MUSHROOM LASAGNA



Mushroom Lasagna image

This lasagna tastes very rich, even though it really isn't. It combines an olive oil béchamel with a simple mushroom ragout and Parmesan cheese. I prefer no-boil lasagna noodles because they're lighter than regular lasagna noodles. But I still boil them because I think the results are better if they're cooked until they're flexible (a couple of minutes) first.

1 ounce about 1 cup dried porcini or shiitake mushrooms
1 tablespoon extra virgin olive oil
2 shallots or 1 small onion, finely chopped
2 to 3 garlic cloves, minced
1 pound cremini mushrooms, sliced
Salt
1/2 cup fruity red wine, such as a Côtes du Rhône or Syrah
1 teaspoon fresh thyme leaves
Freshly ground pepper
2 tablespoons extra virgin olive oil
2 tablespoons minced shallot or onion
2 tablespoons sifted all-purpose flour
2 cups milk (may use low-fat milk)
Salt
freshly ground pepper
1/2 pound no-boil lasagna noodles
4 ounces Parmesan cheese, grated 1 cup
A few leaves of fresh sage (optional)

Steps:

  • Place the dried mushrooms in a glass measuring cup and pour 2 cups boiling water over them. Let soak 30 minutes, while you prepare the other ingredients. Place a strainer over a bowl, line it with cheesecloth or paper towels, and drain the mushrooms. Squeeze the mushrooms over the strainer to extract all the flavorful juices. If using shiitakes, cut away and discard the stems. Then rinse the mushrooms, away from the bowl with the soaking liquid, until they are free of sand. Squeeze dry and set aside. Chop coarsely. Measure out 1 1/2 cups of the soaking liquid and set aside.
  • Heat 1 tablespoon olive oil in a large, heavy skillet over medium heat and add the shallots or onion. Cook, stirring often, until tender, 3 to 5 minutes. Add the garlic, stir together for about 30 seconds, then add the fresh and reconstituted mushrooms and salt to taste. Cook, stirring often, until the mushrooms begin to soften and to sweat, about 5 minutes. Add the wine and turn the heat to high. Cook, stirring, until the liquid boils down and glazes the mushrooms, 5 to 10 minutes. Add thyme and stir in the mushroom soaking liquid. Bring to a simmer, add salt, and cook over medium-high heat, stirring often, until the mushrooms are thoroughly tender and fragrant and the surrounding broth has reduced by a little more than half, about 10 to 15 minutes. Remove from the heat, stir in some freshly ground pepper, taste and adjust salt.
  • Meanwhile, make the béchamel. Heat the oil over medium heat in a heavy saucepan. Add the shallot or onion and cook, stirring, until softened, about 3 minutes. Stir in the flour and cook, stirring, for about 3 minutes, until smooth and bubbling, but not browned. It should have the texture of wet sand. Whisk in the milk all at once and bring to a simmer, whisking all the while, until the mixture begins to thicken. Turn the heat to very low and simmer, stirring often with a whisk and scraping the bottom and edges of the pan with a rubber spatula, for 10 to 15 minutes, until the sauce is thick and has lost its raw-flour taste. Season with salt and pepper. Strain while hot into the pan with the mushrooms.
  • Assemble the lasagna. Heat the oven to 350 degrees Fahrenheit. Oil or butter a 2-quart rectangular baking dish. Bring a large pot of water to a boil, salt generously and add 3 or 4 lasagna noodles, just the number you need for one layer. Cook only until flexible, and using tongs or a skimmer, remove from the pan and set on a kitchen towel to drain. Spoon a thin layer of béchamel and mushrooms over the bottom of the dish. Top with a layer of noodles. Spread a ladleful of the mushroom/béchamel mixture over the noodles and top with a layer of Parmesan. Cook the next layer of noodles and continue to repeat the layers (I get three layers in my pan), ending with a layer of the mushroom/béchamel mixture topped with Parmesan. Cover with foil and place in the oven. Bake 30 minutes. Remove the foil, and if you want the edges of the noodles crispy and the top lightly browned, continue to bake uncovered for another 5 to 10 minutes. Serve hot or warm.

I was watching "Inedible to Incredible" with my daughter and they made this lasagna - something like it anyway. The recipe on their website is missing items from the ingredients list and VERY heavy in prep. So I simplified and altered it heavily. My family loved it! Hard to believe lasagna can be this good and not loaded with cheese!

1 lb ground meat (I used venison)
1 (26 ounce) jar spaghetti sauce
1/2-3/4 cup white wine
8 ounces no-boil lasagna noodles or 8 ounces dry lasagna noodles
1/2 cup parmesan cheese
6 tablespoons butter
6 tablespoons flour
3 cups milk
1/2 teaspoon salt
black pepper, to taste
1 pinch nutmeg

Steps:

  • Meat Sauce: Brown ground meat until no longer pink. Drain off fat, if any, and add the white wine. Cook, stirring bits up from the bottom, until the wine has evaporated. Add spaghetti sauce, bring to a simmer, move to back burner, turn heat to lowest setting, cover.
  • Bechamel Sauce: In large saucepan, melt butter over medium heat. Whisk flour into butter and allow to cook for 2 minutes. Slowly add milk, continuing to whisk until the mixture is smooth and begins to thicken. Add salt, pepper and nutmeg, reduce heat to lowest setting, cover.
  • Preheat oven to 400 degrees. Bring water to a boil and prepare dry noodles according to package directions. If using no-boil noodles, take boiling water off heat, add noodles, cover and let sit for 5 minutes before assembling lasagna. I left the no-boil noodles in the hot water during assembly, using tongs to grab, drain and layer noodles as I went.
  • Assembly: Use 8x8, 7x11 or similar sized pan. Line bottom of pan with noodles, add about 1/2 cup of meat sauce, then layer about 1/2 cup of bechamel sauce on top. Repeat these layers until all the sauces are used up. Sprinkle the top layer of bechamel with parmesan cheese. Don't fret if there are leftover noodles.
  • Bake 40 - 50 minutes or until cheese is golden brown.

1.25 lbs ground turkey (dark)
2 mild & 2 hot turkey Italian sausages
2 large cans (32 oz) tomatoes (I used San Marzetto)
2 - 3 shallots diced pretty finely
3 - 4 minced or pressed garlic cloves
mushrooms chopped (as much as you like, I use crimini mushrooms, about 8 - 10 mushrooms)
1/2 cup or so of red wine
2 bay leaves
1 - 2 T. each chopped fresh thyme and chopped oregano
crushed red pepper to taste
salt & pepper
Other Layers:
about 12 oz. fresh ricotta
freshly grated parmesan (I didn't measure how much I used, but estimate about 1 to 1.5 cups)
2 T. flour
3 T. butter
2 cups milk, warmed
~2 cups sliced mushrooms
2 shallots, finely diced
dry vermouth
grated mozzarella cheese
lasagna pasta sheets (I buy them fresh from my local pasta shop)
dried oregano to top

Steps:

  • heat about 3 T. olive oil in large, heavy pan add mushrooms, allow to sear a bit before stirring add shallots add garlic and season w/ a little salt and pepper stir until cooked through add turkey & sausage cook thoroughly add red wine, deglaze , let simmer on high for a couple of minutes, add tomatoes, bay leaves, herbs and red pepper let come to high simmer, stirring frequently turn down to low, cover and simmer for at least an hour (longer is better) Sauce can be made ahead and refrigerated, and reheated prior to building the lasagna. 5 tablespoons unsalted butter, plus 2 tablespoons for the lasagna
1/2 cup all-purpose flour
4 cups whole milk at room temperature
Pinch freshly grated nutmeg
1 1/2 cups tomato sauce, recipe follows
Salt and white pepper
1/4 cup extra-virgin olive oil
1 pound ground chuck beef
Salt and pepper
1 1/2 pounds ricotta cheese
3 large eggs
1 pound lasagna sheets, cooked al dente
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
3 cups shredded mozzarella
1/4 cup freshly grated Parmesan
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Preheat oven to 375 degrees F.
  • Bechamel sauce:
  • In a 2-quart pot, melt 5 tablespoons of butter over medium heat. When butter has completely melted, add the flour and whisk until smooth, about 2 minutes. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to simmer and whisk over medium heat until the sauce is thick, smooth and creamy, about 10 minutes. The sauce should be thick enough to coat the back of wooden spoon. Remove from heat and add the nutmeg and tomato sauce. Stir until well combined and check for seasoning. Set aside and allow to cool completely.
  • In a saute pan, heat extra-virgin olive oil. When almost smoking, add the ground beef and season with salt and pepper. Brown meat, breaking any large lumps, until it is no longer pink. Remove from heat and drain any excess fat. Set aside and allow to cool completely.
  • In a medium sized bowl, thoroughly mix the ricotta and eggs. Season with salt and pepper. Set aside.
  • Into the bottom of a 13 by 9-inch baking dish, spread 1/3 of the bechamel sauce. Arrange the pasta sheets side by side, covering the bottom of the baking dish. Evenly spread a layer of all the ricotta mixture and then a layer of all the spinach. Arrange another layer of pasta sheets and spread all the ground beef on top. Sprinkle 1/2 the mozzarella cheese on top of the beef. Spread another 1/3 of the bechamel sauce. Arrange the final layer of pasta sheets and top with remaining bechamel, mozzarella and Parmesan cheeses. Cut the remaining 2 tablespoons of butter into 1/4-inch cubes and top lasagna.
  • Line a large baking sheet with aluminum foil. Place lasagna dish on top, cover and put on the middle rack of the oven and bake until top is bubbling, about 30 minutes. Remove cover and continue to bake for about 15 minutes.
  • In a large casserole pot or Dutch over, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

½ pound bulk mild Italian sausage
3 tablespoons butter

2 (24 ounce) jars marinara sauce, divided
1 (9 ounce) package no-boil lasagna noodles, divided

½ cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Place the sausage in a skillet over medium heat and cook until browned and crumbly, about 10 minutes. Drain the sausage and set aside.
  • To make bechamel sauce, melt the butter in a saucepan over medium heat and whisk in the flour. Allow the flour and butter to cook until light and foamy, about 2 minutes, whisking constantly; whisk in milk, a little at a time. Whisk in the salt and nutmeg and bring the sauce to a bare simmer, whisking constantly until thickened, about 10 minutes. Remove sauce from the heat and set aside.
  • In a bowl, beat the egg and stir in the ricotta cheese and parsley until thoroughly combined.
  • To assemble lasagna, pour about 1 1/2 cup of marinara sauce into the bottom of the prepared baking dish and top the sauce with 4 lasagna noodles, overlapping if necessary. On the noodles, layer 1/3 of the ricotta mixture, followed by 1/3 of the cooked sausage, 1/3 cup of mushrooms, 1/4 of the bechamel sauce, 1 cup of the mozzarella cheese, 1/8 cup of the Parmesan cheese and 1 more cup of marinara sauce. Repeat the layers twice more, ending with a final layer of noodles topped with a layer of marinara sauce, bechamel sauce, the remaining mozzarella cheese, and remaining Parmesan cheese. Cover the dish with foil.
  • Bake in the preheated oven until bubbly and the noodles are tender, about 1 hour. Remove foil and bake until the top cheese layer is browned, about 5 more minutes. Allow the lasagna to stand for 10 minutes before cutting.

3/4 c. red wine (plus two glasses, set aside ... you deserve it)
1 tsp. sugar
2 tsp. dried oregano
kosher salt, to taste

Ingredients (Béchamel Sauce)
1 small onion
6 cloves
2 bay leaves
3 tbsp. butter
4 heaped tbsp. flour
1 qt. whole milk
1/8 tsp. nutmeg, freshly grated
kosher salt, to taste

Other Ingredients
8 oz. grated Parmesan cheese
1 box of No-Boil lasagna noodles
Fresh mozzarella (optional)
Fresh basil (optional)

Steps:

  • 1. Melt 2 tbsp. butter in a saucepan and sauté sliced mushrooms with salt and pepper. Set aside. 2. In a separate pot, sauté one chopped onion and chopped garlic in olive oil until soft. Set aside. 3. In separate pan, brown ground beef, breaking it up as it cooks. 4. Add the beef and mushrooms to the onion and garlic mixture and stir in spaghetti sauce, red wine, oregano, sugar and salt and pepper, to taste. Set aside. 5. Press cloves into an onion and put in a microwave safe bowl with half and half, bay leaves and nutmeg. 6. Cook in microwave on low heat until hot. Strain. 7. Cook flour and butter for a few minutes to make a roux. Be sure to cook it through all the way to ensure there is no floury taste. 8. Once cooked through, whisk in the infused milk and season with salt and pepper to taste. Preheat oven to 350°. 9. In lasagna pan, layer meat sauce, white sauce, mozzarella and Parmesan cheese and noodles. Optional: add basil to taste. 10. Repeat three times and cover with leftover meat sauce and Parmesan cheese. 11. Cover the pan with foil and bake for 45 minutes, removing foil for the last 15.

I use this in lasagna. It has Parmesan added to it, so I suppose it is really a Mornay sauce, but most lasagna recipes call for Béchamel, so that's what I'm calling it so it will be easier to look up.

Steps:

  • In a saucepan, melt the butter over medium-low heat. Whisk in the flout and cook over medium-low heat until the mixture is creamy and no longer smells floury.
  • Whisk in the milk and the nutmeg, stirring well to combine. Raise heat to medium.
  • Whisk constantly as the sauce returns to a boil and simmer until the sauce thickens sufficiently to coat the back of a spoon.
  • Reduce the heat to low, and add the grated Parmesan. Stir until the cheese has melted and is incorporated into the sauce.
