BACON CHEESE STEAK
This is an original recipe from the early days at Luby's. Fresh ground chuck, seasoned with beef broth and spices, is hand-worked to achieve the special texture of this great-flavored classic

Steps:
- 1 Mix bacon, American cheese and sliced green onions in a bowl. Set aside. 2 Place white bread and beef broth in a large mixing bowl. Work together until bread has absorbed all of broth and is soft. Add salt, pepper, ground beef and eggs, then blend together using your hands. Chill mixture well. 3 Divide meat mixture into 8 equal portions. Work each potion into a firm ball, and place between 2 pieces of plastic wrap. Using your hands, flatten ball out into an oval. Refrigerate until ready to cook. 4 Preheat oven to 350*F. In a large skillet on medium high heat, cook two or three steaks 3 minutes on each side. Remove and place on a foil-lined baking sheet. 5 Distribute cheese mixture evenly among cooked steaks. Place steaks in oven about 2 minutes to melt cheese topping.

LUBY'S BACON CHEESESTEAK
Steps:
- Mix all ingredients except American cheese, bacon, and green onions. Divide mixture into eight equal portions and form into a ball. Flat into an oven. Bake in a 350° oven three minutes each side. Distribute bacon cheese mixture evenly. Back to additional minutes.

PHILLY CHEESE STEAK
It's hard to think of Philadelphia without thinking of the cheesesteak, a sandwich containing chopped steak, melted cheese and sometimes peppers and onions. The big cheese steak debate, ongoing between rival restaurants Pat's and Geno's, is whether the steak should be topped with Provolone or American cheese, or canned cheese whiz. Bobby Flay's loaded cheese steak recipe is topped with a melted Provolone sauce, onions, peppers and mushrooms.

Steps:
- Place steak in freezer for 30 to 45 minutes; this makes it easier to slice the meat. Remove the meat from the freezer and slice very thinly.
- Heat griddle or grill pan over high heat. Brush steak slices with oil and season with salt and pepper. Cook for 45 to 60 seconds per side.
- Place several slices of the meat on the bottom half of the roll, spoon some of the cheese sauce over the meat, and top with the mushrooms, onions, and peppers.
- Melt butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk, and cook, whisking constantly until thickened, about 4 to 5 minutes. Remove the mixture from the heat and whisk in the provolone and Parmesan until combined; season with the salt and pepper.
- Heat oil and butter in a large saute pan over high heat. Add the mushrooms and cook until the mushrooms are golden brown. Stir in the parsley and season with salt and pepper.
- Heat butter and oil in a large saute pan over medium heat. Add the onions, season with salt and pepper, and cook slowly until golden brown and caramelized, stirring occasionally, approximately 30 to 40 minutes.
- Heat the oil in medium saute pan over high heat. Add the peppers and cook until soft. Season with salt and pepper.
LUBYS PATTIES
I got this recipe from my mother in law. I had never heard of it before but supposedly lubys used to make something like this. We make this once a week in our family and think its delicous.

Steps:
- cook bacon either fry or microwave when cooked crumble into pieces.
- Make 4 hamburger patties season and cook untill thoroughly done.
- Place hamburgers in a baking dish top with cheese, bacon, and onions.
- Pour cup of beef broth over patties.
- Bake at 350 for 10 min or untill cheese is melted and juice is warm.
- Serve with mashed potatoes, rice, or noodles.
