag sauerkraut, from the deli aisle (not canned please)
1 lb beef kielbasa, cut into 1/2 inch pieces (two if you're an insane sausage lover)

Steps:

  • Put the cold butter in a cold pan with the diced onion, and slowly bring to a simmer on medium heat.
  • This brings out the sweetness of the onions.
  • Simmer for about 10 minutes.
  • Add minced garlic and simmer 2 more minutes.
  • Add next 3 ingredients.
  • Combine with the sauerkraut (undrained and not rinsed), kielbasa and potatoes.
  • Bring to a simmer on the stove top.
  • Cover loosely with foil and place in a preheated 225°F oven for 3 hours.

This was named by my two kids as it sounded to them like "yummy German casserole" - I have no idea what it means - but it is amazing! I'm posting it here because I keep loosing the recipe - easy-peezy and so good - real comfort food!

12 ounces egg noodles, cooked
1/3 cup flour
1/3 cup butter, melted
1/4 teaspoon pepper
1/2 teaspoon dry mustard
3 cups milk
1 cup cheddar cheese, shredded
2 cups sauerkraut, drained
16 ounces kielbasa, ring
1/2 cup breadcrumbs

Steps:

  • Cook egg noodles as per directions on package. I really like the Pennsylvania Dutch Kluski noodles as they add great texture to this dish, but I'm sure any thick egg noodle will work. Set aside.
  • Slice or cube kielbasa - we cube as we like it spread throughout the casserole more thoroughly.
  • Heat butter in dutch oven until melted, stir in flour and seasonings. When mixture is well combined add milk. Bring to a boil for one minute, stirring constantly.
  • Add 3/4 cup of cheese, stir until melted.
  • When sauce is ready stir in sliced kielbasa, drained sauerkraut and pre-cooked egg noodles.
  • Pour into a 3 quart casserole.
  • Mix remaining cheese with bread crumbs and sprinkle over casserole.
  • Bake at 375° for 20 minutes or until heated through.

1 lb kielbasa or 1 lb smoked sausage
1 (16 ounce) can sauerkraut, drained
1/4 cup dark brown sugar
2 medium onions, sliced

Steps:

  • Slice kielbasa thin.
  • Saute onions and kielbasa in a little shortening.
  • In a 2-quart casserole dish, layer 1/2 of the sauerkraut, 1/2 of the kielbasa and onions, then sprinkle with 1/2 of the brown sugar.
  • Repeat with the other half of the ingredients.
  • Bake, covered, in a 325 degree oven for 1 hour.
  • Serve it with mashed potatoes, glazed carrots and homemade applesauce.

1 lb Polish sausage, sliced (Hillshire Farm's Polska Kielbasa or other smoked sausage)
1/2 cup butter, plus
extra virgin olive oil, for pan
1 1/2 large onions, sliced
2 carrots, diced
2 russet baking potatoes, peeled, diced
1 red bell pepper, diced
1 head green cabbage, cored and thinly sliced
1 teaspoon salt
1/2 teaspoon ground black pepper
1 (1 1/4 ounce) package onion soup mix, dry
1 2/3 cups milk or 1 2/3 cups half-and-half
2 tablespoons cider vinegar (or white wine vinegar)
1 tablespoon sugar
4 eggs, lightly beaten
2 cups Ritz crackers, crushed (or Keebler Club or Wheat Thins)
1 tablespoon caraway seed

Steps:

  • Heat oven to 325º. Butter or spray 9 x 13 casserole dish with Pam.
  • In a large Dutch oven on medium/high heat, sauté sliced sausage in a bit of olive oil until browned. Remove to a bowl.
  • Reduce heat to medium and add butter. Sauté onions, carrots, potatoes, bell pepper, and cabbge until lightly caramelized - about 20 minutes. Add salt, pepper and onion soup mix. Stir in milk, vinegar, and sugar. Add sausage and drippings. Bring to boil. Reduce heat to medium-low; simmer for 5 minutes. Remove pot from heat and let cool slightly, then gently stir in eggs.
  • In a large zip-lock bag, crush crackers with caraway seeds. Into the pot of veggies and sausage, add ½ of the cracker mixture. Pour into prepared casserole dish. Dust top evenly with remaining crackers. Bake at 325º for 45 minutes, or until heated through and top is golden brown.
