1 ½ cup chopped romaine lettuce
1/2 cup cooked taco meat
1/4 cup shredded cheddar cheese
1/4 cup guacamole
1/4 cup sour cream
1/4 cup chopped cherry tomatoes
1/8 cup sliced black olives
2 Tbsp chopped onion

Steps:

  • Add ingredients to a plate
  • All measurements are to taste and optional.
  • If you don't like onion, don't add it.
  • If you really love guacamole, add extra, etc

1 pound ground beef
1 small onion (diced)
3 cloves garlic (minced)
1 tablespoon chili powder
1 teaspoon cumin
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon paprika
1 teaspoons sea salt
1 teaspoon black pepper
5 ounces spring mix
2 medium tomatoes
2 medium avocados
4 ounces cheddar cheese (shredded)
8 Parmesan crisps (homemade or store bought)
salsa
sour cream

Steps:

  • In large skillet, brown ground beef with onion and garlic.
  • Drain off an fat, then mix in remaining seasonings. Set aside.
  • For each salad, add 1.25 ounces spring mix, half of a diced tomato, half of a chopped avocado, 1/4 of the meat mixture, and 1 ounce shredded cheese. Top each salad with 2 Parmesan crisps broken into pieces. Add salsa and sour cream if desired.

1 clove garlic
1 tablespoon chili powder
Salt, to taste
Pepper, to taste
Spring mixture
1 medium tomato, chopped
1 avocado, diced
1 1/2 cups cheese, grated
1/2 cup sour cream
1/2 cup salsa

Steps:

  • Cook beef in skillet with chili powder, white part of onions, garlic and salt and pepper. Mix together the lettuce, tomato, avocado, green onion, and olives. Add the meat and cheese and toss it together. Top with salsa and sour cream.

1/3 cup cheddar cheese
parchment paper

Steps:

  • Place 1/3 cup of cheese in thin layer on parchment paper.
  • Microwave on high for one minute, or until cheese is bubbly.
  • While the cheese is still flexible with parchment paper still attached, bend the cheese over a round object to give it a taco shell shape.
  • The smaller in diameter the object is, the closer to a normal taco shell shape you will have.
  • Let the cheese cool while around the object.
  • When it has cooled, peel it from the parchment paper.
  • Use this to make tacos, with normal fillings such as taco seasoned meat, lettuce, tomatoes, cheese, and sour cream, or you can also make smaller version of these shells to serve as low carb chips.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper or silicone mats.
  • Wrap the handle of a wooden spoon with aluminum foil. Balance between 2 tall cans.
  • Spread Cheddar cheese on the prepared baking sheets into four 6-inch circles placed 2 inches apart.
  • Bake in the preheated oven until cheese melts and is lightly brown, 6 to 8 minutes. Cool for 2 to 3 minutes. Lift with a spatula and drape over the wrapped wooden handle; cool until set, about 10 minutes.

1 lb ground beef
1 tablespoon taco seasoning
1 head iceberg lettuce, chopped
1 tomatoes, diced
1 avocado, diced
2 cups shredded cheddar cheese
1 cup salsa
1 cup sour cream
1 cup ranch dressing

Steps:

  • Brown the hamburger; drain off the fat. Stir in the seasoning mix. Allow to cool.
  • Place lettuce, tomato, avocado and cheese in a large bowl.
  • Blend the salsa and sour cream together (I use a food processor as we like ours smooth).
  • Add ground beef to the bowl.
  • Toss salad with desired amount of dressing and serve.

Cook for about five minutes until the onions become clear; add the red pepper and continue cooking for approximately three more minutes. Then add the shredded meat, and and mix everything well with a wooden spoon. Cook until the meat turns brown.
  • Meanwhile, mix all the condiments in a small bowl, to make a keto taco seasoning. If you wish you can add a pinch of chili powder. Sprinkle the ground beef with the seasoning and the chopped cilantro, mix well and cook covered for 15 minutes more. Then turn off the stove and leave the meat there to keep the heat.
  • You can make the cauliflower rice in two or three different ways. You can either: (1) Cut into small florets and process in the food processor to obtain pieces similar to the size of a rice. (2) Cut the cauliflower into three or four large pieces and grate it with a kitchen grater. Discard the stems. (3) On a cutting board, with a sharp knife, cut very thin pieces of cauliflower until the desired size is obtained.
  • When you have the cauliflower rice, melt the butter in a pan and sauté the cauliflower until it is a little soft. Finally, sprinkle with the chopped coriander and reserve to serve.
