This peach dessert is somewhere between a buttery cake and a luscious cobbler.

2 (15.25-oz.) cans of sliced peaches in syrup
1 box yellow cake mix
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup butter, melted

Steps:

  • Preheat oven to 375°F. In a 13 x 9-in. baking dish, add 1 can of peaches with the syrup. Drain the second can. Add the peaches to the baking dish, and discard the additional syrup.
  • Mix together cake mix, salt, cinnamon, and nutmeg. Sprinkle evenly over peaches. Pour melted butter evenly over the surface of the cake mix. Bake until golden brown and bubbly, 55 minutes to 1 hour.

1 (18.25 ounce) box yellow cake mix
¾ cup butter, sliced into pats, or more if needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with margarine.
  • Pour peaches and heavy syrup into the prepared baking dish. Spread cake mix evenly over peaches. Arrange butter pats in even rows on the cake mix.
  • Bake in the preheated oven until top of cake is golden brown, 35 to 40 minutes.

1 (6 ounce) package peach flavored Jell-O® mix
1 (18.25 ounce) package yellow cake mix
½ cup butter
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place peaches in bottom of 9x13 cake pan. Sprinkle dry peach gelatin over peaches. Sprinkle dry cake mix over gelatin. Cut up butter and distribute over cake mix. Pour 1 cup of reserved peach juice and 1/2 cup of water over the top.
  • Bake in the preheated oven for 60 minutes, or until the top is browned.

butter-flavored cooking spray
1 cup sifted cake flour
3/4 cup sugar substitute, such as splenda (or One Spoon)
1/2 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons canola oil
1 large egg, separated
1/4 cup egg substitute
1/4 cup water
3/4 teaspoon vanilla extract
1/2 orange, zest of
1/2 cup egg white, at room temp. (whites of 4 lg. eggs or use refrigerated egg whites)
1/4 teaspoon cream of tartar
1 1/2 cups sugar-free fat-free frozen whipped topping
1 lb fresh peach, peeled and sliced thin, covered with water
1 tablespoon lemon juice, until ready to use

Steps:

  • Preheat oven to 325ºF.
  • Lightly coat a 9-in. cake pan with cooking spray. Place the flour, sugar substitute, baking powder, and salt in a mixing bowl. Mix together, then make a well in the middle. Beat together oil, egg yolk, egg substitute, water, vanilla, and orange zest. Pour into flour mixture and blend well. In a large bowl, combine the 1 egg white with the additional 1/2 cup egg whites. Beat the egg whites and cream of tartar until the whites have stiff peaks. Gently fold into the flour mixture.
  • Place in the prepared cake pan and bake 35-40 minutes until golden brown. Turn out onto rack to cool completely. Using a serrated knife, slice the cake in half horizontally.
  • Cover with 3/4 of the whipped topping. Place the peaches, leaving a few slices for decoration, on top and cover with top of cake. Decorate the center of the cake with rosettes of whipped topping and decorate with remaining peach slices. Refrigerate until ready to serve. Makes 10 servings.

2 cups peach slices in juice, drained
1/4 cup reduced-calorie margarine
1/4 cup sugar
2 tablespoons sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees. Pour the melted margarine into an 8 x 8 x 2" baking pan, spreading to coat bottom and sides of pan.
  • Arrange peaches in bottom of pan. Place the remaining margarine in food processor; process 10 seconds; add sugar; pulse 20 seconds. Add eggs, vanilla and almond extracts and 2 tablespoons water; process 10 seconds. Scrape down sides of work bowl; add remaining ingredients. Pulse until batter thickens.
  • Spread evenly over peaches.
  • Bake 25 - 30 minutes, until toothpick inserted in center of cake comes out clean. Cool on rack 2 minutes. Loosen around edges with metal spatula and invert onto serving plate.
