HAWAIIAN BURGERS

1/2 cup mayonnaise
2 tablespoons teriyaki sauce
1 tablespoon honey
1/4 teaspoon cayenne pepper
8 canned pineapple rings
1 large red bell pepper, cut into rings
1 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
Teriyaki sauce, as needed
4 slices provolone cheese
2 tablespoons butter
4 onion rolls, halved
1/2 red onion, thinly sliced
Green lettuce leaves, for topping

Steps:

  • For the sauce: Stir together the mayo, teriyaki sauce, honey and cayenne in a small bowl. Set aside.
  • For the burgers: Set a grill pan over medium-high heat (you can also use a skillet).
  • Grill the pineapple and bell pepper rings until they have great grill marks on both sides (or brown them in the hot skillet), about 5 minutes.
  • Season the ground beef and form it into 4 equal-size patties. Cook them over medium heat on the grill for 4 to 5 minutes on the first side, then flip them over and add a splash of teriyaki sauce on top of each one. Place a slice of cheese on each patty and let it melt while the burger cooks through, about 4 minutes longer.
  • Butter a griddle or separate skillet set over medium heat. Place the rolls cut-side down and cook until brown, about a minute.
  • Spoon a little bit of the sauce on both sides of the rolls and allow it to soak into the bread. Place the patties on the bottom buns and top each with 2 pineapple slices and some red onion slices, bell pepper rings and lettuce. Top with the top buns and smush it all together. Serve with extra sauce for dipping.

¼ cup chopped onion
½ teaspoon Morton® Coarse Kosher Salt
¼ teaspoon ground black pepper
½ cup prepared sweet-and-sour sauce, divided
⅛ teaspoon hot mustard powder
1 ¼ cups Morton® Coarse Kosher Salt
⅓ cup water
4 slices canned pineapple
1 tablespoon reserved pineapple juice
4 slices green pepper, cut into thin strips (or mixed red and green)
4 roll (blank)s hamburger buns, split and lightly toasted

Steps:

  • Mix ground beef with onion, 1/2 teaspoon Morton® Coarse Kosher Salt, pepper and three tablespoons sweet-and-sour sauce. Shape mixture into 4 patties; set aside. In small bowl, combine remaining sweet-and-sour sauce with hot mustard; set aside. Pour water into a 9-1/2x10-3/4x1-inch baking pan. Sprinkle Morton® Coarse Kosher Salt over water to form a solid layer of salt. Place patties on moistened salt.
  • Bake at 350 degrees F until desired doneness (about 25 minutes for well done, internal temperature of 160 degrees F). Do not turn patties. Transfer burgers to plate and keep warm. Discard salt bed. In skillet, saute pineapple slices and green peppers in reserved tablespoon of pineapple juice. Stir in sweet-and-sour sauce/mustard mixture; cook until pineapples and peppers are hot. Place one pineapple slice on bottom half of bun, then burger. Top with peppers/sweet and sour sauce mixture. Cover with top half of bun; serve.

1 can (8 ounces) sliced pineapple
3/4 cup reduced-sodium teriyaki sauce
1 pound ground beef
1 large sweet onion, sliced
1 tablespoon butter
4 lettuce leaves
4 sesame seed or onion buns, split and toasted
4 slices Swiss cheese
4 bacon strips, cooked

Steps:

  • Drain pineapple juice into a small bowl; add teriyaki sauce. Place 3 tablespoons in a resealable plastic bag. Add pineapple slices; toss to coat and set aside. , Shape beef into four patties; place in an 8-in. square baking dish. Pour the remaining teriyaki sauce mixture over patties; marinate for 5-10 minutes, turning once. , Remove burger patties from marinade; discard marinade. Grill, covered, over medium heat or broil 4 in. from the heat for 6-9 minutes on each side or until a thermometer reads 160° and juices run clear. Meanwhile, in a small skillet, saute onion in butter until tender, about 5 minutes; set aside. , Remove pineapple slices from marinade; discard marinade. Place pineapple on grill or under broiler to heat through. Layer bottom buns with lettuce and onion. Top with burgers, cheese, pineapple and bacon. Replace tops.
