1 -1 1/2 lb tilapia fillet (or cod, haddock, or any other mild fish)
4 tablespoons butter, melted
2 teaspoons lemon juice
1 -2 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon thyme
1 tablespoon chopped parsley
1/3 cup breadcrumbs

Steps:

  • Preheat oven to 425. Lightly grease or spray a 13" x 9" (or larger) baking dish.
  • Rinse fish filets and pat dry. Set them in a single layer in the prepared baking dish.
  • In a small bowl, combine melted butter, lemon juice, garlic, sugar, pepper, thyme and parsley. Stir well. Pour evenly over fish filets.
  • Sprinkle with the breadcrumbs.
  • Bake at 425 for about 20 minutes or until filets are opaque and flakey.

4 to 6 large speckled trout fillets or other whitefish*
1 tablespoon olive oil
1/4 cup unsalted butter, melted
1/2 teaspoon kosher salt, or to taste
1/4 teaspoon freshly cracked black pepper
1 teaspoon Old Bay seasoning
1 teaspoon Creole or Cajun seasoning (like Slap Ya Mama) {affil link}, or to taste, optional
Zest of one lemon
1 tablespoon sliced green onion
2 teaspoons chopped fresh parsley
1 lemon, cut into wedges

Steps:

  • Preheat oven to 375 degrees F.
  • Brush a foil lined baking sheet with olive oil. Drain fish, pat dry and place onto the baking sheet.
  • In a small bowl, combine the salt, pepper, Old Bay and Cajun seasoning; set aside.
  • Mix 1 tablespoon of olive oil with melted butter. Brush trout with the half of the olive oil butter blend, reserving the remainder. Sprinkle seasoning mixture evenly on top.
  • Use a microplane to zest lemon on top of the fish and bake, uncovered, at 375 degrees F for approximately 8 to 10 minutes per inch of thickness, or until fish is mostly opaque throughout and flakes easily, taking care not to overcook.
  • Test in the thickest part of the fillet with the tip of a sharp knife. Actual time will be dependent on the size and thickness of the fillets.
  • Drizzle reserved butter mixture on top of each fillet, sprinkle with green onion and parsley; serve immediately.

LOUISIANA FISH CREOLE

1 pound boneless fish fillets (about 1 inch thick)
1/4 cup soy sauce
1 cup chopped onion
1 cup diced celery
1 clove garlic, minced
1/8 teaspoon ground red cayenne pepper
1 tablespoon vegetable oil
1 package (10 ounce size) frozen cut okra or green peas*, thawed
1 pound fresh tomatoes, coarsely chopped

Steps:

  • Cut fish into 1 x 1-1/2-inch cubes; place in small bowl. Add soy sauce and turn pieces over to coat well; let stand 10 minutes. Meanwhile, saute onion, celery, garlic and red pepper in hot oil in large skillet or Dutch oven until onion is transparent. Stir in okra and tomatoes; bring to boil. Reduce heat; cover and simmer 5 minutes. Stir in fish mixture. Bring to boil; cover and simmer 5 to 8 minutes, or until fish flakes easily with fork. Serve immediately. * If using peas, add to tomato mixture with fish.

1/2 cup lemon juice

Steps:

  • Mix the seasonings in a small bowl.
  • Put the fish portions into 2 greased 11x14 pans.
  • Sprinkle the lemon juice over each pan; then sprinkle with seasoning.
  • Melt the margarine and drizzle it over fish.
  • Bake in 350 oven 20 minutes or until fish flakes.

Steps:
