LIGHTER CHOCOLATE CHIP COOKIES

Lighter Chocolate Chip Cookies image

These crispy cookies will give your old, full fat recipe, a run for their money. By adding some ground oats to whole wheat pastry flour, cutting the butter and adding some agave nectar, we cut the fat and calories without sacrificing flavor.

Provided by Food Network Kitchen

Categories     dessert

Time 1h37m

Yield 24 cookies, 12 servings

Number Of Ingredients 10

1/2 cup rolled oats (not quick-cooking)
1 cup whole-wheat pastry flour, spooned and leveled
1/4 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter, softened
2/3 cup packed light-brown sugar
3 tablespoons agave nectar
1 large egg, room temperature
2 teaspoons pure vanilla extract
4 ounces semisweet chocolate, chopped, or 1/2 cup semisweet chocolate chips

Steps:

  • 1. Preheat the oven to 350 degrees F. Combine the oats, flour, baking soda and salt in a food processor and pulse until the oats are finely ground. Set aside.
  • 2. In the bowl of an electric mixer, cream the butter, sugar and agave nectar until light and fluffy. Add the egg and vanilla and mix until smooth and glossy. Reduce mixer speed to the lowest setting and gradually add the flour mixture until just incorporated; stir in the chocolate.
  • 3. Drop level tablespoons of the dough onto silicone mat lined baking sheets, 2 inches apart (12 cookies per sheet). Transfer the sheets to the refrigerator and chill the cookies until solid, about 30 minutes. Bake until lightly golden around edges, about 12 to 14 minutes, rotating the pans halfway through. Remove the baking sheets from the oven and let cool on the sheets for 1 minute; transfer to a wire rack to cool completely.

CHOCOLATE DRIZZLED OATMEAL LACE COOKIES

Chocolate Drizzled Oatmeal Lace Cookies image

A little bit crispy, a little bit chewy, but totally irresistible! These lacy oatmeal cookies get drizzled with chocolate for a light but satisfying sweet treat at only 90 calories each.

Provided by By Betty Crocker Kitchens

Categories     Dessert

Time 2h30m

Yield 30

Number Of Ingredients 9

1/2 cup butter, cut into 1-inch pieces
1 cup packed brown sugar
1 1/2 cups old-fashioned oats
1/4 cup sliced almonds, chopped
1/4 cup Gold Medal™ all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons vanilla
1 egg white, slightly beaten
1/4 cup semisweet chocolate chips

Steps:

  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
  • In 1-quart saucepan, heat butter and brown sugar over medium-low heat 3 to 5 minutes, stirring constantly, until butter is melted and mixture is stirred smooth.
  • Transfer mixture to medium bowl. Stir in oats, almonds, flour, salt and vanilla. Cool 5 minutes; stir in egg white until well mixed.
  • Drop mixture by level tablespoonsful onto cookie sheet, spacing about 2 1/2 inches apart. Spray back of clean spoon with cooking spray, and press back of spoon to spread each mound into 2 1/2-inch circle, respraying as necessary to prevent sticking.
  • Bake 9 to 11 minutes or until deep golden brown and crisp around edges. Cool on cookie sheet until firm, about 3 minutes. Carefully remove with thin metal spatula; transfer to cooling rack to cool completely. Repeat for remaining cookies.
  • In small microwavable bowl, microwave chocolate chips 45 to 60 seconds, stirring every 15 seconds, until melted and stirred smooth. Transfer to small resealable food-storage plastic bag; cut off small corner of bag. Drizzle lightly on top of cookies; cool about 1 hour or until chocolate is set. Store in sealed container at room temperature.

"LIGHT" CHOCOLATE CHIP OATMEAL COOKIES

These are so I can feel OK with my toddler son eating them. Obviously, you could omit the chocolate chips and they'd be even better... but I didn't want to go crazy. I use "Earth Balance" margarine and "Enjoy Life" chocolate chips because they're dairy-free. I also have substituted 1/2 a cup of the whole wheat flour with garbanzo bean flour.

Provided by cathianne

Categories     Drop Cookies

Time 21m

Yield 18 medium-sized cookies, 18-22 serving(s)

Number Of Ingredients 9

1/2 cup margarine
1/2 cup dark brown sugar, packed
1 egg
1 teaspoon vanilla
1 teaspoon cinnamon
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 1/2 cups oats (not instant)
1/2 cup dark chocolate chips

Steps:

  • Combine margarine, sugar, egg, vanilla and cinnamon. Stir until creamy and smooth. I microwave the margarine for about 30 seconds to soften.
  • Add flour and baking powder and stir until completely combined.
  • Add oats and then chocolate chips.
  • Spoon onto greased cookie sheets with a soup spoon with about an inch between each cookie.
  • Bake at 350 F for 11 minutes. I used two sheets in the oven at once, and if you do that, switch the bottom sheet with the top sheet after about 5 minutes and then continue cookie.
  • Let cool.
