STUFFED LEG OF LAMB

This is a wonderful way to flavour and enjoy a leg of lamb. Sometimes I cook two the old-fashioned way over fire, and of course you're welcome to do the same if you can, but I've written this recipe for roasting in a standard oven. Get some lovely local lamb from your butcher and get them to bone it, too.

150 grams (5 ounces) stale rustic bread
50 mililliters (scant 1/4 cup) Prosecco
Olive oil
1 lemon
4 cloves of garlic
1 dried red chilli
1 bunch of fresh mint (30 grams [1 ounce])
4 anchovy fillets in oil, from sustainable sources
1 tablespoon baby capers in brine
1 large butterflied leg of lamb, boned but shank bone left in (2.5 kilograms [5.5 pounds])

Steps:

  • Preheat the oven to 200 degrees C (400 degrees F). Tear the bread into rough 2-centimeter (3/4-inch) chunks and place in a food processor, then pour over the Prosecco, drizzle with 1 tablespoon of oil, finely grate in the lemon zest and squeeze in the juice. Season generously with sea salt and black pepper, then leave to soak for 10 minutes. Peel the garlic and roughly chop with the chilli, pick the mint leaves, and add to the processor with the anchovies and capers. Pulse into crumbs, then taste and season to perfection, if needed.
  • Lay the lamb leg on a board, skin side down. Massage all over with a pinch of salt and pepper, then spoon over the stuffing in an even layer. Roll up the leg meat to seal the filling inside, then tie at regular intervals with six lengths of string to make sure the stuffing is secure. Place straight on to the bars of the oven, with a tray underneath to catch the juices. Roast for 1 hour 10 minutes, or until the lamb is golden, yet still blushing and pink in the middle (cook for a further 10 to 15 minutes if you prefer your lamb well done). Rest for 5 minutes, while you simmer the tray of drippings on a medium heat with a little water, stirring to pick up any nice sticky bits. Slice the lamb and spoon over the tray juices. Beautiful served with roast potatoes and seasonal veg--or I love it stuffed into a sandwich.

1 (5 pound) boneless leg of lamb
salt and black pepper to taste
1 (10 ounce) bag fresh spinach leaves
6 ounces goat cheese, or more if needed
2 teaspoons pine nuts
kitchen twine
1 cup all-purpose flour
1 tablespoon salt
1 tablespoon ground black pepper
1 teaspoon dried thyme
1 teaspoon fennel seeds
1 tablespoon sesame oil

Steps:

  • Remove plastic netting or twine from around the leg of lamb, if any, and open up the roast on a cutting board. Place the boned side of the roast up. With a sharp paring knife, cut away any excess fatty areas. Use a sharp knife to cut 1/2-inch deep slits in the meat about 2 inches apart, to help the meat lie flat. Cover the meat with a sturdy piece of plastic wrap or a cut-apart food storage bag, and pound the meat with a mallet or the edge of a small plate until the roast is about 3/4 inch thick everywhere, and 10 to 14 inches square.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Sprinkle the upper side of the meat with salt and pepper, and then spread spinach leaves over the top of the roast to within 1/2 inch of the edges. Break up the goat cheese and sprinkle it evenly over the spinach, then sprinkle the pine nuts over the cheese.
  • Roll the roast up into a tight cylinder, and tie the roast together with kitchen twine at 2 inch intervals. It's okay if a little stuffing protrudes from the sides of the roast.
  • In a flat dish, mix together the flour, 1 tablespoon of salt, 1 tablespoon of pepper, the thyme, and the fennel seeds, and press the tied roast firmly into the flour mixture to coat all sides.
  • Heat the sesame oil in a heavy oven-proof or cast-iron skillet over medium-high heat until the oil shimmers, and sear all sides of the roast, including the ends, to a golden brown color. Lay the roast into the skillet, place into the preheated oven, and roast to your desired degree of doneness, or an internal temperature of 145 degrees F (65 degrees C) for medium, about 40 minutes. Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

This Easter centerpiece looks like a fancy roulade, but it's simply a boneless leg of lamb folded over an aromatic pistachio-scallion stuffing and tied nice and neatly with butcher's twine. This cut is less expensive than a rack and more flavorful-and when roasted with potatoes, it's practically a one-pan meal.

1 bunch scallions, light-and dark-green parts only, cut into 2-inch pieces
1 bunch curly parsley, thick stems removed (2 lightly packed cups), plus more for serving
1 tablespoon finely grated lemon zest (from 2 lemons), plus 2 tablespoons fresh juice
1/2 cup salted roasted pistachios
4 tablespoons extra-virgin olive oil, divided
Kosher salt and freshly ground pepper
2 tablespoons coriander seeds
2 tablespoons cumin seeds
2 tablespoons mustard seeds
3 tablespoons minced garlic (from 1 head)
1 boneless leg of lamb (2 1/2 to 3 pounds)
2 1/2 pounds unpeeled russet or Yukon Gold potatoes, cut into 3/4-inch-thick rounds
1 tablespoon chopped fresh rosemary leaves, plus a few whole sprigs
Flaky sea salt, such as Jacobsen, for serving (optional)

Steps:

  • Combine scallions, parsley, lemon zest, pistachios, and 1 tablespoon oil in the bowl of a food processor; season with kosher salt and pepper. Pulse to a chunky paste.
  • Toast coriander, cumin, and mustard seeds in a small skillet over medium heat until fragrant, 1 to 2 minutes. Transfer to a spice grinder or a mortar and pestle; coarsely grind. Stir together ground spices and garlic.
  • Pound lamb to an even 1-inch thickness and a roughly 8-by-12-inch rectangle. Generously season both sides with kosher salt and pepper, then rub all but 2 tablespoons spice mixture on outside of lamb (side with fat); turn over and spread scallion mixture evenly over other side, leaving a 1/2-inch border.
  • Starting at one long end, fold lamb in half to enclose scallion mixture; secure with twine at approximately 2-inch intervals. Let stand at room temperature at least 30 minutes and up to 2 hours.
  • Preheat oven to 425°F. In a large saucepan, combine potatoes and enough water to cover by at least 1 inch. Bring to a boil; generously season with kosher salt. Boil until potatoes are easily pierced with the tip of a knife but still firm, 5 to 7 minutes. Drain; let cool until no longer steaming, about 10 minutes.
  • Transfer potatoes to a roasting pan. Toss with remaining 3 tablespoons oil and 2 tablespoons spice mixture, and chopped rosemary; season and spread in a single layer. Place lamb on top; scatter rosemary sprigs in pan.
  • Roast 20 minutes. Reduce temperature to 350°F and continue cooking until a thermometer inserted in thickest part of lamb near center of roast registers 140°F, 35 to 45 minutes. Transfer lamb to a cutting board; loosely cover with foil to keep warm.
  • Flip potatoes and return to oven until crisp and golden brown in places, 15 to 20 minutes more. Drizzle potatoes with lemon juice. Slice lamb and serve with potatoes, sprinkled with parsley and flaky salt.

Smashed peeled garlic
1 to 2 teaspoons chopped fresh rosemary
Stuffing (see recipe above)
1/4 cup red wine
3/4 cup brown stock or beef broth
1 pound peeled, seeded and chopped tomatoes
1 tablespoon slivered pitted olives
Chopped parsley

Steps:

  • Preheat the oven to 400 degrees. Rub lamb inside and out with garlic clove. Stuff leg of lamb and tie securely; sprinkle meat with rosemary.
  • Put stuffed lamb on a rack and roast for 1 3/4 hours to 2 hours or until meat is 135 to 140 degrees. Remove from oven as you finish sauce.
  • Discard fat in roasting pan. Add wine and broth and reduce. Add tomatoes and olives and season to taste with salt and pepper. Remove from heat add parsley.

1/3 cup raw unsalted pistachios
1 tablespoon fresh thyme leave
1 1/2 teaspoons chopped fresh rosemary
1/3 cup extra virgin olive oil
coarse salt (kosher or sea)

1 (1 1/2 lb) lamb racks, frenched (8 chops)
6 slices pancetta, thin slices, cut into 1-inch-wide strips

Steps:

  • Preheat the oven to 400 degrees.
  • Place pistachios, thyme and rosemary in a mini food processor. Add half of the olive oil and process to a paste. Season with salt and pepper to taste.
  • Pour half of the pistachio pesto into a small bowl, stir in remaining olive oil, and set aside to use as a sauce.
  • Spread some of the remaining pistachio pesto all over the lamb. Place strips of pancetta between the bones and wrap it around the meat, leaving bones exposed.
  • Spread rest of pistachio pesto over pancetta and place rack in a medium-size roasting pan. Roast lamb until an instant-read meat thermometer registers 130 degrees, about 40 minutes for medium-rare.
  • Transfer lamb to a cutting board and let it rest for 5 minutes. Spoon 1 teaspoon of rendered pancetta fat into a medium-size skillet and heat over high heat.

This leg of lamb is rubbed with a lemony, garlic-herb-mustard paste before being roasted over a pan of white wine and potatoes. 8 lb bone-in lamb roast with fat cap
12 cloves garlic, divided
½ cup olive oil
⅓ cup whole grain mustard, plus more for serving
1 lemon, juiced
10 sprigs fresh rosemary, stemmed and leaves finely chopped, plus whole sprigs for serving
10 sprigs fresh thyme, stemmed and leaves finely chopped, plus whole sprigs for serving
1 ½ tablespoons sea salt
1 tablespoon freshly ground black pepper
¾ cup dry white wine
2 ½ lb yukon gold potato, halved
flaky sea salt, for sprinkling

Steps:

  • 2-3 hours before roasting, prepare the lamb. Use a small, sharp knife to make 15 to 20 incisions, each about 2 inches (5 cm) deep, through the fat cap on top of the meat. Thinly slice 3 cloves of garlic and use your fingers to press the slices into the incisions.
  • In a blender, combine the remaining 9 garlic cloves, the olive oil, mustard, lemon juice, rosemary leaves, thyme leaves, salt, and pepper. Blend until a paste forms.
  • Spread the paste evenly all over the lamb. Let marinate at room temperature for 2 to 3 hours.
  • Preheat the oven to 425°F (220°C).
  • Place the lamb on a roasting rack in a roasting pan and pour the wine into the bottom of the pan. Roast for 15 minutes.
  • Remove the pan from the oven and reduce the heat to 325°F (160°C).
  • Arrange the potatoes, cut side down, in the roasting pan and place the lamb on the rack on top. Roast for 2 hours, tossing the potatoes and basting the lamb with the roasting liquid halfway through.
  • Transfer the potatoes to a platter, baste the lamb again with the remaining pan juices, and return the lamb to the oven. Continue to roast, basting often, until an instant-read thermometer inserted into thickest part of the leg reaches 130°F (for medium-rare), 45 minutes to 2 hours more, depending on thickness. (As a general rule, the lamb should roast 20 minutes per pound for medium-rare).
  • Transfer the lamb to a platter and set aside to rest for 20 minutes. While the lamb rests, return the potatoes to the roasting pan, season with flaky salt, and warm in the oven until just heated through, about 20 minutes. Return the potatoes to the serving platter.
  • Carve the lamb into ½-inch (1 cm) thick slices and arrange on the platter with the potatoes, garnished with rosemary and thyme sprigs. Serve with whole grain mustard alongside.

3 green onions, chopped
1 egg, lightly beaten
1/2 cup fresh parsley, chopped

2 tablespoons sugar
1 1/2 tablespoons active dry yeast
1/2 cup warm water (105 to 115 degrees)
6 cups all-purpose flour
1 teaspoon salt
1/2 cup butter, room temperature (1 stick)
1 1/2 cups milk, room temperature
1 (5 -6 lb) leg of lamb, trimmed and boned
3 tablespoons butter, softened
2 -3 garlic cloves, minced (or pressed)

1 egg yolk
1 tablespoon milk

Steps:

  • For stuffing:.
  • Combine all ingredients and blend well.
  • Cover and refrigerate.
  • For pastry:.
  • Disolve sugar and yeast in warm water and let stand until foamy and proofed.
  • Combine flour and salt in large bowl.
  • Using your hands, rub butter into flour until it is absorbed.
  • Make well in the center of flour and pour in yeast and milk.
  • Still using hands,push flour from sides of bowl into center and mix to form dough.
  • Knead several minutes until smooth.
  • Place in lightly oiled bowl and turn to coat.
  • Cover with plastic wrap and let stand in warm area until doubled, about 1 hour.
  • For lamb:.
  • Preheat oven to 450 degrees.
  • Set butterflied lamb skin side down on working surface.
  • Pound to flatten slightly.
  • Mix butter,garlic,salt and pepper to a paste; rub half thoroughly into lamb.
  • Spread with stuffing and reshape leg.
  • Sew closed with string;tie crosswise at 1 inch intervals and twice around length to hold stuffing.
  • Rub outside with remaining butter mixture, then rub with rosemary.
  • Set on rack in roasting pan and roast 20 minutes.
  • Reduce oven temperature to 350 and roast an additional 40 minutes.
  • Let cool, then remove string and brush off excess rosemary.
  • * Lamb can be prepared ahead to this point. Wrap in plastic wrap and refrigerate up to 24 hours.Don't start the pastry until you take the lamb out of the refrigerator.
  • Lightly oil shallow roasting pan.
  • Knead dough once again.
  • Roll out enough dough on lightly floured surface to make rectangle 1/4 inch thick, large enough to completely enclose lamb with a 1 inch overlap.
  • Set lamb on one end of rectangle.
  • Beat yolks with milk and brush some on edges of dough;fold dough over lamb.
  • Press seams together; trim and reserve excess dough.
  • Set seam side down in roasting pan and brush with some of yolk.
  • Preheat oven to 450 degrees. Roll excess dough into long thin ropes. Braid in threes to go around top perimeter of lamb.
  • Remaining dough can also be made into smaller and thinner ropes and/or worked into more intricate designs such as leaves,tiny birds, flowers and coiled snakes inside the encircling braid, all symbols of Easter in Greece.
  • Brush decorations with yolk mixture.
  • Bake until pastry sets, about 15 minutes.
  • Reduce oven temperature to 300 degrees and bake an additional 20 to 30 minutes(use a meat thermometer to check doneness).
  • Transfer to heated platter and garnish with fresh mint sprigs, if desired.
  • Let stand several minutes before slicing.

Chorizo stuffing (recipe follows)
1/2 cup sliced pitted Nyons or other oil-cured black olives
1/4 cup small mint leaves (or torn larger leaves)

Romesco potatoes (recipe follows)

Chorizo Stuffing
2 cups fresh breadcrumbs

Steps:

  • Place the lamb in a baking dish and coat it well on all sides with the smashed garlic, rosemary, chopped parsley, and cracked black pepper. Cover, and refrigerate overnight.
  • Take the lamb out of the refrigerator 30 minutes before stuffing it, to bring it to room temperature. Reserve the marinade.
  • Preheat the oven to 350°F.
  • Season the lamb on both sides with salt and a little freshly ground black pepper. Lay the meat on a cutting board, fat side down, and open like a book. Spoon as much of the chorizo stuffing as you can (about half, or a little more) on the right side of the lamb. Fold the left side over the stuffing, as if you're closing the "book." If some of the stuffing falls out, stuff what you can back in. Tie the lamb with butcher string at 2-inch intervals to hold it together while roasting. Carefully place the lamb on a roasting rack set in a roasting pan. Drizzle the leftover marinade over the lamb. Put the remaining chorizo stuffing into a small baking dish and set aside.
  • Roast the lamb about 1 1/4 hours, until a meat thermometer inserted into the center (of the meat, not the stuffing) reads 120°F. Remove the lamb from the oven, and let it rest 15 minutes before slicing.
  • While the lamb is resting, heat the extra stuffing in the oven until it's hot, about 10 minutes.
  • Toss the olives, parsley leaves, and mint leaves with a drizzle of the supergood olive oil and a squeeze of lemon. Taste for seasoning. (The herb salad might not need salt, because the olives are rather salty.) Arrange the hot romesco potatoes on a large warm platter.
  • Slice the lamb into 1/4-inch-thick slices, removing the butcher string as you go. Using a spatula and spoon (so you don't lose too much of the stuffing), arrange the meat over the potatoes. Scatter the herb salad over the top, and serve the extra stuffing and romesco on the side.
  • Chorizo Stuffing
  • Preheat the oven to 375°F.
  • Toss the breadcrumbs with 2 tablespoons olive oil. Spread them on a baking sheet and toast 6 to 8 minutes, stirring once or twice, until they are golden brown.
  • Heat a medium pot over high heat for 1 minute. Add the remaining 6 tablespoons olive oil, the rosemary sprig, and the chile; let them sizzle in the oil about 1 minute. Stir in the onions, garlic, and thyme, and season with salt and pepper. Turn the heat down to medium and cook about 10 minutes, until the onions are translucent. Transfer the mixture to a large bowl and discard the rosemary and chile.
  • While the onions are cooking, heat a medium sauté pan over high heat for 2 minutes. Crumble the chorizo into the pan, and sauté about 8 minutes, until the sausage is crisp and cooked through. Drain the chorizo of excess oil and add it to the bowl with the onions. Stir in the breadcrumbs, mint, and parsley, and combine well. Taste for seasoning.
  • Romesco Potatoes
  • Preheat the oven to 400°F.
  • Place the potatoes in a roasting pan and toss well with 2 tablespoons olive oil, the garlic, bay leaves, thyme sprigs, and a heaping teaspoon salt. Cover tightly with aluminum foil and roast the potatoes about 50 minutes, until tender when pierced (the time will really depend on size, age, and variety of potatoes). When the potatoes have cooled, reserve the garlic, discard the bay and thyme, and crumble the potatoes into chunky pieces with your hands. Squeeze the garlic out of its skin and set aside.
  • Heat a large sauté pan over high heat for 2 minutes. (To get the potatoes nicely browned and crisp, don't overcrowd them. You may have to use two pans or brown them in batches.) Pour in the remaining 2 tablespoons olive oil, turn the heat to medium-high, and wait 1 minute more. Add the crumbled potatoes, and season with the thyme leaves, salt, and pepper. Sauté the potatoes 6 to 8 minutes until they are crispy on one side. (Don't try to move them or turn them if they are stuck to the pan; they will eventually release themselves-just be patient.) After they've browned nicely on the first side, turn them to let them color on all sides. Once they're nicely browned on all sides, spoon the romesco and reserved garlic into the hot potatoes. Toss and stir to coat them well. Taste for seasoning. Toss in the parsley. Or, if you're not ready to serve the dish yet, turn off the heat and leave the potatoes in the pan; then, just before serving, reheat for a few minutes and toss in the parsley at the last moment.
  • Romesco
  • Preheat the oven to 375°F.
  • Remove and discard the stems and seeds from the chiles, and then soak them in warm water for 15 minutes to soften. Strain the chiles, and pat dry with paper towels.
  • Meanwhile, spread the nuts on a baking sheet and toast for 8 to 10 minutes, until they smell nutty and are golden brown.
  • Heat a large sauté pan over high heat for 2 minutes. Add 2 tablespoons olive oil and wait a minute. Fry the slice of bread on both sides until golden brown. Remove the bread from the pan and cool. Cut it into 1-inch cubes and set aside.
  • Return the pan to the stove over high heat. Add 2 tablespoons olive oil and the chiles and sauté for a minute or two. Add the tomatoes. Season with 1/2 teaspoon salt and cook 2 to 3 minutes, stirring often, until the tomato juices have evaporated and the tomato starts to color slightly. Turn off the heat, and leave the mixture in the pan.
  • In a food processor, pulse together the toasted nuts, garlic, and fried bread until the bread and nuts are coarsely ground. Add the chile-tomato mixture, and process for 1 minute more.
  • With the machine running, slowly pour in the remaining 1 cup olive oil and process until you have a smooth purée. Don't worry, the romesco will "break" or separate into solids and oil; this is normal. Add the parsley, and season to taste with lemon juice, sherry vinegar, and more salt if you like.
  • Note
  • This is one of the most involved recipes in the book, so plan ahead and set yourself up. Both the chorizo stuffing and the romesco can be made up to 2 days ahead. You can roast the potatoes in the morning, waiting to crumble and brown them until just before serving. And if you like, stuff the lamb the morning of your supper. But remember to take it out of the refrigerator 45 minutes before roasting to bring it to room temperature. Start the romesco potatoes after the lamb has been in the oven for about 30 minutes.

My aunt Latifa and uncle Mousa lived in a villa in a suburb of Cairo. It was large and housed their extended family. There was no oven. Much of the cooking was done over a mangal (portable outdoor grill) and a Primus oil heater, and trays were sent off daily to the baker to be cooked in the bread oven. This dish was sent to the baker.

Number Of Ingredients 7

1 leg of lamb (about 4 pounds)
3 or 4 cloves garlic, slivered
Salt and pepper
1 1/2 pounds potatoes, thickly sliced
2 large onions, sliced
1 pound tomatoes, sliced
2 teaspoons dried rigani (wild marjoram) or oregano (optional)

Steps:

  • Pierce the leg of lamb all over with the point of a sharp knife and insert the slivers of garlic at different depths. Rub generously with salt and pepper.
  • Put the prepared lamb, fat side up, in a large baking dish or roasting pan, and surround it with the sliced potatoes, onions, and tomatoes. Pour in 1/2 cup water, and sprinkle if you like with a little rigani or oregano.
  • Preheat the oven to 425°F. Put in the leg of lamb and reduce the heat immediately to 325°F. Roast for about 2 1/2 hours, or until done to your liking, basting occasionally with the pan juices.
  • Turn the vegetables over once during the cooking so that they cook evenly in the juices from the joint, and pour off excess fat. The joint should be very tender and juicy, and the vegetables quite soft. I like them practically disintegrating, but if you prefer them to be rather more firm, add them to the roast after about half an hour's cooking, when the meat has already released some fat. Baste the vegetables when you baste the meat, and moisten occasionally with a little water if necessary.
  • Let the meat rest in the turned-off oven with the door open for 15 minutes before serving. Remove the lamb to a board-it makes carving easier.
  • You can of course cook the leg of lamb without the vegetables. Here is a sauce which you can pour on each serving as you hand it out: fry a handful of blanched, slivered almonds in a drop of oil till golden, add the defatted juices from the pan and a little water, and stir in 2 tablespoons black or golden raisins.
