LAMB GINGER POT STICKERS WITH A PONZU DIPPING SAUCE

1/4 cup soy sauce
1/4 cup ponzu vinegar
1 tablespoon black vinegar
1 teaspoon sambal
1 1/2 tablespoons brown sugar
Vegetable oil, for frying
8 ounces ground lamb
1 1/2 tablespoons ginger, minced
1 bunch scallions, small-diced
Kosher salt and freshly cracked black pepper
20 wonton wrappers

Steps:

  • For the dipping sauce: In a small bowl, whisk together the soy sauce, ponzu vinegar, black vinegar, sambal and brown sugar until the sugar is dissolved, about 1 minute.
  • For the pot stickers: Fill a large, deep skillet just under halfway with oil and heat to 350 degrees F.
  • In a large bowl, mix together the lamb, ginger, scallions and 2 teaspoons each salt and pepper. Fill each wonton wrapper with 1 tablespoon of the filling. Moisten an index finger in water and run it around the perimeter of each wrapper. Fold the wrappers corner to corner into triangles, press out the excess air from the center and then pinch the sides together.
  • In batches of five, fry the pot stickers for 2 to 3 minutes, turning halfway through cooking, until golden and cooked through. Remove with a slotted spoon and drain on paper towels. Serve hot with the dipping sauce.

1 cup mirin
1 1/2 cups lime juice
8 tablespoons sesame seeds, toasted
3 tablespoons ginger, peeled, grated
3/4 cup daikon, grated
2 cups water
White wash
1 ounce cornstarch
2 1/2 ounces cold water

Steps:

  • Combine all ingredients and bring to a boil. Thicken with white wash. Serve.

These are fabulous! I love the ones at TGIF's and these are even better! They are so easy to make! We just love them! Great appetizer to make ahead for a party. Just heat them slighty in a microwave before serving and use a fondue pot to keep the dipping sauce warm on your table. Everyone will gobble them up them!

1 lb ground pork
2 chopped green onions
1 tablespoon soy sauce
2 teaspoons rice wine vinegar
1 teaspoon sesame oil
1/2 clove crushed garlic
1 egg
1 tablespoon cornstarch
1 pinch salt (be careful the soy sauce is already quite salty)
1/4 teaspoon pepper
2 (10 ounce) packages wonton wrappers
8 ounces soy sauce
1/2 teaspoon freshly grated ginger
2 tablespoons rice vinegar
1 chopped green onion (just the green part)

Steps:

  • Mix all ingredients together, by hand, in a large bowl.
  • Fill wonton wrappers with approximately 1-1 1/2 teaspoons filling.
  • Fold Wonton over the filling making a half moon shape Press edges and moisten with a little water for better adhering.
  • Saute in Peanut oil on medium heat till bottoms are golden.
  • Add enough chicken broth to barely cover wontons.
  • Cover and simmer approximately 8 minutes.
  • Serve immediately with some dipping sauce.
  • I have given you measurements but I usually just wing it like this: 2 parts soy sauce, 1 part rice vinegar, a little grated ginger and some chopped green onion.

1 1/2 tablespoons soy sauce
1 tablespoon seasoned rice vinegar
1 tablespoon chili-garlic sauce
1 teaspoon hot chili oil
1/4 lb ground pork
2 ounces uncooked shrimp, shelled, deveined, and finely chopped
1 egg white
1/4 cup minced water chestnut
2 tablespoons minced Chinese celery
1 teaspoon minced cilantro leaf
1/2 teaspoon minced ginger
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon sesame oil
1 dash white pepper
24 dumpling wrappers (potsticker)
3 tablespoons cooking oil
1/2-2/3 cup chicken broth or 1/2-2/3 cup water

Steps:

  • To make the sauce: In a medium bowl, combine the soy sauce, vinegar, chili-garlic sauce and hot chili oil. Mix well and reserve.
  • To make the filling: In a large bowl, combine, the pork, shrimp, egg white, water chestnuts, celery, cilantro, ginger, sugar, salt and sesame oil. Season with a little pepper and mix, stirring rapidly in 1 direction until the mixture is well combined and spongy.
  • To make the potstickers: Working in batches, lay 4 potsticker wrappers on a clean surface. Keep the remaining wrappers covered with plastic wrap to prevent drying. Put a heaping teaspoon of filling in the center of each of the 4 wrappers. Brush the edges with water. Fold the wrappers in half over the filling, pinching the edges together to form semi-circles. Put the potstickers on a baking sheet seam-side up and cover with a clean towel. Repeat until all the potstickers have been formed.
  • To cook the potstickers: Heat a large skillet over medium. Add about 1 1/2 tablespoons of oil. When the oil is hot add half the potstickers, seam-side up. Cook the potstckers until the bottoms are golden and crisp, about 4 minutes. Add 1/3 cup broth. Reduce the heat to low, cover, and cook until the liquid is absorbed, 5 to 6 minutes. Transfer the cooked potstickers to a platter. Repeat, cooking the remaining potstickers.
  • Serve the potstickers warm accompanied by the dipping sauce.

½ teaspoon thinly sliced green onion
⅛ teaspoon toasted sesame seeds

Steps:

  • Combine soy sauce, rice vinegar, ginger, garlic, sugar, sesame oil, gochujang, green onion, and sesame seeds in a Mason jar with a lid. Shake until sugar has dissolved.
