5 medium green, red or yellow peppers
2 teaspoons olive oil
1-1/4 pounds extra-lean ground turkey (99% lean)
1 large onion, chopped
1 garlic clove, minced
2 teaspoons ground cumin
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
2 medium tomatoes, finely chopped
1-3/4 cups shredded cheddar-flavored lactose-free or other cheese
1-1/2 cups soft bread crumbs
1/4 teaspoon paprika

Steps:

  • Preheat oven to 325°. Cut peppers lengthwise in half; remove seeds. Place in a 15x10x1-in. pan coated with cooking spray., In a large skillet, heat oil over medium-high heat. Cook and crumble turkey with onion, garlic and seasonings over medium-high heat until meat is no longer pink, 6-8 minutes. Cool slightly. Stir in tomatoes, cheese and bread crumbs., Fill with turkey mixture. Sprinkle with paprika. Bake, uncovered, until filling is heated through and peppers are tender, 20-25 minutes.

If you like lasagna, you are going to love this. My family loves these Ground Turkey Lasagna Stuffed Peppers, because they are healthy, delicious, and you get to eat the pepper that holds the lasagna.

4 large bell peppers (any colors will work)
1 pound ground turkey
1 onion (diced)
1 jar spaghetti sauce (26 ounces)
1 teaspoon Italian seasoning
1 pinch red pepper flakes
1 cup skim milk ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
2 Tablespoons fresh parsley (chopped)

Steps:

  • Preheat oven to 400 degrees F.
  • Line a baking sheet with aluminum foil.
  • Cut each green bell pepper in half and remove the seeds.
  • Lay the peppers on prepared pan and bake for 20 minutes in preheated oven.
  • In a large skillet, brown ground turkey and diced onion until turkey is no longer pink.
  • Mix in spaghetti sauce, Italian seasoning, and red pepper flakes and let simmer over low heat for 5 minutes.
  • Remove peppers from oven and spread a little bit of ricotta cheese in each pepper.
  • Add a scoop of the prepared meat sauce in each pepper, then top with mozzarella cheese and Parmesan cheese. Sprinkle fresh parsley on top.
  • Bake for an additional 15-20 minutes in the oven or until cheese is melted and bubbly.

I got this from the Livestrong website. A woman named Gymadre created this to help her during her P90x "Fat Shredder" phase. Go Gymadre! She says it's 50% protein, 20% fat, 30% carbs. Haven't tried it yet - but as soon as we move back into our apartment - I'm all over it.

1 1/4 lbs lean ground turkey
1 cup pico de gallo
2 tablespoons extra virgin olive oil
3 tablespoons low sodium soy sauce
1 1/2 teaspoons grill mates Montreal chicken seasoning
4 medium green bell peppers
4 tablespoons taco sauce
3 ounces sliced mushrooms

Steps:

  • Cut off the top of the bell peppers and scoop out seeds.
  • Chop up the pepper tops and sliced mushrooms and add to pico de gallo.
  • Season turkey with Montreal Chicken seasoning, and sautee in skillet with olive oil and soy sauce.
  • Once meat begins to brown add pico de gallo mixture (chopped onions, tomatoes, cilantro and chopped bell pepper).
  • Meanwhile coat the hollow bell peppers with olive oil, place in glass baking dish and roast for 15 minutes at 350℉.
  • Fill roasted peppers with cooked meat and return to oven for 5 minutes.
  • Top each pepper with dabs of taco sauce to taste.
