CAESAR SALAD WITH SHRIMP

Steps:
- For the garlicky croutons: Preheat the oven to 250 degrees F.
- Spread out the bread cubes in a single layer on a baking sheet. Drizzle with the garlic oil and sprinkle with salt and pepper. Bake, tossing the croutons once halfway through, until crisp, about 25 minutes. Set aside and cool completely.
- For the Caesar dressing: Put the garlic oil in a blender. Add the anchovies, mustard, vinegar, Worcestershire sauce, lemon juice, salt and pepper. Blend until smooth. Add the Parmesan and give it a quick blitz. (You want to retain some of the texture of the cheese.)
- For the salad: Peel and pit the avocados, then slice lengthwise into spears and sprinkle with some lemon juice to prevent browning. Set aside.
- Arrange the romaine in a line on a platter with the inside of each quarter-head of lettuce facing upward. Drizzle the dressing over the lettuce, allowing it to seep into the layers of leaves. Arrange the shrimp on top, along with the croutons. Scatter the cheese shavings and parsley leaves over the top. Squeeze the lemon half over the whole platter and serve.
MEXICAN CAESAR SALAD WITH SHRIMP

- Toast the pepitas in a medium dry skillet over medium-high heat, stirring occasionally, 3 minutes. Transfer to a small bowl; set aside.
- Heat 1/4 inch of vegetable oil in the skillet over medium-high heat. Working in batches, add the tortilla strips and fry, turning as needed, until golden, about 2 minutes. Transfer to a paper towel¿lined plate; season with salt and pepper. Let cool, then break each strip in half.
- Make the dressing: Combine the crema, Cotija cheese, 1/4 cup cilantro, 3 tablespoons vegetable oil, the lime juice and garlic in a food processor; pulse until smooth, adding 1 to 2 tablespoons water if needed to loosen. Season with salt and pepper.
- Transfer the dressing to a large bowl; add the romaine, pickled jalapenos, pepitas, shrimp, the remaining 1/4 cup cilantro and half of the tortilla strips. Season with salt and pepper and toss to coat. Top each serving of salad with the remaining tortilla strips and more cheese.
CLASSIC CANADIAN CAESAR
This drink is very popular in Canada. Take a lick of the celery salt and then a drink of the Caesar through the straw for the proper Caesar experience.

- Wet the rim of a cocktail glass with the lime wedge; set aside for garnish. Place celery salt in a small dish, and press the rim of the glass into the salt to coat. Add ice to the glass.
- Pour vodka, Worcestershire sauce, and hot pepper sauce over the ice; top with tomato-clam juice. Garnish with lime wedge and celery stick. Serve with a straw.

I love a good cesear salald. Especially if its got another of my favorite ingredients in it, shrimp! I stumbled across this recipe and tweaked it to my own likings. If you don't want to use shrimp, you can use cubed chicken breast or sliced roast beef instead.

Steps:
- Preheat the oven to 325*F.
- Toss the bread cubes with 1 tablespoon oil, spread on a large cookie sheet and bake for 15 minutes until crispy.
- remove and let cool.
- In a blender combine lemon juice, garlic, parmesan, anchovy paste, mustad, 1/2 tsp salt, and 1/4 tsp of pepper and blend.
- While the blender is running, slowly pour in the rest of the oil.
- In a pan, lightly coated with olive oil saute the shrimp with salt and pepper until pink.
- In a large salad bowl combine chopped lettuce, tomatoes, croutons and shrimp.
- Toss with dressing to coat.
- Serve garnished with leftover parmesan cheese.

LATIN CAESAR WITH SHRIMP
The plantain chips really make this recipe. You can find them in some grocery stores or Latin markets. If you can't find them, substitute your favorite crouton. Aji amarillo is a yellow Peruvian pepper that you can find in cans in Latin markets. *This site didn't recognize the name as an ingredient - so in the ingredient list I had to write yellow pepper* Just a little bit of this chile gives the salad dressing a nice zing. If you can't find aji amarillo, the salad will still taste great.

- Put the mayo and 1 clove of garlic into a food processor or blender and process until smooth. While the processor is still running, add the vinegar, mustard, Worcestershire sauce, anchovy paste, aji amarillo and cilantro, then process until well blended. Transfer the dressing into a small bowl and cover with plastic wrap. Refrigerate until you're ready to serve.
- Heat the olive oil in a skillet over medium-high heat. Add the shrimp and cook, stirring, utnil they are almost completely cooked, curled and opaque - about 2-3 minutes. Add the remaining garlic and cook, stirring often, until the shrimp are completely opaque and cooked through and the garlic is fragrant - about another 1-2 minutes. Turn off the heat, sprinkle with some salt and pepper, and set aside to cool slightly (so the shrimp won't wilt the greens).
- Place the lettuce in a large bowl. Add the dressing, toss to coat, and divide the greens among your plates. Sprinkle each serving with some plantain chips, olives and cheese. Top with the shrimp and serve immediately!

- Heat the oven to 325°. Toss the bread cubes with 1 tablespoon of the oil and spread on a large baking sheet. Bake until crisp on the outside and lightly browned, about 15 minutes. Let cool.

With the blender running, slowly add the 3/4 cup oil. Alternatively, whisk together everything but the oil and then add the oil slowly, still whisking.
- Heat the broiler. In a broiler pan or on a baking sheet, toss the shrimp with the remaining 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Broil the shrimp, turning once, until just done, about 4 minutes in all.
- In a large bowl, combine the lettuce, tomatoes, croutons, and shrimp. Add the dressing and toss to coat.
