These homemade Scotch eggs are baked in the oven and contain no breadcrumbs. They are easy to make, portable, and delicious!

4 large eggs (hard-boiled)
1 lb. lean ground beef ((85/15))
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon sea salt )
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper

Steps:

  • Preheat your oven to 400 degrees F. Line a rimmed baking sheet with foil and fit it with a wire rack. Lightly grease the rack.
  • In a medium bowl, mix the ground beef with salt, pepper, and spices. Divide into four balls. Pat each ball into a thin round patty.
  • Place each egg in the center of a beef patty. Gently stretch the beef to wrap the egg, shaping and molding it with your hands, pinching together areas where it comes apart until each egg is fully wrapped. This takes patience but is quite doable, so don't give up.
  • Place the beef balls on the prepared wire rack. . Bake until browned on the outside and done to your liking on the inside, 20-30 minutes.
  • Allow the eggs to rest for 5-10 minutes before serving them.

Number Of Ingredients 8

13 ounces bulk sausage
1/2 teaspoon dried rosemary
2 teaspoons Dijon mustard
1/4 cup fine fresh breadcrumb
6 small eggs, hard boiled and shelled
1 cup fine dry breadcrumb
2 eggs, beaten
2 tablespoons sherry wine

Steps:

  • Preheat oven to 375.
  • Combine sausage, rosemary, mustard, and fresh bread crumbs and mix well, then divide into 6 portions.
  • Flatten each postion in the palm of your hand, put a hard boiled egg in the centre, and mold the sausage mixture around the egg to cover it completely, then set aside on wax paper.
  • Combine raw eggs and sherry in a bowl and mix well and put the dry bread crumbs in a separate bowl.
  • Roll each sausage covered egg in dry crumbs, then the beaten egg, then in crumbs again.
  • On an ungreased cookie sheet, bake for about 30 minutes, until nicely browned. Serve hot, warm, or cold.
  • (These can be made ahead and refrigerated but do not freeze well).

  • Divide the sausage into six portions; flatten and sprinkle with salt and pepper. Shape each portion around a peeled hard-boiled egg. Roll in beaten egg, then in cornflake crumbs. Place on a rack in a baking pan. Bake, uncovered, at 400° for 30 minutes or until meat is no longer pink, turning every 10 minutes.

1 teaspoon salt
4 hard-cooked eggs, peeled
Gold Medal™ all-purpose flour
3/4 cup Progresso™ panko crispy bread crumbs
1 egg, beaten

Steps:

  • Heat oven to 400°F. In large bowl, mix pork sausage, onion and salt. Shape mixture into 4 equal patties.
  • Roll each hard-cooked egg in flour to coat; place on sausage patty and shape sausage around egg. Dip each into beaten egg; coat with bread crumbs to cover completely. Place on ungreased cookie sheet.
  • Bake 35 minutes or until sausage is thoroughly cooked and no longer pink near egg.

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking pan with aluminum foil. Place a wire rack over the foil.
  • Cut and form pork sausage into 2-ounce patties. Place a hard-boiled egg in the center of each patty and press sausage around the egg.

¼ cup softened butter
6 croissants, split
12 slices smoked ham
6 slices Colby-Jack cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Pour the beaten eggs into the prepared baking dish. Bake in the preheated oven until they set and are no longer runny, 8 to 10 minutes. Remove, allow to cool, and cut into 6 portions.
  • Butter the cut sides of the croissants and place one portion of the cooked egg onto each croissant bottom. Top each sandwich with two slices of ham and a slice of Colby-Jack cheese. Place the croissant tops on top of the sandwiches; wrap each sandwich well with plastic wrap. Place the sandwiches onto a baking sheet; freeze until solid, about 3 hours. Store frozen.

5 tablespoons butter, divided
1/4 cup all-purpose flour
2 cups whole milk
2 cups shredded cheddar cheese
1 cup sliced fresh mushrooms
1/4 cup finely chopped onion
12 large eggs, beaten
1 teaspoon salt
3 cups frozen chopped broccoli, cooked and drained
1 cup soft bread crumbs

Steps:

  • In a saucepan, melt 2 tablespoons butter. Add flour, cook and stir until the mixture begins to bubble. Gradually stir in milk; bring to boil. Cook and stir for 2 minutes. Remove from the heat. , Stir in cheese until melted; set aside. In a large skillet, saute mushrooms and onion in 2 tablespoons butter until tender. Add eggs and salt; cook and stir until the eggs are completely set. Add the cheese sauce and broccoli; mix well. , Pour into a greased 11x7-in. baking dish. Melt the remaining butter and toss with bread crumbs. Sprinkle over egg mixture. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 25-30 minutes or until top is golden brown.
