HEALTHIER MONKEY BREAD I
Less sugar, butter instead of margarine, and refrigerated pizza dough instead of biscuits - but it still adds up to a delicious cinnamon-y treat! You'll love this healthier monkey bread.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch tube pan.
- Mix white sugar and cinnamon in a plastic bag. Cut pizza dough into 1 1/2-inch pieces. Shake 6 to 8 pieces of dough in the sugar-cinnamon mix. Arrange pieces in bottom of prepared pan. Continue until all dough pieces are coated and placed in pan. Arrange nuts and raisins in and among dough pieces.
- Melt butter and brown sugar in a small saucepan over medium heat. Boil for 1 minute. Pour over dough; let rise for 30 minutes.
- Bake in preheated oven until bread is golden brown, about 35 minutes. Let bread cool in pan for 10 minutes, then turn out onto a plate. Pull apart pieces of bread to eat.

- Weigh or lightly spoon flours into dry measuring cups; level with a knife. Combine flours, salt, and yeast in the bowl of a stand mixer with dough hook attached; mix until combined. With mixer on, slowly add 1 cup milk, juice, honey, and 2 tablespoons butter; mix dough at medium speed 7 minutes or until smooth and elastic. Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. (Gently press two fingers into dough. If indentation remains, the dough has risen enough.)
- Combine granulated sugar, brown sugar, and cinnamon in a shallow dish. Combine 3 tablespoons milk and 2 tablespoons butter in a shallow dish, stirring with a whisk.
- Punch dough down; divide into 8 equal portions. Working with one portion at a time (cover remaining dough to prevent drying), roll into an 8-inch rope. Cut each dough rope into 8 equal pieces, shaping each piece into a 1-inch ball. Dip each ball in milk mixture, turning to coat, and roll in sugar mixture. Layer balls in a 12-cup Bundt pan coated with cooking spray. Repeat procedure with remaining 7 dough ropes. Sprinkle any remaining sugar mixture over dough. KID-FRIENDLY MONKEY BREAD
Yummmmmy kid-friendly dish. When I was a child, my mom always let my sister and I make this with her and it was fun. As an adult, I still enjoy making it.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
- Mix together sugar and cinnamon in a medium bowl. Tear each biscuit in 1/2, then roll each piece into a ball. Roll each ball in the sugar-cinnamon mixture until completely covered. Place in the prepared pan, filling the pan up to 3/4 full to allow biscuit balls to expand.
- Combine butter, vanilla extract, and nutmeg in a small bowl, mix in some of the leftover sugar-cinnamon mixture, and pour over the biscuit balls.
- Bake in the preheated oven until golden brown and no longer doughy in the center, about 45 minutes. Cool in the pan for 5 to 10 minutes, then flip pan onto a serving dish to release the monkey bread.

HEALTHIER WHOLE WHEAT, LOW SUGAR/FAT MONKEY BREAD
This is a lower fat, calorie, and sugar version of an old favorite. Enjoy! The nutrition label does not recognize the sugar-free caramel. Mine that I use is 90 cals/2T. When you add 3/4 c of that and divide it by 16, your serving moves up to 176 calories/serving. Not bad at all! :)

Steps:
- Mix the first 7 ingredients together and knead about 8 times on a floured surface. Roll dough into 2 strips.
- Refrigerate overnight.
- The next morning preheat oven to 350 degrees.
- Mix cinnamon and sugar together.
- In a separate bowl cut dough into small 2/2in pieces.
- Pour cinnamon sugar on top of dough and mix.
- Mix carmel and vanilla in separate bowl.
- Pour on top of cinnamon sugar biscuit pieces.
- Pour into a greased bundt pan and bake 40-45 minutes.
- Cool 10 minutes before eating.

- Line a 5-qt. slow cooker with a piece of aluminum foil, letting ends extend up the sides. Grease foil., Combine the sugars, cinnamon and allspice in a large bowl; sprinkle 3 tablespoons sugar mixture in bottom of prepared slow cooker. Add biscuit pieces to bowl; toss to coat. - In a large bowl, combine bread flour, sugar, and butter. Use your hands to mix, until the mixture is the texture of breadcrumbs.
- In a small jar, stir together the milk, yeast, and eggs. Pour three quarters of the liquid mixture on top of the dry ingredients and mix together. Add liquid, a tablespoon at a time, until the mixture forms a soft dough.
- Turn the mixture out onto a large, floured surface and knead for 10 minutes.
- Form the dough into a ball and place it in a clean mixing bowl covered with cling film. Set in a warm, dry place and let it rise for one hour.
- Combine the raisins and the hot tea in a small bowl and let the mixture sit for 45 minutes, then drain the raisins.
- When the dough has risen, divide it into 16 equal sized pieces. Flatten each piece into a disk about 8cm in diameter, and place a teaspoon of cream cheese and a teaspoon of raisins in the centre. Form the disk into a ball, with the sultanas and cream cheese in the centre.
- Roll each ball in caster sugar, to coat. Place stuffed balls of dough into a cast iron skillet or round baking dish and cover with cling film. Set in a warm, dry place and let it rise for one hour.
- Bake in a 350°F/180°C fan oven/gas mark 6 for 45 to 50 minutes, until the bread is cooked through and golden on top.
- While the bread cooks, make the glaze. Stir together icing sugar, cream cheese, and milk to combine. If the mixture is too dry, add more milk a tablespoon at a time.
- Drizzle it all over the monkey bread.
