Sweet Potato Soufflé image

This creamy sweet potato soufflé is complemented with a crunchy pecan-oat topping for a truly scrumptious side dish. The filling can be made up to five days ahead, so you just have to top it and bake it when it's time. Whip up this healthy sweet potato soufflé recipe for Thanksgiving or any other special occasion.

3 pounds sweet potatoes, peeled and cut into chunks
1 cup old-fashioned rolled oats (see Tip)
½ cup chopped pecans
½ cup packed light brown sugar, divided
1 teaspoon salt, divided
¼ cup unsalted butter, melted
½ cup evaporated milk
2 large eggs
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F. Coat an 11-by-7-inch baking dish with cooking spray. Place sweet potatoes in a large saucepan and add water to cover; bring to a boil over high heat. Reduce heat to medium to maintain a simmer; cook until the sweet potatoes are tender, about 16 minutes. Drain well. Place the sweet potatoes in a large bowl.
  • Meanwhile, combine oats, pecans, 5 tablespoons brown sugar and 1/4 teaspoon salt in a bowl. Stir in butter. Set aside.
  • Add milk, eggs, cinnamon and the remaining 3 tablespoons brown sugar and 3/4 teaspoon salt to the drained sweet potatoes. Beat with an electric mixer fitted with a whisk attachment on medium speed until smooth, about 2 minutes.
  • Spoon the sweet potato mixture into the prepared baking dish; sprinkle evenly with the oat mixture. Bake until golden and bubbly around the edges, 30 to 40 minutes.

3 cups sweet potatoes (fresh or canned)
4 eggs
1 cup Splenda granular
1 cup margarine (2 sticks) or 1 cup butter, softened (2 sticks)
1 tablespoon vanilla
1 cup walnuts, chopped
1/2 cup Splenda brown sugar blend
1/2 cup flour

Steps:

  • Preheat oven to 350°F.
  • Blend first 3 ingredients, 1 stick of margarine or buttter, and vanilla until smooth.
  • Place in casserole dish.
  • Blend last 3 ingredients and 1 stick of margarine or butter.
  • Put on top of sweet potato mixture.
  • Bake at 350F for 30 minutes.

1/2 cup skim milk
1/2 cup egg substitute
1/4 cup firmly packed brown sugar
1 tablespoon melted butter or 1 tablespoon margarine
1 teaspoon vanilla
1/2 teaspoon salt
nonstick cooking spray
1 cup low-fat granola, without raisins
1/2 cup chopped pecans
1/4 cup firmly packed brown sugar
1 tablespoon melted butter or 1 tablespoon margarine

Steps:

  • Peel sweet potatoes and place in large saucepan covered in water.
  • Cook until fork tender; about 20-30 minutes.
  • In a medium mixing bowl, combine first 7 ingredients.
  • Beat with an eclectic mixer until well blended.
  • Spoon mixture into an 8 inch square baking dish coated with cooking spray.
  • In a small mixing bowl, combine granola, pecans and 1/4 cup brown sugar; stir well.
  • Sprinkle over casserole and drizzle with butter.
  • Bake at 350°F for 25 minutes.
