Easiest Sugar-Free Keto Peanut Butter Fudge image

With only 4 ingredients and 1.7 net carbs per piece, this easy keto peanut butter fudge will be ready in no time at all. Besides being sugar-free it's so rich, creamy, delicious and perfect for all of your guests.

1 jar natural creamy peanut butter (no added sugar, no added oil)
2 tsp vanilla
6 tbsp butter
¾ cup powdered swerve
2 tbsp chopped dry roasted peanuts

Steps:

  • In a medium saucepan add the peanut butter, and turn onto medium heat.
  • Add butter and vanilla. Mix ingredients together, and stir continuously so it doesn't stick to the pan.
  • Take off the burner and add the powdered swerve. Stir it together well.
  • Line an 8×8 pan with parchment paper.
  • Pour the fudge into the pan.
  • Add chopped peanuts to the top.
  • Put in the fridge for about 30-60 minutes.
  • Once the fudge has finished chilling, use a large chef's knife to cut into 36 pieces.
  • Keep stored in an airtight container in the fridge for a few weeks.

1 cup unsweetened peanut butter
1 cup coconut oil
1/4 cup unsweetened almond milk
optional: pinch salt (only if your peanut butter is unsalted)
vanilla liquid stevia (optional or sweetener of choice to taste)
1/4 cup unsweetened cocoa powder
2 tablespoons coconut oil (melted)
2 tablespoons Swerve confectioners (or sweetener of choice)

Steps:

  • Slightly melt or soften the peanut butter and coconut oil together in the microwave or low heat on the stove.
  • Add this to your blender and add the rest of the ingredients.
  • Blend until combined.
  • Pour into a parchment lined 8 by 5 loaf pan.
  • Refrigerate until set, about 2 hours.
  • If using chocolate sauce, whisk ingredients together and drizzle over fudge after it's been set.
  • Best if kept refrigerated.

1 cup unsalted butter
1 cup peanut butter
4 ounces cream cheese
2 cups Splenda granular, sugar substitute
4 tablespoons vanilla protein powder (4 scoops)

Steps:

  • Melt the butter and peanut butter in the microwave on high for 2 minutes. Stir. Microwave for another 1 minute
  • Remove and stir in the cream cheese until completely dissolved.
  • Stir in the Splenda and then stir in the Protein Powder.
  • Grease a 8 x 11 glass casserole.
  • Pour in the dish. Put in the refrigerator until cool.
  • To speed up this process place in the freezer until cool.

  • Melt butter in sauce pan.

  • Add vanilla and splenda to peanut butter mixture and stir to combine with a wooden spoon.
  • Pour into an 8 x 8 pan that has been either buttered, Pam'ed or lined with wax paper
