Number Of Ingredients 3

8 loomi lemons, crushed
1/2 cup sugar (or more, to taste)
1 gallon water

Steps:

  • Add a gallon of water to loomi in a non-reactive pan. Bring to a boil, simmer for 5 minutes, turn off burner and cool. (I put a lid on the pot).
  • Strain and then add the sugar. Let sugar dissolve at room temperature.
  • Stir, taste for sugar and chill.
  • Serve chilled with ice cubes.
  • Note: You can also leave the loomi soaking in the gallon of water overnight. In the morning, bring to a boil, turn heat off and strain and add sugar. But the recipe above can be used when making it in a hurry.
  • Also, crush the loomi into small pieces using a mortar and pestle. This brings out the flavor and sourness.

2 Syrian dried limes (dried black limes)
4 cups water
2 tablespoons light honey, or to taste

Steps:

  • Crush limes with a pestle in a mortar until the pieces resemble small stones.
  • Combine water and crushed lime in a saucepan and bring to a boil over medium-high heat. Reduce temperature and simmer for 5 minutes.
  • Strain into 4 tea cups and sweeten with honey as desired. Serve hot or cold

DRIED LIME TEA

Slightly funky, a little bit sour, and very aromatic, an infusion of dried limes is a good alternative to iced tea in the summer.

Number Of Ingredients 2

2 dried limes (loomi Omani)
1/4 cup sugar, or to taste

Steps:

  • Break the dried limes into several pieces. (You can use a mortar and pestle or put them in a sandwich bag and smack them with a hammer.) Combine 4 cups water and the lime pieces in a small saucepan, bring to a boil over high heat, then reduce heat to medium-low and simmer for 4 minutes.
  • Remove from heat and strain through cheesecloth or a coffee filter. Discard the solids. Add the sugar to the tea and stir until dissolved. Drink hot or cool to room temperature and then refrigerate.

6 mint leaves, plus 1 sprig for garnish
5 ounces dried lime tea, chilled (see recipe)
1 1/2 ounces rum
1 dash Angostura bitters

Steps:

  • Muddle the mint leaves in the bottom of a cocktail shaker with just a splash of the dried lime tea. Add the rest of the tea plus the rum and bitters, shake well, then strain into a tall glass and fill with crushed ice. Garnish with the mint sprig and serve with a straw.
