  • Triple wash the greens by adding a little salt and vinegar to the wash water. Cut up collards and add to a large pot. Add chicken stock, water, and liquid smoke if desired. Bring to a boil and cook over medium heat until liquid has reduced to about a quart left. Serve greens with their juices and hot pepper vinegar.

Collard greens are very high in fiber, thiamin, niacin, Vitamins A, C, E, and K, folate, potassium, calcium and manganese. Unfortunately, when they're cooked with salt pork, lard, or other fats the nutritional content just flies out the window. This is my lower fat version.

2 lbs collard greens
1/2 cup yellow onion, chopped
1 garlic clove, minced
1/2 cup jennie-o turkey ham, diced
1 tablespoon extra virgin olive oil
1/2 tablespoon butter
1 -2 cup water
1/2 teaspoon sea salt
cracked black pepper

Steps:

  • In a 3 quart saucepan over medium high heat heat the olive oil just until the scent of the oil starts to bloom.
  • Add the butter and allow to melt in the oil.
  • Add the turkey ham and saute for about 3 minutes or until you start to get those little brown bits on the bottom of the pan.
  • Add the onion and stir with the ham, scraping up the browned bits from the bottom of the pan.
  • Saute for about 2 minutes.
  • Add half of the collard greens and allow to cook down some, about 1 minute or so.
  • Add the last of the collard greens and stir until the greens, onions and bacon are combined.
  • Cook over medium high heat for about 2 minutes.
  • Add 1 1/2 cups water and stir again.
  • Allow to come to a boil over medium heat.
  • Reduce temperature to low and simmer for 30 minutes, adjusting heat to maintain a constant simmer but not let it boil.

"EAT THEM RIGHT OUT OF THE POT" VEGETARIAN COLLARD GREENS



I've been making collard greens for years but my newly vegetarian daughter won't eat them prepared with the usual fatback used for seasoning anymore. I made this recipe up one afternoon and my family has been clamoring for these ever since! Really great flavors that meld together over the entire cooking time. They really are so good. They try to eat them right out of the pot! Serve with some hot sauce and vinegar on the side with your favorite meal. I promise you won't have any leftovers they are so good!

4 cups water, or as needed
¼ cup apple cider vinegar
1 tablespoon seafood seasoning (such as Old Bay®)
1 tablespoon olive oil
1 bunch collard greens, trimmed and cut into 2-inch strips
2 small jalapeno peppers, diced
3 cloves garlic, halved lengthwise, or more to taste
salt and ground black pepper to taste

Steps:

  • Fill a large stockpot halfway with water; add vinegar, seafood seasoning, and olive oil. Bring liquid to a boil.
  • Mix collard greens, jalapeno peppers, and garlic into boiling water; return to a boil. Cover stockpot, reduce heat to medium-low, and simmer until greens are very tender, 3 to 4 hours.
  • Drain water from greens and mash garlic cloves; season with salt and pepper.

These are without a doubt, the best collard greens I have ever eaten (and I have had my share). My grandma used to make this recipe in the summer when her collards in the garden were ready. If you don't like these, you don't like collard greens ... guaranteed!! Add more red pepper flakes if you like it spicy.

2 cups chopped red onion
2 slices bacon, chopped
1 ¼ cups chicken stock
¼ cup apple cider vinegar
2 tablespoons brown sugar
1 pinch red pepper flakes
4 pounds collard greens - rinsed, trimmed and chopped
salt and ground black pepper to taste

Steps:

  • Cook onion and bacon in a large pot over medium-high heat until onions are soft, 5 to 7 minutes. Add chicken stock, vinegar, brown sugar, and pepper flakes and cook and stir until brown sugar has completely dissolved, 2 to 3 minutes.
  • Add 1/2 of the collard greens, reduce heat to medium, and cook until greens are slightly wilted, about 10 minutes. Add remaining greens, toss to combine, and simmer over medium-low heat until tender, about 30 minutes. Season with salt and pepper.

Was looking for a low fat and healthy way to fix Collard greens that DH would eat as all the low fat version we had tried always left him saying its ok although a bit too spice. This recipe has a very slight sweet under tone which I believe comes from the sweet onion and the Sriracha chili sauce.

1 tablespoon butter
1/2 large sweet onion, chopped
1 garlic clove, finely chopped
1 lb frozen chopped collard greens
1/4 cup water
1 chicken or 1 vegetables, flavor boost
1 tablespoon sriracha chili sauce (more or less to taste, found a tablespoon keeps everyone happy and those who want more can)
salt & freshly ground black pepper

Steps:

  • In a large pot over medium heat oil and butter, sauté the onions and garlic until softened, but not browned just about 2 minutes.
  • Add frozen chopped collard greens, water, flavor boost and Sriracha chili sauce. Cover and simmer 6-8 minutes until greens are tender.
  • Serve piping hot with addtional Sriracha chili sauce on the side.
