CHICKEN POT PIE WITH STUFFING CRUST
Easy to make Chicken Pot Pie with Stuffing Crust that the family is sure to love! The best part of this recipe is the stuffing crust that will have everyone coming back for seconds!

Steps:
- Preheat oven to 400F.
- Cook stuffing according to directions & set aside.
- In a large frying pan, cook chicken with 1 tablespoon butter.
- Once the chicken is thoroughly cooked, pour chicken evenly over the bottom of a 13x9 casserole dish.
- In that same frying pan, saute all vegetables with 2 tablespoons butter.
- Once vegetables are done (softened slightly), sprinkle them evenly over the chicken in the casserole dish.
- In a medium saucepan, combine milk, soup & flour. Stir constantly (to prevent burning or lumps) over medium heat until mixture comes to a boil.
- Pour soup mixture over chicken & vegetables then stir well to evenly coat.
- Spread stuffing evenly over the chicken & vegetable mixture.
- Bake for 25 minutes.
- Take out, let cool, then serve your delicious Chicken Pot Pie with stuffing crust.

SPICED CHICKEN POT PIES
Steps:
- For the spice blend: Mix all the ingredients together. Store at room temperature in an airtight jar for up to 3 months.
- For the chicken pot pie: Preheat the oven to 425 degrees F. Heat the oil in a large ovenproof skillet, braiser or pot over medium-high heat. Sprinkle the chicken thighs generously on both sides with salt and pepper and place skin side down in the skillet. Cook until the skin is golden and crisp, about 10 minutes. Then turn the thighs over and transfer the pan to the oven and bake until an internal temperature of 165 degrees F, 10 to 15 more. (Alternatively, you can turn the chicken thighs and on the stove and not for 15 to 18 minutes more, but it might get spitty!.) Transfer the chicken to a plate leaving the fat in the pan. Heat the pan over medium and add the onion, carrot, celery and a pinch of salt and cook, stirring, until softened, 7 to 10 minutes. Add the ginger and hawaij to the vegetable mixture and cook for another minute, add the flour and cook, stirring, for another minute.
- Meanwhile, bring the stock to a simmer in a small saucepan. Gradually add a ladle of the stock into the vegetable mixture and cook, stirring, allowing it to thicken before adding another ladle full. Stir in the dill, parsley and peas and then reduce to low. Pull the chicken off the bones, discard or snack on the skin, chop the chicken into bite-size pieces and add it to the pan. Stir in the heavy cream. Taste and adjust seasoning as desired.
- Ladle into 4 1/2-quart oven proof bowls or cocottes and place them on a rimmed baking sheet, which will make them easier to transfer and will also catch any of the mixture that overflows in the oven.
- On a work surface, roll out the puff pastry sheet so that it's big enough to cut into 4 squares that are about an inch larger than the bowls. Cut into four equal squares and cut two slits in the center (it's easiest to do this while the puff pastry is on the counter versus on top of the pies). Lay the puff pastry on top of the bowls so that it sits comfortably. Brush the tops with egg wash and sprinkle with a pinch of flaky salt and cover liberally with sesame seeds. Bake until the pastry is golden, about 20 minutes. Let cool slightly and serve.

LAZY GIRLS CHICKEN POT PIE WITH DRESSING OPTIONAL
I call this lazy because I used chicken gravy in the jar, purchased pie crust, canned potatoes, and frozen veggies. Even the garlic was from a jar, no chop. I did chop some onion and some celery and that was the extent of effort. The individual casserole dishes that I use are rather deep, they hold 2 1/2 cups. You can put in a layer of leftover dressing in the bottom of the pies if you like, that is yummy too.

- Pre heat oven to 400°
- Dice the canned potatoes, onions and celery. If you use garlic from a jar, no messing with that. If you have to use fresh, peel and mince 1 clove of garlic.
- Heat butter in a large saucier and saute the onion and celery until onion is translucent and celery softened, add the garlic and cook a minute more.
- While that is cooking mix together in a bowl the chicken, potatoes, all veggies, gravy, seasonings.
- Add veggies and chicken to sauteed onion mixture and bring everything to a nice hot bubbly temperature. If you think it is a little thick, thin with some chicken stock.
- Cut pie crust to fit your pie pans, with a little overlapping.
- If you want to use dressing, divide it between the casserole dishes, and pack to compact a little.
- Divide chicken filling evenly between 4 to 6 pie pans, cover with crust, seal edges. Mske 3 slits in the top middle of crust to vent.
- Bake for 30 to 40 minutes or until crust is golden and filling bubbly.
CHICKEN POT PIE (STUFFING TOPPING)

Steps:
- Boil chicken, shred or chunk and reserve 2 cups of chicken stock. We use chicken breast but you can use whatever part you want just make about 2 to 3 cups cooked chicken.
- Mix cream of chicken soup, the chicken stock and add in shredded or chunked chicken.
- Pour into 9 by 13 inch pan.
- Pour drained mixed vegetables over chicken.
- Prepare stuffing as box directions, I leave out the margarine. We also vary by using different flavors of stove top. We mix a chicken flavor and a sage flavor.
- Spread stuffing over top of mix vegetables.
- Bake at 350°F for 35 to 40 minutes. Feeds 6-12 people depending on size of servings.
- Recipe can be half for smaller families, use 1 can mixed veggies, 1 box of stuffing, 1 cup stock and 2 chicken breast or about 1 cup cooked chicken. Smaller pan and will still feed 4 to 6. Depending on size of servings.
