Luscious Lemon Coffee Cake image

The holidays are a time for special meals, but it's also a season of too little time! That's why this is my favorite coffee cake...year-round. It's so simple to prepare, but it's very flavorful.

Yield 12-16 servings.

Number Of Ingredients 10

TOPPING:
1 cup chopped walnuts
1/2 cup sugar
2 teaspoons ground cinnamon
CAKE:
1 package yellow cake mix with pudding (regular size)
1 package (3.4 ounces) instant lemon pudding mix
1 cup sour cream
4 large eggs, lightly beaten
1/2 cups vegetable oil

Steps:

  • Combine topping ingredients and set aside. In a bowl, combine cake and pudding mixes, sour cream, eggs and oil. Mix on medium speed for 2 minutes. Pour into a greased 13-in. x 9-in. baking pan. Sprinkle half of the topping over batter. Spoon remaining batter over topping and spread evenly. Sprinkle with remaining topping. Bake at 350° for 30-35 minutes or until cake tests done.

2 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup (2 sticks) butter, cut into small cubes
4 eggs
2 cups sugar
1/3 cup fresh lemon juice
1/4 cup all-purpose flour
1/2 teaspoon baking powder
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F. For the crust: In a food processor, blend ingredients until they resemble coarse meal. Press mixture into the bottom of a 13 by 9-inch pan. Bake until set and golden, about 20 minutes. Cool. For the filling: In a bowl, beat eggs, sugar and lemon juice together. Add flour and baking powder, blending only long enough to incorporate. Pour filling into baked crust and bake until set, about 25 minutes. Cool. Dust with powdered sugar before cutting. Cut into squares.

1 cup Yoplait® All Natural Fat Free plain yogurt (from 2-lb container)
3 tablespoons canola oil
2 teaspoons grated lemon peel
2 tablespoons lemon juice
1 egg
1 1/2 cups fresh or frozen (thawed and drained) blueberries
1/3 cup sliced almonds
1/2 cup powdered sugar
2 to 2 1/2 teaspoons milk
1/4 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Spray or grease 9-inch springform pan or 9-inch square pan.
  • In medium bowl, stir together flour, sugar, baking powder, soda and salt. In large bowl, beat yogurt, oil, lemon peel, lemon juice and egg with whisk. Stir flour mixture into yogurt mixture just until blended. Fold in blueberries. Spread batter in pan. Sprinkle with almonds.
  • Bake 35 to 40 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes; remove side of springform pan.
  • In small bowl, mix glaze ingredients until smooth and thin enough to drizzle. Drizzle over warm cake.

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Place cake layers, top sides up, in 2 clean 9-inch round pans. Pierce cakes with large fork at 1/2-inch intervals.
  • Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Carefully pour over cake layers. Refrigerate 3 hours.
  • Beat pudding mix and milk in large bowl with whisk 2 min.; stir in COOL WHIP. Dip 1 cake pan in warm water 10 sec.; unmold onto plate. Spread with about 1 cup pudding mixture. Unmold second cake layer; carefully place on first cake layer. Frost top and side of cake with remaining pudding mixture. Refrigerate 1 hour.

1 ¼ cups graham cracker crumbs
¾ cup finely chopped nuts
¼ cup sugar
⅓ cup butter, melted
4 (8 ounce) packages cream cheese, softened
1 ¼ cups sugar
4 large eggs eggs
1 tablespoon lemon juice
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
2 cups sour cream
¼ cup sugar
1 teaspoon grated lemon peel

Steps:

  • In a bowl, combine crumbs, nuts and sugar; stir in butter. Press onto the bottom of a greased 10-in. springform pan; set aside. in a mixing bowl, beat cream cheese and sugar until smooth. 1 (18 1/4 ounce) package lemon cake mix (Duncan Hines Lemon Supreme)
4 eggs
1 (15 ounce) can lemon pie filling
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened (1 stick)
2 cups confectioners' sugar
1 1/2 teaspoons vanilla (I use 2 tsp, as I really like vanilla)

Steps:

  • For the cake, beat the cake mix and eggs until blended using a mixer on low.
  • Fold in lemon pie filling (do not beat in).
  • Spread in a greased 13 x 9 inch pan and bake at 350 for 20-25 minutes. (You might also want to put parchment paper on the bottom, greased on both sides, for easy removal.).
  • For the frosting, mix the butter and cream cheese until smooth using the mixer on low.
  • Add the sugar and vanilla, again blending until smooth.
  • You can frost the cake once it has cooled, but if you want to frost it later (or make the frosting ahead of time), you can store it in the refrigerator in a bowl with plastic wrap applied directly on top of the frosting. Make sure it is covered completely, and it will last in the fridge for a couple days.
