Greek Style Meat Sauce {Makaronia Me Kima} image

An easy traditional Greek style meat sauce for pasta. Perfect for busy weeknight suppers.

2 tablespoons olive oil
1 large red onion (chopped or sliced)
3 cloves garlic (chopped)
1 lb ground beef
1 tablespoon tomato paste
½ cup white wine (or red wine)
28 oz can crushed or pureed tomatoes
½ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground cloves
1 tablespoon dried oregano
½ teaspoon sugar
4 leaves fresh mint (chopped)
fresh parsley ((a good handful) chopped)
Salt and pepper (to taste)
½ lb pasta

Steps:

  • Heat 2 tablespoons of the oil in a large pan over medium heat. Cook the onion until soft, add the garlic, followed by the cinnamon, allspice, ground cloves, and dried oregano. Cook to release the flavors.
  • Fry until fully cooked and no pink shows at all in the meat (about 8 minutes). Add the tomato paste and stir into the meat.
  • Stir in the wine and allow to cook down.
  • Add the tomatoes, sugar, parsley, and fresh mint. Stir together, season with salt and pepper. Lower the heat and simmer for 25 minutes.
  • Meanwhile, cook the pasta according to the package instructions. Drain and serve topped with the sauce.

A staple pasta dish in the Greek house. The cinnamon is what gives it the flavorful richness. The combination of Greek Mizithra cheese makes it even better.

1 (16 ounce) package rotini pasta
3 tablespoons olive oil, divided
1 pound ground beef
6 tomatoes, grated
1 sweet yellow onion, grated
½ cup water
3 tablespoons tomato paste
1 tablespoon ground cinnamon
½ teaspoon white sugar
½ teaspoon cayenne pepper
salt and ground black pepper to taste
4 cups shredded Mizithra cheese
1 cup shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain. Transfer to a large bowl and toss with 2 tablespoons olive oil.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir ground beef until browned, about 10 minutes. Add tomatoes, onion, water, tomato paste, cinnamon, sugar, cayenne, salt, and pepper; stir to combine. Simmer meat sauce over medium-low heat until flavors combine, 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour meat sauce over rotini; mix well. Pour half the pasta mixture into a casserole dish; sprinkle with half the Mizithra cheese and half the mozzarella cheese. Top with remaining pasta mixture; sprinkle remaining Mizithra cheese and mozzarella cheese.
  • Bake in the preheated oven until cheese is melted and bubbling, about 40 minutes.

  • Add 2–3 tablespoons olive oil in a large pot. In medium heat, add the onion—season with a pinch of salt. Stir and sauté until onion is translucent. Add the garlic and stir.
  • Add the celery and carrots. Stir well. Add 2 tablespoons of tomato paste. Stir everything well and season with salt, fresh ground pepper, and one tablespoon of dry oregano. Add the bay leaf, cloves, and thyme leaves. Keeping sautéing for 2-3 min and let flavors develop.
  • Add 1/2 cup water, add the bouillon, stir everything well and lower heat. Simmer for 15 min or so.
  • Increase heat to medium and add the ground meat. Break the meat with a wooden spoon to avoid large chunks. Brown the ground meat all over.
