Baby Friendly Lentil And Veggie Dhal Recipe by Tasty image

Here's what you need: red lentils, butternut squash, sweet potato, vegetable stock, tomato puree, turmeric, chili powder, curry powder, salt, ginger, spinach, coconut milk, cilantro

Number Of Ingredients 13

½ cup red lentils, washed and soaked in water for 15 minutes. Soaking is optional but it reduces cooking time.
1 cup butternut squash, diced
1 cup sweet potato, diced
vegetable stock, 1 stock cube dissolved in 500ml hot water.
1 tablespoon tomato puree
1 teaspoon turmeric
chili powder, to taste, optional
1 tablespoon curry powder, adjust to taste
salt, to taste
1 teaspoon ginger, grated
1 cup spinach
¼ cup coconut milk
1 teaspoon cilantro, for garnish

Steps:

  • In a pan, add lentils, squash, sweet potato, stock, tomato purée, spices, salt and grated ginger. Cover and let it cook for 12-15 minutes, until lentils have softened.
  • Add spinach and coconut milk. Simmer for 5 minutes, garnish with cilantro and serve.

Homemade baby food is much less expensive than store bought, and it's also nice to know just exactly what you are feeding your precious one! This fast, easy recipe will allow you to be creative with all different kinds of vegetables!

3 cups chopped carrots

Steps:

  • Place a steamer insert into a saucepan and fill with 2 inches of water or just below the bottom of the steamer. Bring water to a boil. Add carrots, cover, and steam until tender, about 10 minutes.
  • Transfer steamed carrots to a food processor and process until almost smooth, scraping down sides periodically. Add 1/4 cup water from the saucepan and process until carrots are smooth. Repeat until desired consistency is reached.
  • Scoop 1/3 to 1/2 cup pureed carrots into sandwich-size resealable bags. Squeeze bag to remove excess air and seal. Flatten bags and stack in the freezer.

I have been making baby food and purees for the last 5 months. I love it and baby does too! I was confident baby would turn this recipe down but this is one of his absolute favorites! Credit goes to Annabel Karmel and her fabulous baby food ideas. After preparing a batch of this, I spoon portions into an ice cube tray, flash freeze, remove from trays and then store in bags in the freezer. Two cubes reheated is the perfect portion for a hungry nine month old

1/2 cup onion, finely chopped
2 medium carrots, peeled and chopped
2 tablespoons celery, chopped
1 tablespoon vegetable oil
1/4 cup lentils
1 medium sweet potato, peeled and chopped
1 3/4 cups vegetable stock or 1 3/4 cups water

Steps:

  • In a medium saucepan saute the onion, carrot, and celery in vegetable oil for 5 minutes or until softened.
  • Add lentils and sweet potatoes and slowly add stock.
  • Bring to a boil.
  • Cover, reduce heat and simmer.
  • Puree in a blender and portion out as desired. This recipe will make anywhere from 5-10 servings.
  • Can be refrigerated for 1 week or frozen for 6 weeks.

2 ounces onions, chopped
3 1/2 ounces carrots, peeled and chopped
1/2 ounce celery, chopped
2 ounces split red lentils
9 ounces sweet potatoes, peeled and chopped into small dice
7/8 cup tomato sauce
2 ounces cheddar cheese, grated

Steps:

  • Heat the vegetable oil and saute the onion, carrots and celery for 5 minutes.
  • Rinse the lentils and add to the pan, along with the sweet potato. Cook for 1 minute.
  • Pour in the tomato sauce and 1 tablespoon of water. Cover and cook for about 30 minutes.
  • Remove from the heat and stir in the cheese until melted.
  • Puree with a hand blender and serve.
