This recipe is one of my family's favorites, and I make the treats a lot, especially at Christmas. I have three children and eight grandchildren, and every one of them loves those "peanut butter thingies," as the grandchildren call them! -Jodie McCoy, Tulsa, Oklahoma

COOKIE:
1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract
1-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
FILLING:
42 miniature peanut butter-chocolate cups

Steps:

  • In a bowl, combine the butter, sugars, egg, peanut butter and vanilla; beat until smooth. Combine the flour, baking soda and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until easy to handle., Roll into 42 walnut-sized balls; place in greased miniature muffin cups. Bake at 375° for 8-9 minutes. , Remove from oven; gently press 1 peanut butter cup into each cookie, forming a depression. Cool for 10 minutes before removing to wire racks to cool completely.

2 cups peanut butter
1-1/4 cups sugar
2 eggs
54 milk chocolate stars or chocolate kisses

Steps:

  • In a large bowl, cream peanut butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition (dough will be sticky). With floured hands, roll tablespoonfuls into 1-1/4-in. balls. Place 2 in. apart on ungreased baking sheets. , Bake at 350° for 14-16 minutes or until tops are cracked. Remove to wire racks. Immediately press a chocolate kiss in the center of each. Cool.

1/2 cup graham cracker crumbs
2 Tbsp. butter or margarine, melted
2 cups thawed COOL WHIP Whipped Topping, divided
1 cup milk
1/2 cup crunchy peanut butter
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding
1/4 cup strawberry preserves

Steps:

  • Mix crumbs and butter. Press about 1 Tbsp. of the crumb mixture into each of 12 paper-lined muffin cups; top each with 1 Tbsp. of the whipped topping.
  • Beat milk and peanut butter with wire whisk in medium bowl until well blended. Add dry pudding mix; beat 2 minutes or until well blended. Gently stir in remaining 1-1/4 cups whipped topping. Spoon evenly into cups. Top each with 1 tsp. preserves.
  • Freeze 4 hours or until firm. Peel off paper just before serving.

A little peanut butter cookie with miniature Reese's Peanut Butter cups in the middle of them. Very easy to make, but a small recipe. They go quick so you might want to double it.

1/2 cup butter, softened
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1 egg
1/2 cup creamy peanut butter
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
42 reese's miniature peanut butter cups

Steps:

  • Combine butter, sugars, egg, peanut butter and vanilla in mixing bowl; beat until smooth.
  • In separate bowl, combine flour, baking soda and salt; add to creamed mixture.
  • Cover dough and chill.
  • When cold enough to handle easily,roll in small (walnut-sized) balls, place each ball in greased miniature muffin tins.
  • Bake at 375 degrees for 8-9 minutes.
  • Remove from oven, gently press 1 peanut butter cup into each cookie to make depression. (I placed the candies in the freezer to make them easier to handle when placing in the cookie.).
  • Cool in pan 10 minutes; remove from pan and cool on rack.
  • Store in cool place until serving time.
