BEST BARBECUE WINGS
My husband always calls this recipe "finger-licking good," and these BBQ wings really are to die for! The sauce is also great on chicken breasts. -Linda Gardner, Richmond, Virginia

- For barbecue sauce, in large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the ketchup, vinegar, brown sugar, Worcestershire sauce, chili powder, cayenne and cumin. Simmer, uncovered, for 8-10 minutes, stirring often. Remove from the heat; stir in pepper sauce. Set aside 2/3 cup for serving., In a large resealable plastic bag, combine the vinegar, olive oil, salt and pepper; add chicken wings in batches and turn to coat., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill wings, covered, over medium heat or broil 4 in. from the heat for 12-16 minutes, turning occasionally. Brush with some of the barbecue sauce. , Grill, uncovered, 8-10 minutes longer or until juices run clear, basting and turning several times. Serve with reserved barbecue sauce.

BROILED CHICKEN WINGS
This recipe comes from a book that claims this was an original recipe from Buffalo, NY. Beats me. I know this is quick, simple and has less clean up effort than frying. A local restaurant prepares them this way also.

Steps:
- Preheat Broiler.
- Line bottom of broiler pan with foil (for easy clean up). Add a small amount of water, about 1/4 cup. (optional).
- Spray top part of broiler pan with Vegetable Spray Oil (Pam).
- Arrange chicken wing segments, top side down, on broiler pan.
- Place rack on top setting directly under heating element in oven (I have an electric oven).
- Broil for 10 or 11 minutes, flip over and broil for another 10 or 11 minutes.
- While wings are broiling make sauce.
- Place butter, vinegar, and hot sauce in a large plastic container with a sealable lid (Tupperware).
- Microwave until butter is melted.
- Place cooked, hot, wings into container with melted butter, etc.
- Shake once or twice. Open lid to let steam escape or it'll just pop off and then you will have a mess on your hands. Repeat until wings are evenly coated.
- Serve with cut up carrot sticks and celery sticks, with Blue Cheese or Ranch Dressing for dipping.
- Best served with lots of beer, but then, what isn't?

- Pat wings very dry with paper towels. Toss wings, oil, 1 tsp. salt, and 1/2 tsp. pepper in a large bowl to coat.
- Melt butter in a small pot over medium-high heat. Remove from heat, stir in hot sauce, and set aside in a warm place.
- Prepare a grill for two zones, medium and medium-high, or heat a grill pan over medium. Working in batches if necessary, grill wings over medium heat, turning occasionally, until skin is starting to brown and fat is rendering, about 12 minutes. Move wings to medium-high zone of grill or increase heat under grill pan to medium-high. Cook wings, moving to a cooler section of grill or reducing heat if they start to burn, and brushing with about 1/4 cup hot sauce mixture during last minute of cooking, until cooked through, an instant-read thermometer inserted into the flesh but not touching the bone registers 165°F, and skin is crisp and lightly charred, 5-10 minutes.
- Pour remaining sauce into a large bowl, add grilled wings, and toss to coat. Season with salt and pepper and serve immediately.
BROILED HOT PEPPER WINGS

- Preheat the broiler. Line a sheet pan with foil, place a rack on top of the pan and oil the rack.
- Toss the wings with the 2 tablespoons oil and sprinkle with salt and pepper. Spread the wings on the rack in 1 layer. Broil 4 to 5 inches from the heat, turning over once, until barely cooked through, 15 to 20 minutes.
- In a small saucepan over moderate heat, whisk the hot pepper jelly, lime juice and hot sauce until smooth. Bring to a boil, reduce the heat and let simmer 1 to 2 minutes. Brush 1/4 cup sauce on the cooked wings and broil 1 to 2 minutes. Brush the wings with 1/4 cup sauce again, and then turn the wings over and brush with another 1/4 cup sauce. Broil until crispy about, 2 to 3 minutes. Brush with the remaining sauce before serving.
SIMPLE GRILLED HOT WINGS
Very simple hot, hot wings for grilling. Marinate your chicken in a simple hot sauce and grill up while basting those spicy wings with more of that sauce so that none goes to waste!

- Place wings in large pot in one layer so that wings are just touching. Pour in beer and enough water to cover the wings.
- Bring to a boil.
- Reduce heat to Medium-High. Let cook so that there is no visible pink, turning frequently, about 20 minutes.
- Transfer wings to plate, cover, and set aside.
- Pre-heat broiler on High.
- In a container with lid, combine BBQ and wing sauce.
- Lightly brush wings with 1/4 cup of sauce.
- Broil on High for 8 minutes, turning half way through.
- Place wings in lidded container with remaining sauce shake to coat thoroughly. Serve hot with your choice of garnish.
- Ms Ines recommends pineapple slices (grilled is best) and plantain chips.
- Tips: For hotter wings, add a 1/8 cup more of wing sauce. Also, you can boil the wings ahead of time and keep refrigerated or frozen and begin at Step 5 with thawed wings for spur of the moment entertaining.
