Number Of Ingredients 14

1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 large egg, room temperature
1/2 cup honey
1/4 cup lemon juice
1/4 cup butter, melted
1/2 teaspoon grated lemon zest
DRIZZLE:
1/4 cup confectioners' sugar
1 teaspoon lemon juice
Additional grated lemon zest

Steps:

  • In a large bowl, combine the flours, baking powder, baking soda and salt. In another bowl, combine the egg, honey, lemon juice, butter and lemon zest. Stir into dry ingredients just until moistened., Coat muffin cups with cooking spray or use paper liners; fill one-half full with batter., Bake at 375° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack., In a small bowl, combine confectioners' sugar and lemon juice; drizzle over warm muffins. Sprinkle with additional lemon peel.

¼ cup butter, softened
¼ cup brown sugar
¼ cup honey
1 tablespoon lemon juice
1 egg
½ teaspoon vanilla
¾ cup + 2 tablespoons flour, all-purpose
¼ teaspoon salt
¼ teaspoon baking soda
¼ cup powdered sugar
Drizzle of milk

Steps:

  • In a small bowl, combine the dry ingredients, flour, salt & soda, set aside
  • In a medium bowl, cream the butter and brown sugar
  • Add the lemon juice, egg and vanilla, cream until well blended
  • Gradually add the dry ingredients, blend well
  • Preheat oven to 350 degrees and fill muffin tin with liners {we got 8 muffins}
  • Bake for 15-20 minutes or until a toothpick inserted comes out clean
  • Cool, combine powdered sugar and milk for glaze and drizzle over muffin {optional}

Steps:

  • Preheat oven to 200 degrees. Line a 12 muffin pan and set aside.

  • In a pitcher, whisk the buttermilk, butter, eggs, vanilla, honey and lemon juice till the mixture is homogenous.
  • Pour over the dry mix and fold using a spatula till all the batter is moist.
  • Divide equally among the muffin holes and bake for 15 minutes or till skewer tested comes out clean.
  • Cool on wire rack or enjoy warm.

6 tablespoons unsalted butter, melted, plus more for greasing
2 large eggs
1 cup light sour cream
1/4 cup milk
1/3 cup honey
1 lemon, zested and juiced
1/2 cup all-purpose flour
1 1/4 cups cornmeal
1 teaspoon baking powder
2 teaspoons salt

Steps:

  • Preheat oven to 350 degrees F. Grease your muffin tray.
  • Mixture is prepared in 2 parts - wet and dry. First prepare the wet mixture. In a large mixing bowl whisk together eggs, sour cream, melted butter, milk, honey, lemon zest and juice. In a separate large mixing bowl combine all dry ingredients. Once the dry mixture is blended begin to add the wet mixture by folding into the dry mixture. As soon as both mixtures are blended spoon the mixture into the prepared muffin tray. Fill each cup about 2/3 to 3/4 full. Bake muffins for about 20 to 25 minutes, or until the top has a golden crust. When ready, remove from the oven and let them cool slightly. Remove from tray and serve.

1 ¾ cups all-purpose flour
¾ cup white sugar
1 teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
1 zucchini, shredded
1 (8 ounce) container lemon yogurt
6 tablespoons butter, melted
1 egg, beaten
1 tablespoon lemon juice
1 tablespoon lemon zest
⅓ cup lemon juice
¼ cup white sugar
2 teaspoons lemon zest

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • Mix flour, 3/4 cup sugar, baking powder, baking soda, and salt in a large bowl; make a well in the center of the flour mixture. Mix zucchini, yogurt, butter, egg, 1 tablespoon lemon juice, and 1 tablespoon lemon zest in a separate bowl; pour yogurt mixture into well. Gently stir yogurt, slowly incorporating the flour mixture until just blended. Batter may be slightly lumpy. Pour batter evenly into prepared muffin cups.
  • Bake in preheated oven until a toothpick inserted into the center of a cupcake comes out clean, about 20 minutes.
  • While muffins are baking, whisk 1/3 cup lemon juice, 1/4 cup sugar, and 2 teaspoons lemon zest together in a saucepan over medium heat until mixture comes to a simmer and sugar is dissolved, about 5 minutes. Cover and keep glaze warm over low heat.
  • Poke each muffin several times with a toothpick; spoon glaze over muffins. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
