BIG BAD BURGERS
LOVE THESE! I chose all my favorite ingredients to create an explosion of flavor in every bite. These are burgers I'm known for. An explosion in your mouth.

Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Melt butter in a skillet over medium-low heat. Cook and stir onion and mushrooms in melted butter until the onions are very tender and beginning to brown, 10 to 15 minutes. Sprinkle brown sugar over the mixture and continue cooking until the onions caramelize, 5 to 10 minutes more; remove from heat and set aside.
- Mix ground beef, egg, bread crumbs, horseradish, steak sauce, Worcestershire sauce, garlic, dried onion, salt, and black pepper in a bowl; shape into 4 patties about 6 inches wide and 1/2 inch thick.
- Cook burgers on preheated grill until completely browned, about 3 minutes per side. Reduce heat to medium and cook burgers another 3 minutes per side, topping each burger with a slice of pepperjack cheese for the last minute of cooking.
- Top each burger with about 1/4 of the mushroom and onion mixture, 3 pieces of bacon, and 1 tablespoon guacamole to serve.

GRILLED CRAB BURGERS

Steps:
- Mix crabmeat, 1 cup breadcrumbs, green onions, 2 tablespoons mayonnaise and Old Bay seasoning in medium bowl. Season with salt and pepper. Mix in egg yolk. Form mixture into four 2 1/2-inch-diameter patties. Place remaining 1/2 cup breadcrumbs in shallow bowl. Dip patties into crumbs, coating completely. Mix remaining 2 1/2 tablespoons mayonnaise with mustard in small bowl to blend.
- Prepare barbecue (medium-high heat) or preheat broiler. Brush barbecue rack with oil. Grill burgers until golden brown, about 4 minutes per side. Grill bread slices until lightly toasted, about 1 minute per side. Spread toasts with mustard dressing. Top each with a burger.

Steps:
- Heat oil in a large stockpot over medium heat.
- Add onion and garlic and saute for a few minutes, stirring often.
- Add celery, carrot, potatoes and peppers and saute until slightly softened, about 5 minutes (NOTE: if potatoes stick, add a little more oil).
- If you prefer thicker chowder, add the flour now and stir constantly for 2 minutes until cooked
- Add corn, broth and milk and Bay leaf and bring to a simmer.
- Simmer over medium-low heat for about 20-25 minutes or until vegetables are softened.
- Gently stir in can of crabmeat and Old Bay seasoning.
- Salt, Pepper and butter to taste.

Very easy and tasty alternative to the hamburger. I serve these on whole wheat buns with tartar and/or cocktail sauce.
