2 cups half-and-half cream
1 large tomato, diced
1 onion, diced
½ cup diced red bell pepper
3 cups spinach, rinsed and chopped

Steps:

  • Over a double boiler slowly melt the pepperjack cheese. When the cheese is melted whisk in half and half until smooth and creamy. Stir in tomato, onion, red bell pepper and chopped spinach. Transfer to a serving bowl. Serve warm with tortilla chips or bread.

1 container (16 ounces) sour cream
1 box (10 ounces) frozen chopped spinach, thawed and well-drained
1 can (8 ounces) water chestnuts, rinsed, drained and chopped
1 round loaf French bread
fresh vegetable sticks

Steps:

  • Stir together dips mix, sour cream, spinach and water chestnuts. Chill 30 minutes or until just before serving.
  • Cut top off the bread and remove center (using firm bread pieces as dippers). Fill bread bowl with dip. Serve with cubed bread and vegetables.

3 tablespoons butter
1 shallot, finely chopped
1 clove garlic, chopped
2 tablespoons all-purpose flour
1 cup heavy whipping cream
1 (10-ounce) box frozen chopped spinach, thawed, drained and squeezed dry
1 (8-ounce) jar artichoke hearts, drained and chopped
1 (10-ounce) can diced tomatoes with green chiles (recommended: Rotel)
1 cup shredded 4 cheese blend
Tortilla chips and cut vegetables, for serving

Steps:

  • Melt butter in a medium saucepan over medium heat. Once it foams, add the shallot and garlic, and saute until softened, about 3 minutes.
  • Add the flour and cook while stirring until it becomes a light blonde color.
  • Slowly stir in the heavy cream, and the drained spinach, and simmer until it starts to thicken, about 5 minutes.
  • Stir in the artichoke hearts, tomatoes, and cheese and cook until the cheese is melted. Remove to a serving bowl and serve with tortilla chips.

1 (8 ounce) package cream cheese, diced and softened
1 cup evaporated milk
1 (2.25 ounce) can chopped black olives, drained
1 tablespoon red wine vinegar
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium baking dish, mix together salsa, chopped spinach, Monterey Jack cheese, cream cheese, evaporated milk, black olives, red wine vinegar, salt and pepper.
  • Bake mixture in the preheated oven 12 to 15 minutes, or until bubbly.

1/2 teaspoon cajun seasoning
2 garlic cloves, minced

Steps:

  • Combine soup, shrimp, spinach, cream cheese, onion, seasoning, and garlic in a pot on stove.
  • Cook until well mixed, stirring occasionally (or in crock pot on low for 2 hours).
  • Stir before serving.

My best friend Jenn made this recipe for football party we were having at our house, and it was the hit of the night! You can make it as mild or spicy as you like. I have so many people asking me for this recipe, so I thought I'd share it on here. If you cannot find Italian sausage meat, you can buy the Italian sausage in the casing and squeeze it out. Enjoy with tortilla chips.

1 pound bulk hot Italian pork sausage
1 (8 ounce) package cream cheese
1 (8 ounce) jar salsa
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Spread cream cheese in an even layer into the bottom of a 9-inch square baking dish. Layer salsa, sausage, and mozzarella over the cream cheese, respectively.
  • Bake in preheated oven until the mozzarella cheese is melted completely, about 20 minutes.
