8 cups (64 ounces) cold water

Steps:

  • Wash and thinly slice the lemon.
  • Add the lemon slices to bottom of a pitcher. Use a wooden spoon to lightly muddle (mash) them several times to release the juices.
  • Add the cold water. Refrigerate for at least 1 hour before serving, more if time. Flavor is best within 1 day.

  • Place 2 thinly sliced lemons in a pitcher. For still infused water, add 2 quarts of water. For sparkling water, add 1 quart of seltzer during prep and a second quart just before serving. Refrigerate 2 to 4 hours to allow the lemons to infuse. Stir well and strain, discarding the lemons. For serving, add fresh lemon slices for garnish and plenty of ice. The infused water will keep refrigerated for up to 2 days.

8 large lemons
1 cup superfine sugar, plus extra to taste
3 cups boiling water

Steps:

  • Finely grate the rind and squeeze the juice of 7 of the lemons into a large heatproof bowl.
  • Remove any seeds.
  • Finely slice the remaining lemon and set aside 4-6 slices to use for serving. Stir the remainder into the juice.
  • Stir the sugar into the bowl and add the boiling water. Let cool to room temperature. Chill until serving.
  • To serve, strain into a serving pitcher and dilute with cold water to taste. Stir in extra sugar is desired.
  • Serve in chilled glasses, garnishing each one with a slice of lemon.

3 large limes, quartered
4 cups water
1/2 cup sugar, or more if needed
1/4 cup chia seeds

Steps:

  • Put the limes, water, and sugar in a blender and pulse 3 to 4 times, just enough to extract the juice from the limes but not crush the skins (which would make the drink too bitter). Strain through a fi ne-mesh sieve into a pitcher. Taste and add more sugar if you like.
  • Whisk in the chia seeds and refrigerate for at least 30 minutes, until completely chilled. Stir before serving, then serve over ice.
