SLOPPY OTTOS
My version of sloppy joes comes from an old family recipe. Make these sandwiches even more German by stacking everything on a pretzel bun. -Jason Koren, Milwaukee, Wisconsin

Steps:
- Preheat oven to 350°. In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. Add sauerkraut, peppers and onion; cook and stir 8-10 minutes longer or until vegetables are tender., Spoon meat mixture onto bun bottoms; place cheese over meat. Replace tops. Place on a baking sheet. Bake 4-6 minutes or until cheese is melted.

SLOPPY OTTOS (GERMAN VERSION OF SLOPPY JOES)
Because of my German heritage, I try to use the month of October to cook more German-inspired foods. When my sons were younger, they loved sauerkraut and any dish that contained it. This was a favorite of theirs and I liked that it was a one skillet, easy and tasty sandwich. I served it with German potato salad. Yum!!

Steps:
- Brown ground beef with the onions. Salt and pepper to taste.
- Stir in desired amount of sauerkraut and heat through.
- Just before serving, stir in sour cream. Heat gently and serve on dark buns.

- Coat a large nonstick skillet with cooking spray; place over medium heat. Add onion, bell pepper and garlic; cook 3 minutes, stirring occasionally. Crumble turkey into skillet; cook 3 minutes, stirring occasionally. Add tomato sauce, Worcestershire, tomato paste, salt and pepper. Simmer uncovered 10 to 15 minutes or until sauce thickens. Spoon mixture onto bottom of rolls; close with roll tops.

I'm just beginning to cook so my recipes are pretty quick and simple. This recipe is a really simple, quick, and tasty 'Sloppy Joe.' This is what we are having tonight before we go to the football game. You can also let this simmer in a slow cooker after browning the ground beef if you prefer.

- Place a large skillet over medium-high heat. Crumble ground beef into skillet; add onion and celery. Cook and stir beef mixture until beef is completely browned, 7 to 10 minutes.
- Stir ketchup, brown sugar, Worcestershire sauce, vinegar, mustard, and lemon juice through the beef mixture. Reduce heat to medium-low and cook mixture at a simmer until mixture is hot and sauce has thickened, about 20 minutes.
