MACARONI AND CHEESE WITH DUNGENESS CRAB
Steps:
- Preheat oven to 375 degrees. Butter a 8 X 8 inch baking dish. Grate cheese. Cook pasta until barely al dente. Drain and rinse well. Heat 1 T butter in a medium sized sauce pan. Add bread crumbs and stir thoroughly. Remove bread crumbs from pan and wipe clean. In a small sauce pan, heat the milk until hot but not scalded. In the saute pan used for the breadcrumbs, heat the remaining butter over medium heat. When butter is melted, wisk in flour and stir until cooked, about 2 minutes. Slowly add hot milk, wisking continuously until incorporated. Cook sauce for about 5 minutes, or until thickened. Remove sauce from heat, and add all but one half cup of the grated cheese, cayenne, parsley and salt and pepper to taste. Fold crab into sauce, and then add pasta. Pour mixture into prepared dish. Sprinkle remaining cheese and bread crumbs over the top. Bake for 30 minutes or until the top is browned. Let sit for 5 minutes, then serve.

- Preheat the oven to 350 degrees F.
- For the pasta: In a large pot, bring 4 quarts water and the salt to a rolling boil. It should taste like seawater. Stir in the macaroni and cook but leave quite firm, 6 to 8 minutes. Drain the pasta, reserving some of the cooking liquid.
- For the sauce: In a medium pot, reduce the wine over medium heat until the liquid measures about 1/2 cup, 5 to 8 minutes. Reduce the heat to medium-low and add the cream, mustard and a pinch of salt. Bring to a gentle simmer. Stir in the Swiss cheese, Cheddar, Parmesan, Worcestershire and hot sauce and warm until the cheese melts, 3 to 5 minutes.
- Add the macaroni to the cream mixture and stir gently to blend. Allow the macaroni to rest on the stove so the pasta absorbs the flavors, 5 to 10 minutes. Transfer half of the macaroni to a 9-by-13-inch oven-proof baking dish, sprinkle with half of the crab in an even layer. Gently layer on the remaining macaroni, and then another layer of crab.
- For the topping: In a medium bowl, mix the breadcrumbs, Parmesan, parsley and Swiss cheese. Top the pasta with the breadcrumbs and bake until browned and hot, 15 to 20 minutes.
CREAMY DUNGENESS CRAB WITH PENNE PASTA
This is SO GOOD!!! Very rich and absolutely fabulous. Serve with a caesar salad and garlic bread and you are in heaven on earth!

- Cook the penne according to directions in salted water then drain and lightly oil and set aside.
- Saute the shallots and garlic in the butter over med-low heat until softened, about 1 to 2 minutes.
- Increase heat to high and add the heavy cream and reduce the cream over the heat for 1 minute.
- Add the white wine, sugar, salt and pepper, and pinch of cayenne and reduce heat to low heat and continue to simmer for about 2-3 minutes.
- Add 3/4 of the crabmeat and all of the penne, and the parmessan cheese and gently toss together.
- Transfer to serving platter and sprinkle with dill, extra parmessan and remaining dungeness crab.
- Enjoy!

DUNGENESS CRAB MAC AND CHEESE
THIS IS A TRULY DECADENT DISH, but you won't want to save it for special occasions. Adding another Pacific Northwest flavor to our classic mac and cheese was easy; the base is a cheese sauce made from flavorful crab stock, and cauliflower balances the sweet crab flavor.

- Heat oven to 375°F. Lightly oil an 8-inch baking dish.
- Cook the penne 2 minutes less than package directions. (It will finish cooking in the oven.) Rinse the pasta in cold water and set aside.
- Put the crabmeat in a large bowl and pick through it with your hands, removing any pieces of shell.
- In a large skillet over medium-high heat, melt 1 tablespoon of the butter. Add the cauliflower and cook for 1 minute without stirring. The cauliflower will just begin to brown on the bottom. Flip the cauliflower, add the corn, celery, and salt, and sauté for another minute. Transfer the vegetables to a small bowl.
- In the same pan over medium-high heat, melt 1 tablespoon of the butter. Add the capers and sauté until they are brown, about 1 minute. Remove the pan from the heat and add the cayenne, chili powder, and turmeric. Stir to combine. Gently fold in the crabmeat until it is fully coated. Transfer to a small bowl and set aside.
- In the same skillet, melt the remaining 3 tablespoons butter over medium heat. Whisk in the flour to create a roux. Cook for 2 minutes, stirring constantly, and then slowly whisk in the stock. Continue whisking until fully combined, about 30 seconds. Add the sherry, tarragon, and pepper and stir. Remove from the heat and stir in the semihard cheese until it is completely melted, about 30 seconds. Mix in the pasta, vegetables, and the hard cheese.
- Very gently fold in all but 1/3 cup of the crabmeat. Pour the pasta into the baking dish and spread the reserved crabmeat over the top, pressing it slightly down into the mac and cheese. (If the crabmeat is left on top, it will dry out while it cooks.) Sprinkle the bread crumbs over the top of the dish.
- Bake for 50 minutes, or until the cheese is bubbling around the edges and the internal temperature of the dish is 160°F. Let the mac and cheese sit for 15 minutes before serving.
CRAB MACARONI & CHEESE
This recipe is my mom's....I just added the crab :) Normally I put bacon or sausage in it, but decided on crab this last time since we had some fresh dungeness crab around. It was an experiment with the crab and it turned out really good! I used whole-grain rotini pasta (listed in the recipe), but just about any pasta would do. Also, I like to add sea salt to the water while the pasta is cooking. Adds a little more to the pasta (tip from a friend).

- Cook macaroni according to package directions. Drain pasta and rinse in cold water., Meanwhile, in a large skillet, saute mushrooms and onions in 1 tablespoon butter until tender; set aside., In a large saucepan, melt remaining butter.
