Prize-Winning Chili image

I won a chili cook-off with this recipe in Tennessee in 1996. My family and friends all love this chili. It is requested for all family get-togethers. Great dish for a chilly day.

1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, chopped
1 small jalapeno pepper, finely chopped
1 pound hot Italian sausage
1 pound ground beef
1 tablespoon chili powder
½ teaspoon cayenne pepper
½ teaspoon salt
2 (15 ounce) cans pinto beans, undrained
1 (28 ounce) can diced tomatoes
1 cup water

Steps:

  • Heat olive oil in a large stock pot over medium heat; cook and stir onion, bell pepper, and jalapeno pepper until onion is translucent, about 10 minutes. Add sausage and ground beef; continue to cook and stir until meat is browned and crumbly, about 7 minutes. Drain and discard grease.
  • Season meat mixture with chili powder, cayenne pepper, and salt. Add pinto beans, tomatoes, and water and bring to a simmer over medium heat. Reduce heat to medium-low and continue to simmer for 1 hour.

My husband and I created this recipe together. He won a chili cook-off with this recipe at work. We always use venison, but you can use ground beef or turkey.

1 lb ground beef or 1 lb ground turkey
2 onions, diced
1 green pepper, diced
1 tablespoon jalapeno, finely chopped
1 (14 ounce) can Mexican-style tomatoes (like Rotel)
2 (8 ounce) cans tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika (smoked if you can find it)
1 (14 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 cup water
sour cream
cheddar cheese
green onion

Steps:

  • In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.
  • Add the tomatoes, tomato sauce, cumin, chili powder, salt, cayenne, paprika and 1 cup water. Mix to combine.
  • Add the kidney beans and black beans, mix and bring to a simmer. Cover and cook for 1-2 hours.
  • Serve with desired toppings.

1 Green bell pepper -- f/chopped*
1 celery stalk -- finely chopped*
2 Garlic cloves -- minced*
2 teaspoons oil
4 pounds lean ground beef
2 Stewed tomatoes -- 14 1/2oz cns
1 tomato sauce -- 15-oz can
1 Tomato paste -- 6-oz can
1/4 cup green chili salsa
1 Jalapeno -- finely chopped
3/4 cup chili powder
1 4-oz can diced green chilies
1/2 cup Water
1 teaspoon Salt

Steps:

  • In Dutch oven, saute first four starred ingredients in hot oil until tender. Add meat, 1 pound at a time, stirring until meat loses redness. Drain; add water. Add remaining ingredients, stirring after each addition. Simmer 2 1/2 to 3 hours, stirring frequently. Season to taste with garlic salt and pepper, if desired.

I won a chili cookoff with this recipe. What's special about it? I don't know. I just made it the way I always do, with the exception of noting the ingredient amounts and method in case anyone wanted it. It's not really a "secret" chili. It is just made the way I like chili. Oh, and if you're one of my Texas relations, don't call me on the phone about the can of beans. You know I like them, so give it up. They're "optional." TNT OOPS! Lazyme is correct, the green chiles go in at step 2 with the "wet ingredient add" (if you sub any wet ingredient besides tender cooked beans, add it there at step 2). 3 lbs chuck roast, boneless or 3 lbs tri-tip roast, cut into bite-sized pieces
2 -3 tablespoons lard or 2 -3 tablespoons oil
2 onions, chopped
6 -9 garlic cloves, minced (depending on size)
2 (4 ounce) cans chopped green chilies
1 (6 ounce) can herdez mild green chili salsa
20 ounces tomato puree
16 ounces petit diced tomatoes
32 ounces beef broth
1 tablespoon tomato paste
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 teaspoons cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/4 cup chili powder
1 (16 ounce) can chili beans, in sauce (optional)

Steps:

  • In a large pot, cook the onions in lard (or oil) until translucent. Add the garlic and beef and cook over high heat until beef is seared and brown.
  • Add the green chilies, salsa, tomato puree, diced tomatoes, broth, tomato paste, salt and pepper, stirring until tomato paste blends in to the mixture.
  • Reduce heat, add half the cumin, onion powder, garlic powder, cayenne pepper and chili powder and simmer over low heat until beef is tender, adding a little more beef broth or water if your fire ends up to high and the chili gets too thick.
  • Add the remaining spices when the beef is tender and check for saltiness adding some more if needed (estimated cook time depends on the tenderness of your beef). Stir in the beans at this point if you like them and simmer for 10-15 minutes more.
  • Adjust spiciness if you like, before serving.
