Number Of Ingredients 8

1 angel food cake mix, plus ingredients to prepare
1 cup powdered sugar, divided (1/4 and 3/4)
8 ounces light cream cheese, room temperature
1 1/2 cups heavy cream, 35%
1 teaspoon vanilla
1 1/2 cups fresh strawberries, diced
1 1/2 cups fresh blueberries
1 1/2 cups fresh raspberries

Steps:

  • Preheat oven to 350°F and line the bottom of a 10x15x1" rimmed baking sheet with parchment paper (make sure that it lays flat on the bottom). Do not grease the pan.
  • Prepare cake mix according to package directions. Pour into prepared pan and bake for about 20 minutes, until the top is golden and the edges start to crack. *NOTE: It will rise up in the pan significantly, even over the top. But even though it gets high it should not flow over -- if you're concerned, slip an extra baking sheet or a piece of foil underneath just in case.
  • Loosen cake from the edges of the pan while it's still warm -- it's going to be a little sticky, like angel food cake is, but it will come away easily.
  • Spread out a clean kitchen towel and sprinkle evenly with ¼ cup powdered sugar. Flip warm cake out onto the towel, peel off the parchment paper and immediately roll up starting at the short end, WITH the towel inside. Let cool completely (at room temperature for 1-2 hours or pop it in the fridge or freeze momentarily if you're impatient like me! You don't want it hot inside when you add your filling.).
  • In a large bowl, beat the cream cheese with an electric mixer until smooth. Add ¾ cup powdered sugar, vanilla and cream and beat on low until combined, then on high for 3-4 minutes until fluffy and stiff peaks form.
  • Unroll cooled cake (you can just leave it laying on the towel) and spread with half of the filling and top with half of the berries. Carefully roll back up (this time without the towel!) and place on a serving plate. Spread top and sides with remaining filling and top with remaining berries. Serve immediately (leftovers are best eaten within 24 hours).

4 cups sliced strawberries
3/4 cup sugar, divided
2 tablespoons milk
8 ounces cream cheese, softened
1 (10 inch) round angel food cake
3 tablespoons triple sec (orange-flavored liqueur) or 3 tablespoons orange juice, divided
1 cup whipping cream, whipped very firm with 2 tbsp sugar
2 tablespoons sliced almonds

Steps:

  • Combine strawberries and 1/4 cup sugar in a small bowl; cover and let stand 1 hour. Combine 1/2 cup sugar, milk, and cream cheese in a medium bowl; beat at medium speed of mixer til smooth.
  • Cut cake horizontally into 3 layers using a serrated knife; place bottom layer, cut side up, on a serving plate. Brush with 1 tbsp liqueur (or orange juice), and spread half of cream cheese mixture over cake. Spoon one third of strawberries over cream cheese mixture using a slotted spoon. Repeat layers, ending with cake and liqueur (or orange juice). Spread whipped cream over top and sides of cake. Cover; chill 30 minutes.
  • Arrange remaining strawberries on top of cake. Sprinkle with almonds, and serve.

1 (10 inch) angel food cake (broken into small pieces)
2 (8 ounce) packages cream cheese, softened
1 cup sugar (can use more sugar if desired for a sweeter taste)
1 (8 ounce) container cool whip frozen whipped topping, thawed
1 quart fresh strawberries, sliced
1 (18 ounce) jar strawberry glaze
Cool Whip or whipped cream, for topping

Steps:

  • Prepare a 13 x 9-inch baking dish.
  • Sprinkle the broken cake pieces in the prepared baking dish.
  • In a medium bowl beat softened cream cheese and sugar until light and fluffy, then fold in the thawed Cool Whip topping.
  • Mash the cake down using your hands, then spread the cream cheese mixture over the cake.
  • In a bowl combine the strawberries and glaze; mix until the strawberries are well coated.
  • Spread over the cream cheese layer, then dollup more Cool Whip topping over the strawberry/glaze mixture.
  • Chill until serving.
  • Delicious!

1 cup cake flour
1 1/2 cups egg whites (12)
1 1/2 teaspoons cream of tartar
1 cup granulated sugar
1 1/2 teaspoons vanilla
1/2 teaspoon almond extract
1/4 teaspoon salt
8 ounces fat free cream cheese
12 ounces fat-free cool whip
3/4 cup sugar
2 cups strawberries

Steps:

  • Heat oven to 375ºF.
  • Mix powdered sugar and flour; set aside.
  • Beat egg whites and cream of tartar in large bowl with electric mixer until foamy.
  • Beat in granulated sugar, 2 tablespoons at a time, on high speed, adding vanilla, almond extract and salt with the last addition of sugar.
  • Continue beating until stiff meringue forms.
  • Sprinkle sugar-flour mixture, 1/4 cup at a time, over meringue, folding in just until sugar-flour mixture disappears. Push batter into ungreased food cake pan.
  • Bake 30 to 35 minutes. This is a Betty Crocker recipe for angel food cake, you can use the boxed mix as well.
  • Add cubed angel food cake in cream cheese mixture and stir until well coated.
  • Put the mixture in a 9x12-inch cake pan and cover with sliced fresh strawberries.
  • Refrigerate.
