1 medium onion, chopped
3 1/2 cups cooked, shredded chicken OR turkey
1 (14.5 ounce) can diced tomatoes in juice
1 (8 ounce) can tomato sauce
1 (4 ounce) can diced green chiles
1 (1 ounce) package Lawry's® Taco Spices & Seasonings
1/2 teaspoon Lawry's® Seasoned Salt
1/4 teaspoon Lawry's® Garlic Powder With Parsley
12 corn tortillas
2 (2.25 ounce) cans sliced black olives, drained
5 cups shredded Monterey Jack cheese

Steps:

  • In large skillet, heat oil. Add onion and cook over medium-high heat until tender. Add chicken, tomatoes, tomato sauce, chiles, Taco Spices & Seasonings, Seasoned Salt and Garlic Powder With Parsley; mix well. Bring to a boil; reduce heat to low, cover and cook for 15 to 20 minutes. In greased 13x9x2-inch baking dish, place 4 corn tortillas. Pour 1/3 of chicken mixture over tortillas, spreading evenly. Layer with 1/3 of olives and 1/3 of cheese. Repeat layers 2 times ending with cheese. Bake, uncovered, in 350 degrees F oven for 30 to 40 minutes.

Number Of Ingredients 10

1/3 cup plus 1 tablespoon vegetable oil
12 6-inch corn tortillas
1 medium onion, chopped
1 medium-size green bell pepper, seeded, chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
3 10-ounce cans purchased enchilada sauce
3 cups (about) shredded cooked chicken
3 cups packed grated Monterey Jack cheese (about 12 ounces)
Sour cream

Steps:

  • Heat 1/3 cup vegetable oil in heavy small skillet over medium-high heat. Using tongs, add 1 tortilla and cook until softened, turning once, about 15 seconds for each side. Transfer tortilla to paper towels and drain well. Repeat with remaining tortillas.
  • Heat remaining 1 tablespoon vegetable oil in heavy large skillet. Add onion, pepper, oregano and basil and sautee until onion and pepper are tender, about 5 minutes. Season to taste with salt and pepper.
  • Lightly oil 13x9x2-inch glass baking dish. Spoon 1/2 cup enchilada sauce into dish. Place scant 1/4 cup chicken in center of 1 tortilla. Sprinkle with 1 generous tablespoon onion mixture. Set aside 1/2 cup cheese for topping. Spoon 2 generous tablespoons cheese atop chicken. Roll up tortilla and place seam side down in prepared dish. Repeat with remaining tortillas, chicken, onion mixture and cheese. Pour remaining sauce over enchiladas. Sprinkle with reserved 1/2 cup cheese. Cover with foil. (Can be made 1 day ahead. Chill.)
  • Preheat oven to 350°F. Bake enchiladas, covered, until sauce bubbles and cheese melts, about 35 minutes. Serve hot with sour cream.

This recipe is an inexpensive but filling side dish that was served at Lawry's California Center before closing its doors. It's from "Dear S.O.S. Thirty Years of Recipe Requests to the Los Angeles Times". It isn't low cal by any means, but every dieter needs a day off once in a while--and this is a splurge that is worth every bite! Heck, I'll run an extra mile for this!

1 1/4 cups chopped onions
1/3 cup oil
1 (28 ounce) can tomatoes
1 (1 1/2 ounce) package taco seasoning mix
2 tablespoons chile salsa
12 corn tortillas
1 lb monterey jack cheese, shredded
2 cups sour cream
1 teaspoon seasoning salt
seasoned pepper, to taste

Steps:

  • Saute 1/2 cup onion until tender.
  • Add tomatoes, seasoning mix, and chile salsa.
  • Simmer 15 to 20 minutes.
  • Set aside to cool.
  • Fry tortillas lightly in small amount of oil, just until soft.
  • Pour 1/2 cup sauce into bottom of 13x9-inch baking pan.
  • Arrange layer of 4 tortillas over sauce (tortillas can overlap).
  • Top with 1/3 of remaining sauce, 1/3 of remaining onions, and 1/3 of cheese.
  • Repeat layering procedure twice.
  • Combine sour cream and seasoned salt, spread over cheese to edge of pan.
  • Sprinkle lightly with seasoned pepper.
  • Bake at 325 degrees for 25 to 30 minutes.
  • Cut into squares.

CALIFORNIA STYLE ENCHILADAS

I was taught this by a Hispanic person in Los Angeles, I planned to keep it in the family, but I figured what the heck. The method I was taught was rather bland, so I built on to it over the years which includes replacing corn tortillas with flour. Now I live in the southeast, and friends come for miles when they hear this is on the dinner menu. If placed in the fridge, it is even better the next day after the flavors have time to blend together.

2 lbs ground beef
8 medium size flour tortillas
2 cups mexican cheese (If 4 blend is not available, mild cheddar will work)
1 (2 ounce) can Old El Paso green chilies (or other brand)
1 bunch green onion
1/2 onion
1 garlic clove (Minced)
1 teaspoon oregano
1 (8 ounce) can of hunt's chopped tomatoes, sour cream and shredded lettuce (optional for topping)
3 (8 ounce) cans enchilada sauce (Old El Paso Recommended)

Steps:

  • Combine Beef, onions, oregano, garlic, the thick part of the green onion and green chili's into frying pan and cook until beef is browned; Drain but do not rinse. Preheat oven to 350 degrees.
  • Place a thin layer of enchilada sauce into about a 9x13 baking dish, just enough to fill the bottom.
  • Place 1/4 to 1/2 cup of beef mixture into tortilla. Roll as you would a burrito and place into baking dish. Repeat 8 times until baking dish is full.
  • Pour remaining enchilada sauce into baking dish, ensuring no tortilla is visible upon doing so. Dish will be near 2/3 full of sauce, this is okay.
  • Top wraps with any remaining beef mixture, spread evenly.
  • Spread cheese over baking dish, ensure each wrap has been topped with cheese. Its not uncommon to create an entire layer of cheese over top of the wraps.
  • Spread remaining green onions over cheese layer.
  • Bake in oven for about 20 minutes, until sauce is warmed and cheese is melted.
  • Scoop each out onto a plate with a spatula or large spoon, top with sauce from pan if desired.
  • Top with tomatoes, lettuce and sour cream if desired. Best served with refried beans and Zateran's Spanish rice.

Steps:

  • Sprinkle chicken with seasoning blend. In an ovenproof skillet, brown chicken in oil. Top with enchilada sauce, cheese and cilantro. Bake at 350° for 18-20 minutes or until a thermometer reads 170°.
