2 tbsp soy sauce (low-sodium if needed)
2 tbsp lime or lemon juice
2 tsp ginger, grated
2 cloves garlic
3 dates, pitted
½ tsp cayenne or red chili flakes
½ cup water (120 ml)

Steps:

  • Add all ingredients to a blender jar, starting with only half the amount of water. Blend to create a smooth consistency, adding more of the water if needed.
  • Try some of the peanut butter sauce and adjust with more cayenne, soy sauce or lime juice as needed.
  • Serve as a thick dip for raw veggies or crackers (topped with crushed peanuts) or thin it out more to pour over Pad Thai salad, Buddha bowls, Asian noodles and tofu dishes.
  • This Thai peanut butter sauce should be stored in an airtight container in the fridge where it keeps well for up to a week. It can also be frozen and thawed at your convenience.

3 tablespoons lime juice
3 tablespoons canola oil
2 teaspoons reduced-sodium soy sauce
2 teaspoons fish sauce, (see Ingredient Note)
½ teaspoon crushed red pepper
1 pound chicken tenders
2 tablespoons smooth natural peanut butter
2 tablespoons 'lite' coconut milk, (see Tip)
1 tablespoon lime juice
2 teaspoons reduced-sodium soy sauce
1 teaspoon brown sugar
½ teaspoon crushed red pepper, or to taste

Steps:

  • To prepare chicken: Whisk 3 tablespoons lime juice, oil, 2 teaspoons soy sauce, fish sauce and 1/2 teaspoon red pepper in a shallow dish until combined; add chicken and turn to coat. Let marinate in the refrigerator for 15 minutes.
  • To prepare peanut sauce: Whisk peanut butter, coconut milk, lime juice, soy sauce, brown sugar and red pepper until smooth.
  • Preheat grill to high. Thread each chicken tender onto a wooden skewer. Grill until cooked through and no longer pink in the middle, about 3 minutes per side. Serve warm or chilled with Spicy Peanut Sauce.

I created this recipe as an answer to the high fat peanut sauces in restaurants and in most recipes. It is a touch sweeter than most, but I find the soy sauce and the cayenne dampens the sweetness considerably.

1/2 cup better n' Peanut butter low-fat peanut butter
1/2 cup hot water
1 tablespoon cornstarch
3 tablespoons soy sauce
1 tablespoon pureed ginger
1 tablespoon crushed garlic
5 scallions, sliced
5 sprigs fresh basil, chopped
1/2 teaspoon cayenne

Steps:

  • Mix peanut butter with hot water in a small bowl until smooth.
  • Add spices, soy sauce and cornstarch and whisk to remove any lumps.
  • Steam-fry veggies of choice, and add the peanut sauce when stirfry is half done.
  • Bring to a boil, then reduce to a simmer until veggies are done and the sauce thickens.
  • Serve!

Steps:
