MAKE-AHEAD STEEL-CUT OATS
Because steel-cut oats take so long to cook, I came up with this recipe to make ahead and refrigerate overnight in 4 portions. It's very hearty, delicious, and wholesome!

Steps:
- Bring water and salt to a boil in a pot. Pour in oats and return to a boil while stirring. Reduce heat and let simmer until water is absorbed, 20 to 25 minutes.
- Remove oats from heat and immediately stir in walnuts and raisins. Stir in agave nectar, vanilla extract, and cinnamon.
- Divide oat mixture into 4 portions in bowls. Cover and refrigerate for 8 hours or overnight, up to 5 days.
- When ready to prepare, add 2 tablespoons milk to each portion. Heat in a microwave for 1 minute and 30 seconds, stirring halfway through cook time.

- Add everything to a large pot. Bring to a boil and then turn down to a simmer. Cook for 4-5 minutes until oats are soft. Be careful not to overcook since they will be reheated. If you are making steel cut oats, follow the cooking and liquid directions on the package.
- Spray a muffin tin with cooking spray or line with cupcake liners. Fill each one half way. Add your toppings and fill in the muffin tin with the oatmeal. Adding the toppings in the center ensures they don't fall off after being frozen.
- Place in the freezer and freeze overnight. Pop out of the muffin tin, using a butter knife if needed, and place in a ziploc bag for storage. For a metal muffin tray, dip the muffin tin bottom in hot water to loosen up the muffins. This will make them easier to remove.
- To reheat, place 1-2 muffins (depending on the serving size you want) in a microwave safe bowl. Warm 2-3 minutes until warmed through, adding extra liquid if desired.

- In a large pot set over medium-high heat, combine the milk, water, and salt. Bring to a rolling boil and stir in the oats. Reduce the heat to a low simmer and cook for 30 minutes or until the oats are tender and the liquid is absorbed, stirring frequently.
- Remove the pot from the heat and stir in the maple syrup/honey, cinnamon, and vanilla. Allow the oatmeal to thicken for 5 minutes.
- Evenly divide the oatmeal between the prepared muffin cups. Place the muffin pan in the freezer for several hours or until the oatmeal is frozen solid.

- In a large Dutch oven, boil water, then add oats, stir and allow to simmer until thickened and almost all the water has evaporated. Allow oats to remain runny since they will soak up the water as they freeze.
- Grease two 6-well jumbo muffin tins. Scoop out oats with an ice cream scoop, adding 2 scoops per well.
- Once frozen, place muffin tin in a 13 x 9 casserole tin with 2 inches of warm water. After 5-8 minutes loosen with a sharp knife and pop out the cups. Store in freezer containers, lined with wax paper.
