4 teaspoons ground sumac, soaked in 4 teaspoons warm water for 15 minutes
3 tablespoons (or more) fresh lemon juice
2 tablespoons (or more) pomegranate molasses
2 small garlic cloves, minced
2 teaspoons (or more) white wine vinegar
1/2 teaspoon dried mint
3/4 cup extra-virgin olive oil
Kosher salt
Salad:
2 8"-diameter pita breads, halved, toasted until golden brown, broken into bite-size pieces
1/4 cup extra-virgin olive oil
Kosher salt
3 medium ripe tomatoes, chopped, or 4 cups cherry tomatoes, halved
1 pound Persian cucumbers, or one 1-pound English hothouse cucumber, quartered lengthwise, thinly sliced crosswise
6 scallions, thinly sliced
2 Little Gem or baby romaine lettuces, or 1 small head romaine lettuce, trimmed, cut crosswise into 3/4" strips
2 cups (loosely packed) flat-leaf parsley leaves
2 cups purslane leaves or additional 3/4"-strips romaine lettuce
1 cup fresh mint leaves
Ground sumac (optional)
Ingredient info: Sumac, a tart, citrusy spice, is available at specialty foods stores and Middle Eastern markets. Pomegranate molasses can be found at some supermarkets and at Middle Eastern markets. Both are sold at kalustyans.com.

Steps:

  • For dressing:
  • Combine sumac with soaking liquid, 3 tablespoons lemon juice, 2 tablespoons pomegranate molasses, garlic, 2 teaspoons vinegar, and dried mint in a small bowl. Gradually add oil, whisking constantly, until well blended. Season with salt; add more lemon juice, pomegranate molasses, and vinegar to taste, if desired.
  • For salad:
  • Place pita pieces in a medium bowl; pour oil over and toss to coat. Season pita to taste with salt.
  • Mix tomatoes and next 6 ingredients in a large bowl. Add 3/4 of dressing; toss to coat, adding more dressing by tablespoonfuls as needed. Season with salt. Add pita; toss once. Sprinkle sumac over, if desired.

AUTHENTIC LEBANESE FATTOUSH



Authentic Lebanese Fattoush image

Fattoush is a Lebanese salad, good for hot weather. This recipe uses two unusual ingredients: sumac and purslane. Sumac, usually sold ground, is ground red berries and used in Middle Eastern, particularly Lebanese, cooking. Purslane is succulent with a lemony flavor, and makes a nice salad green. I find them at farmer's markets.

½ cup water
1 teaspoon cornstarch
⅓ cup lemon juice
2 cloves garlic, minced
2 teaspoons sumac powder
salt to taste
ground black pepper to taste
1 head romaine lettuce, torn into bite-size pieces
1 medium cucumber, diced
2 large tomatoes, diced
4 green onions, chopped
¼ cup chopped fresh flat-leaf parsley
¼ cup chopped fresh mint
1 green bell pepper, seeded and chopped
1 cup chopped purslane
½ (5 ounce) package arugula
4 pita rounds, toasted and torn into pieces

Steps:

  • Mix the water and cornstarch in a small saucepan over medium-high heat until thickened. Remove from heat, and mix in lemon juice, garlic, sumac, salt, and pepper. Refrigerate until ready to use.
  • In a large bowl, toss together the lettuce, cucumber, tomatoes, green onions, parsley, mint, bell pepper, purslane, and arugula. Toss with the dressing, and serve with pita.

2 tomatoes , chopped into chunks
¼ cucumber , deseeded and sliced
½ red onion , sliced
1 small head romaine lettuce , shredded
handful mint leaves, roughly chopped
handful parsley leaves, roughly chopped
2 pitta breads
1 tsp sumac
½ garlic clove , crushed
2 tbsp red wine vinegar
1 tbsp extra virgin olive oil
juice ½ lemon

Steps:

  • The night before, toss together all the salad ingredients except for the pitta bread and sumac. Make up the dressing and season to taste. Leave these separate until the morning.
  • The next morning, toast the pitta breads until lightly golden. When cool, tear into pieces and combine with the salad and dressing. Spoon into 2 plastic boxes and sprinkle over the sumac.

2 large cloves garlic, crushed
12 sprigs parsley, minced
12 mint leaves, minced
¼ cup olive oil
¼ cup pomegranate seeds

2 (6 inch) pita bread rounds
2 cups vegetable oil for frying

Steps:

  • Toss together the lettuce, cabbage, radish, cucumber, red bell pepper, carrot, corn, tomato, onion, garlic, parsley, mint, olive oil, pomegranate seeds, and pomegranate syrup in a large bowl.
  • Heat oil in a deep-fryer or saucepan to 350 degrees F (175 degrees C). Fry the pita breads until golden in color. Remove to cool on paper towels. Crush the bread into small pieces; sprinkle over the salad.

1/3 cup olive oil
2 flour tortillas
3 lamb fillets
1 butter lettuce, leaves separated and chopped
3 ripe tomatoes, chopped
400 g cannellini beans, rinsed
1 tablespoon capers, drained and chopped
1/2 cup flat leaf parsley, chopped
1/4 cup dill, chopped
1 tablespoon coarse grain mustard
2 tablespoons sherry wine vinegar

Steps:

  • Heat half the oil in a large frying pan over a moderate heat. Cook tortillas, in batches for 30 seconds each side or until golden. Transfer to a plate.
  • Reheat pan; add lamb. Cook for 2 -3 minutes each side for medium rare or until cooked to your liking. Transfer to a heatproof plate. Cover with foil. rest for 5 minutes. Slice.
  • Combine lettuce, tomato, beans, capers, parsley and dill in a large bowl. Chop tortillas and add to salad with lamb.
  • Whisk mustard, vinegar and remaining oil in a jug; add to salad. Toss to combine.
  • Serve at once.

500 g lean ground lamb
1/2 small yellow onions (Australian) or 1/2 small yellow onion, grated (American)
2 garlic cloves, crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
olive oil flavored cooking spray
2 pita breads, split in half
1 cup flat leaf parsley, chopped
1 cup mint leaf, chopped
1 lebanese cucumber, chopped
1 green pepper, chopped
2 tomatoes, chopped
3 green onions, sliced
2 teaspoons extra virgin olive oil
1/2 lemon, juice of
1/2 teaspoon sumaq, spice

Steps:

  • Place the lamb mince (ground lamb), onion, garlic, cumin and coriander in a bowl in a bowl. Using your hands, mix until well-combined; then divide the mixture into 8 portions, and roll into 12-cm long sausages (just under 5 inches).
  • Heat a non-stick pan over a medium heat, spray the lamb kofta with oil; and cook, turning occasionally, for 8 minutes or until they are browned and cooked through.
  • Meanwhile, pre-heat the grill on a high heat, grill the pita bread on both sides until toasted and crisp, allow to cool and break into large pieces.
  • Combine the parsley, mint, cucumber, capsicum, tomato and green onion in a large bowl; drizzle with oil and 1 tablespoon of lemon juice, sprinkle with sumac, season with salt and pepper, add the pita bread and toss gently to combine; and serve with the lamb kofta.
