CRUSTLESS LOW-CARB QUICHE
This easy Crustless Low Carb Quiche is light, fluffy, and absolutely delicious! You only need 7 ingredients to whip up this recipe for the perfect breakfast, brunch, or week of meal prep.

Steps:
- Preheat your oven to 375F (190°C). Grease a 9 inch (23 cm) tart pan with butter and set aside.
- Cook the bacon in a pan until it's slightly crispy.
- Chop the bacon, red onion, and green onion.
- Combine the milk and eggs in a large mixing bowl. Whisk together well.
- Add the remaining ingredients and seasoning to the egg and milk mixture. Stir to combine.
- Pour the mixture into the prepared tart pan. If necessary, stir to make sure the fillings are evenly distributed throughout the quiche batter.
- Bake the quiche for 45 - 50 minutes until golden and set.
- Remove from the oven and allow to cool for at least 30 minutes before slicing and serving.

- Preheat the oven to 400 degrees F (200 degrees C). Line a large rimmed baking sheet with foil.
- Place slices of bacon on the prepared baking sheet.
- Place bacon in the preheated oven and bake until partially cooked, but still pliable, about 8 minutes. Remove from the oven, and reduce temperature to 350 degrees F (180 degrees C). Let bacon rest until cool enough to handle.
- Spray 6 cups of a muffin pan with cooking spray.
- Whisk eggs together in a medium bowl. Wrap a slice of bacon around the inside of each prepared muffin cup. Divide Cheddar cheese amongst the 6 muffin cups and top with beaten egg.
- Bake in the oven until eggs are set, 13 to 15 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
- Cook and stir bacon in a skillet over medium-high heat until crisp, about 10 minutes. Transfer bacon to a bowl, reserving bacon grease in the skillet.
- Combine spinach, mushrooms, green bell pepper, onion, salt, and ground black pepper to taste in the skillet with bacon grease; cook and stir until softened, about 5 minutes. Transfer vegetable mixture to a bowl and place in the freezer to cool, about 5 minutes.
- Whisk eggs and cream together in a bowl; stir in 1 cup Colby-Jack cheese, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, onion powder, and garlic powder. Add cooled vegetables and bacon to egg mixture and mix gently.

LOW-CARB BACON AND EGG QUICHE
I'm trying to go low-carb, and I found this recipe on Recipegal.com. It's so easy to make and tastes great! We use cheddar as nobody likes swiss cheese but me. It originally calls for a quiche pan, but I just used a 9-inch pie pan with great results! I also sprayed it with non-stick canola cooking spray, instead of the butter as the recipe originally called for.

- Grease a 9" pie pan.
- In blender, combine eggs, milk, Bisquick, melted butter, and pepper.
- Blend for 15 seconds or until mixed well.
- Pour the egg mixture into the prepared pan.
- Sprinkle with bacon and cheese; gently press it below the surface with a fork.
- Bake at 350 degrees Fahrenheit for 30 minutes or until a knife inserted halfway between the center and the edge comes out clean.
- Cool 10 minutes.
- Slice and serve.
