LEMON GARLIC MARINATED GRILLED PORK CHOPS
Recipe VIDEO above. Nothing infuses pork chops with flavour like a good marinade! This one is ideal for grilling so the high heat sears the crust beautifully. But the pork chops can of course be cooked on the stove, or even bake them! Also use this marinade for the proteins - see notes.

Steps:
- Whisk Marinade ingredients in a bowl (or ziplock bag). Add pork. Marinade for 1 hr minimum, 3 hours ideal, 12 hours max (Note 3).
- Take the pork out of the fridge 20 minutes before cooking.
- Shake excess marinade off (but don't wipe dry) and cook using preferred method. Pictured in post served with Minted Yoghurt - see notes!

Got this off of another website. It is a light-summery flavor for pork chops. Would probably be good on chicken too. Prep time does not include marinating time.

Steps:
- Mix all ingredients in a storage bag and marinate 2 hours to overnight turning bag frequently.
- Remove marinade from bag and bring to boil, remove from heat and set aside.
- Heat grill to medium and cook pork chops 5-7 minutes each side basting with remaining cooked marinade.

- In a large skillet, heat oil over medium heat. In batches, brown pork chops 2-3 minutes on each side. Return all to pan., In a small bowl, mix remaining ingredients; pour over chops. Bring to a boil. Reduce heat; simmer, covered, 4-5 minutes or until a thermometer reads 145°. Let stand 5 minutes before serving. Freeze option: Place pork chops in freezer containers; top with sauce. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring sauce and adding a little water if necessary.

I believe this is originally a Weight Watchers recipe, but I've been using this marinade on pork or chicken for years. It's quick, simple and cheap!

- Combine the first five ingredients (I've found the lemon zest and lemon juice requirements are perfect for one lemon).
- Place pork chops in the marinade for at least 30 minutes.
- Salt and pepper pork chops to taste, then grill (approx. 5-7 minutes per side).

LEMON-TARRAGON GRILLED PORK CHOPS
I found this recipe in the Cooking Light Summer issue. It was wonderful. My DH, who isn't a big pork eater, even like them. Hope you enjoy. I just had to share with my recipezaar family. Preparation time includes marinating.

Steps:
- Combine water, sugar, and salt in a bowl, stirring with a whisk until sugar and salt dissolve. Pour water mixture into a large zip-lock plastice bag. Add the tarragon, lemon rind and juice. Add the pork chops to bag and marinate in refrigerator for 2-4 hours, turning bag occasionally.
- Prepare the grill about 20 minutes before taking pork out of refrigerator.
- Spray grill with non-stick olive oil cooking spray.
- Remove pork chops from bag and discard the remaining marinade. Sprinkle evenly with pepper.
- Place pork on grill and grill for 3 minutes on each side until desired degree of doneness.

- In a large resealable bag, combine lemon juice, oil, garlic, salt, oregano, and pepper. Place chops in bag, seal, and refrigerate 2 hours or overnight. Turn bag frequently to distribute marinade.
- Preheat an outdoor grill for high heat. Remove chops from bag, and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat, and set aside.
- Lightly oil the grill grate. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade, until done.
