BLUE CHEESE HOT WINGS!

Blue Cheese Hot Wings! image

These yummy, spicy wings are awesome even if you are not a blue cheese lover. They are a must try! Since football season, I have been trying to come up with a homemade wing sauce -- and I have found it!

Provided by tashmaxx

Categories     Appetizers and Snacks     Spicy

Time 1h20m

Yield 15

Number Of Ingredients 10

30 each chicken wings, cut apart at joints, wing tips discarded
2 teaspoons ground cayenne pepper
2 teaspoons seasoned salt
1 cup Louisiana-style hot sauce
⅓ cup molasses
1 teaspoon liquid mesquite smoke flavoring
½ cup chopped onion
½ cup chopped green bell pepper
4 cloves garlic, minced
2 cups prepared blue cheese dressing

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Sprinkle the chicken wings on all sides with cayenne pepper and seasoned salt, and spread in a single layer into a large baking dish.
  • Bake the wings in the preheated oven until the skin is browned and crisp, 30 to 40 minutes, turning the wings over halfway through cooking for even browning.
  • While the wings are baking, combine hot sauce, molasses, and liquid smoke flavoring in a saucepan over medium-low heat. Stir in the onion, green pepper, and garlic, and bring the mixture to a boil. Stir in the blue cheese dressing. Reduce heat to a simmer, and cook until the onions are translucent, about 5 minutes. Remove from heat.
  • Transfer the wings from the baking dish to paper towels to drain excess grease. Pour off any excess fat from the dish, and return the wings to the dish. Pour the sauce evenly over the wings, turning them over with a spatula or tongs to coat all sides with sauce.
  • Return to the oven and bake until the sauce has thickened and cooked onto the wings, about 20 minutes. Cool for about 5 minutes before serving.

Blue Cheese-Yogurt Sauce
1 1/4 cups Greek yogurt
1/2 cup crumbled blue cheese, preferably Cabrales
2 tablespoons finely grated red onion
2 tablespoons finely chopped fresh cilantro leaves
Kosher salt and freshly ground black pepper
Hot Wings
Canola oil, for deep-frying
2 cups all-purpose flour
Kosher salt and freshly ground black pepper
3 tablespoons ancho chile powder
1 1/2 teaspoons garlic powder
3 pounds chicken wings, split at the joint, wing tips removed and discarded
3/4 cup red wine vinegar
2 tablespoons pureed chipotle chile in adobo
1/4 teaspoon chile de árbol powder or cayenne pepper
1 heaping tablespoon Dijon mustard
8 tablespoons (1 stick) unsalted butter
1 to 2 tablespoons honey, to taste
3 tablespoons finely chopped fresh cilantro leaves
Jicama sticks, for serving

Steps:

  • To make the sauce, stir together the yogurt, blue cheese, red onion, cilantro, and salt and pepper to taste in a bowl. Refrigerate for at least 30 minutes before serving.
  • To cook the wings, heat 2 inches of canola oil in a large deep pot until it reaches 365°F on a deep-frying thermometer.
  • Stir the flour, 2 teaspoons salt, 1 teaspoon pepper, 1 tablespoon of the ancho powder, and the garlic powder together in a large shallow bowl. Season the wings with salt and pepper, and add the wings, in batches, to the flour mixture to lightly coat; tap off any excess flour. • Melt the butter in a large sauté pan over low heat. Add the vinegar mixture, bring to a simmer, and cook for 30 seconds. Season with salt, pepper, and honey to taste. Pour the sauce over the wings and toss well to coat. Transfer the wings to a platter and sprinkle with the cilantro. Serve with jicama sticks and the blue cheese sauce on the side.

  • Half fill a large shallow dish or bowl with cool water. Peel the carrots & remove the ‘string’ from the celery. Cut carrots & celery into 3-inch batons. Put into the cold water; cover. Keep in the fridge until ready to use; drain thoroughly before serving.
  • Combine all ingredients in a medium saucepan over medium heat. Whisk until the cheese is melted & the sauce is smooth. Pour into a serving bowl, cover loosely & set aside in the fridge until ready to use.
  • Combine all ingredients in a large bowl (you need a large bowl for tossing the wings). Pour half of the sauce into a ramekin or small bowl – this is for the second batch of wings. If you’re cooking the wings in three batches, then divide the sauce into thirds.
  • Place the oil in a large wok or a pot. A wok works best if you have one. Make sure you have a ‘spider’ or a slotted spoon to take the wings out of the oil.
