EASY LEMON BARS RECIPE
This Easy Lemon Bars Recipe has the perfect combination of tart and sweet. Made with a vanilla crust and a smooth lemon filling, these are easily the best lemon bars ever!

Steps:
- Preheat oven to 350 degrees and line the bottom and sides of a 9×13 baking pan with parchment paper that sticks up above the sides of the pan, so that you can remove the bars later for easy cutting. Set pan aside.
- To make the crust, combine the flour, powdered sugar and salt in a medium bowl.
- Add the melted butter and vanilla extract and stir to combine completely.
- Crumble and distribute over the bottom of the pan and press evenly into the bottom so that it's even.
- Bake for 15-20 minutes or until the edges are just getting lightly browned. Remove from oven and set aside.
- To make the filling, combine the sugar and flour. Add the eggs, lemon juice and salt and whisk together to combine. Don't over mix.
- Pour the filling on top of the crust and bake for 18-22 minutes or until relatively set. Remove from the oven and cool for 15-20 minutes on the counter, then refrigerate until cold and firm.
- Remove bars from pan and dust with powdered sugar, then cut into squares. Bars are best when stored well covered, and they'll last for 5-6 days.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
- Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

FINALLY! LEMON BARS THAT I LOVE!
This is the best (finally!) recipe for lemon bars that I've tried. And I've tried a LOT of them over the years. This is the winner hands down! Found in an old Good Houskeeping cookbook! (I still changed it a little, but very minor changes.)

Steps:
- Preheat oven to 350 degrees.
- Line a 13" x 9" baking pan with foil extending it over the sides a little. Lightly spray foil with butter-flavored cooking spray.
- In medium bowl, combine 1 1/2 cups flour and 1/2 cup powdered sugar. I use a whisk.
- With pastry blender, cut in butter until mixture resembles coarse crumbs.
- Sprinkle dough evenly into bottom of pan. Level, brushing with your hand lightly, then pat dough firmly into bottom.
- Bake 15-17 minutes until lightly browned.
- Meanwhile, in large mixer, beat eggs on high speed until thick and lemon-colored, about 3-4 minutes.
- Reduce speed to low, add lemon juice, sugar, baking powder, salt, and remaining 3 Tbl. flour.
- Beat until blended, scraping sides and bottom of bowl occaisionally.
- Pour filling over warm crust.
- Bake 15 minutes, or until filling is just set and golden around the edges.
- Transfer pan to wire rack.
- Sift powdered sugar (1 Tbl.-1/4 cup) on top over warm filling.
- Cool completely in pan on wire rack.
- When cool, lift out holding on to foil, and transfer whole thing to a cutting board or surface.
- When cool, cut into bars.
- Makes 24-36 bars.

- Preheat the oven to 350 degrees F.
- For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill.
- Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
- For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature.
- Cut into triangles and dust with confectioners' sugar.

- Preheat oven to 350°. In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in lime zest. Steps:
- Combine butter, flour and powdered sugar n bowl, mix until crumbly.
- Press into ungreased 8-inch square pan.
- Bake 350°F - 8 minutes or until golden brown.
- Cool in pan on rack.
- Combine sugar, 2 tbsp flour & baking powder in bowl.
- Add eggs, lemon juice & rind. Mix well.
- Pour evenly over baked, cooled crust.
- Bake 350°F for 25 minutes.
- Top will puff-up while baking but will fall when cooling.
- Cool in pan on rack & cut into 2-inch squares.
- Sprinkle with powdered sugar.
