This is a classy dish and easy to make! It includes boneless chicken breast, lemon juice, black pepper and some salt. To top it with some style, I throw on some ready cut tomatoes and shredded Monterey Jack cheese and toasted sunflower seeds.

1 tablespoon raw sunflower seeds
1 tablespoon fresh lemon juice
⅔ teaspoon freshly ground black pepper
¼ teaspoon salt
4 boneless, skinless chicken breast halves
1 (14.5 ounce) can peeled and diced tomatoes, drained
5 ounces shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the sunflower seeds on a baking sheet in a single layer. Place them into the oven to toast while the oven is preheating. This should take only about 10 minutes. Keep an eye on them, they burn easily.
  • In a small bowl, mix together the lemon juice, pepper and salt. Place the chicken into an 11x7 inch baking dish, and sprinkle with the lemon juice mixture. Cover with a lid or aluminum foil.
  • Bake for 25 to 30 minutes in the preheated oven, or until chicken is no longer pink, and the juices run clear. Remove the dish from the oven, and drain off any liquid. Spoon the tomatoes over the chicken. Sprinkle the toasted sunflower seeds and Monterey Jack cheese evenly over the top. Switch the oven to Broil.
  • Place the dish with the chicken back into the oven uncovered, and broil for about 1 or 2 minutes, until the cheese is melted. There you have it!

1 tablespoon oil
1 ½ cups white mushroom
salt, to taste
black pepper, to taste
1 tablespoon fresh thyme leaf
4 cups baby spinach
2 boneless, skinless chicken breasts
½ teaspoon paprika
3 tablespoons shredded cheddar cheese

Steps:

  • Preheat oven to 400°F (200°C).
  • Heat the oil over medium heat in a large, nonstick skillet.
  • Toss in the mushrooms and season with salt, pepper, and thyme. Sauté until the mushrooms have started to darken in color.
  • Place the spinach on top of the mushrooms and toss until the greens have wilted, about 2-3 minutes. Set the spinach mixture aside.
  • Season the chicken breasts on both sides with salt and pepper.
  • Using a sharp knife, make vertical cuts, about half an inch apart, making sure not to cut all the way through the chicken.
  • Transfer the chicken to a greased roasting pan.
  • Stuff the spinach mixture into the cuts of the chicken breasts. Season with paprika and top with a sprinkle of grated cheddar cheese.
  • Bake for 20-25 minutes at 400°F (200°C), until the cheese has melted and the chicken has reached an internal temperature of 165°F (72°C).

A handful each fresh chives, flat leaf parsley, dill or mint
1 cup (8 ounces) soft white cheese such as fromage blanc, farmer's cheese, fresh ricotta (drained) or cream cheese
2 large cloves garlic
Juice of 1/2 lemon plus 2 teaspoons zest
1 organic chicken (about 4 pounds, minimum 3 1/2 pounds)
EVOO, for drizzling, or non-aerosol olive oil spray
Kosher salt and coarse black pepper

Steps:

  • For garlic herb cheese: Preheat oven to 375 degrees F.
  • Finely chop herbs. Place soft cheese in small mixing bowl. Combine the soft cheese with herbs, finely grated or pasted garlic and lemon juice and zest (or unwrap store-bought Boursin cheese) and place in a small bowl.
  • For the spatchcock chicken: Work with raw poultry on a clean rubber board.
  • Have a large foil-lined rimmed baking sheet with a wire rack set inside of it near the cutting board you're working on.
  • Clip tips of wings with poultry shears. Place chicken breast-side down and remove the spine of the bird by cutting along either side of it in slow even strokes with shears, then turn the bird over and evenly press down on the breastbone to flatten the bird out.
  • Loosen the skin under the breasts and over the thigh and leg meat and evenly distribute the cheese. Drizzle the skin with EVOO or spray lightly with non-aerosol cooking spray, then season with kosher salt and coarse black pepper.
  • Roast chicken on middle rack for 15 minutes, then reduce heat to 350 degrees F and roast 40 to 45 minutes more to an internal temperature of 160 to 165 degrees F.
